I stumbled on your UA-cam page by accident - and it was the BEST accident EVER!! My Mother-In-Law taught me how to make this dish (she was Hispanic), and it was Exactly how you just made it. We had a fire several years ago and lost everything, including our house. My recipes from my own Mother and Mother-in-Law were also lost. I'm slowly getting some of them back. This was one of them. I cannot thank you enough for this video - it brought back wonderful memories of her teaching me all her family recipes. Thank you so much - You now have not only a new Subscriber, but a new Friend! xxx
My step dad, Michael was from Mexico and him mom made the best Mexican rice. Your food reminds me of her. Michael died in the late 80's but I'm reminded of them through your wonderful meals. Thank you 😊

I just want to tell you… I made this and it was so delicious! Even my picky kids ate a large helping. The next day, the leftover were even better. We shredded the chicken and put it on tortillas.

I grew up eating dinner at my best friend's house many nights and his grandma made amazing arroz con pollo (like grandmas tend to do.) When you lifted the lid off at the end, it looked so good, I could SMELL it! Can't wait to make my own now!

@Willis Huerta all the elements are there she's fucking on point with the cuman and tomato sauce she just changed a few things I would add some cayenne and some peppers to go with the onion and garlic also I would've used cilantro instead of parsley also I wouild've used Sinaloa rice for arroz rojo but like the spices, she said you don't have to use shortgrain but morelo rice or some other short grain is just fine U have to start looking at cooking as more like algebra and less like arithmetic
example usually I would say for this dish, let's call the final spice "x" normally I would say x=cilantro but x=parsley also totally makes sense, they are very similar
im 23 years old a mom & wife and being a wife im new too all the cooking and my husband is always wanting something new bc im always cooking the same things over & over so im happy i found you’re channel so can start cooking new things for him especially since he’s a picky eater & our daughter as well is a picky eater so hopefully new meal will have them stuffing there face & quite lol can’t wait too make this today

I used shallots instead of white onions for a slightly sweeter taste to balance the spices and made the chicken stock using B than B paste.
Oh my gosh!!!! Made this!!!! Used 8 pieces of chicken, 2 cups if rice, 4 cups water, because we are 5 hungry peeps! No other changes made, and it smelled and tasted great!!!!!!! Thank you!
Made this last night a little Spanish style, and it was excellent! I used boneless skinless chicken thighs and added 1 1/2 cups of rice, so increased the liquid accordingly. After removing chicken, I also added a small coarsely diced green pepper and onion to saute in the leftover chicken liquid/ oil and then removed that and put it aside with the chicken. I then added another couple teaspoons olive oil and browned the rice in the pan. When I added the extra spices, vegetables, and chicken back I added a handful of green pimento olives chopped coarse and some sprigs of cilantro to the top before covering. It looked killer and so insta-worthy when I pulled the lid off! It all tasted phenomenal served with some sliced avocado on the side or top!! (If your rice is not totally cooked by chance after it is supposed to be done, then just keep heat on low-medium for another 5-10 minutes covered and watching not to burn, add a couple TBS. of broth around the pan if it is already dry, but if wet just simmer longer. But don't stir until ready, to avoid getting mushy.)
I did something very similar. The way she makes it is authentic Mexican but other cultures make it with veggies. I love this channel because I’m Mexican and I a pretty good cook but some things I’m still learning or different regions. She’s a wonderful cook and I know through her I can stay true to my roots.
Gonna try it your way,when i make chicken and rice i boiled the legs and thighs,deboned the chicken and after browning rice added the water left from the boil,added the chicken when it was on simmer,comes out pretty good,but gonna try your way...thanx again

I just made this and I have to say: this is LITERALLY the best Arroz con Pollo I’ve ever had (sorry mom 🙈). The rice is super flavorful and the chicken is soooo tender. 🤤 The “Don’t worry if after 20 minutes it looks like there a lot of water in the pan” it’s true because it did absorb after 10 minutes. The rice also didn’t burn on the bottom. This will be on my recipe route from here on out. Thank you so much, Angelica. 💕
Made this tonight and it did not disappoint at all. The key was letting it sit for 10 mins to let the rice soak up all the liquid. So much flavor in the rice.

Yumminess! Adjusted the recipe a little. Used boneless skinless chicken breast. Added Adobo, cayenne/black pepper and chili powder. Also put some gandules and bay leaves in pot. Served in warm flour tortillas with melted queso blanco on top. Soooo good! Thanks for this recipe. Super easy to make!
My mom made this. The trick to delicious Mexican rice is to use chicken stock. My mom usually boiled the chicken and used the fresh stock while using the shredded boiled chicken in things like tacos and enchiladas. To add a punch of green and color, she added peas. She also used large chunks of onion so we kids could remove it. Yummy. I tried this recipe and to save on calories, didn't brown the rice in oil drippings before. Just added rice to the liquid. Not as colorful, but still a very nice flavor and came out well.

If you want to make the bullion cube melt better, grate it into the water or use your knife to thinly slice the cube and it will just fall apart. Wonderful recipe!!! I will be trying!

I made this last night with boneless skinless chicken thighs and with out tomato sauce cause we were out but followed directions otherwise and OMG was it so damn good. My wife can be picky but she loved it and said it's a keeper recipe. Thank you so much.
Followed the recipe, came out great! Minor additions include: cilantro, lots of it (cilantro fanatic) and subbed water for chicken broth along w the bouillon 🙂
I made this recipe for dinner for my partner's 30th birthday and both of us could not believe the taste. It was DIVINE! I will be trying this recipe again but instead of drumsticks, I will try with chicken breast instead (since that is all I have left in the freezer haha)

I made this last night with boneless skinless chicken thighs and with out tomato sauce cause we were out but followed directions otherwise and OMG was it so damn good. My wife can be picky but she loved it and said it's a keeper recipe. Thank you so much.
Followed the recipe, came out great! Minor additions include: cilantro, lots of it (cilantro fanatic) and subbed water for chicken broth along w the bouillon 🙂
I made this recipe for dinner for my partner's 30th birthday and both of us could not believe the taste. It was DIVINE! I will be trying this recipe again but instead of drumsticks, I will try with chicken breast instead (since that is all I have left in the freezer haha)
