Single dad made this for his daughters tonight and there wasn’t a whole lot of talking at the dinner table. you parents out there know what that means! thank you for the recipe.
I grew up in a house where if you made any noise during dinner you better be actively having a life threatening emergency... so it sounds like normal. Just kinda like we were so broke you cleaned the entire plate whether you liked it or not.
I stumbled on your UA-cam page by accident - and it was the BEST accident EVER!! My Mother-In-Law taught me how to make this dish (she was Hispanic), and it was Exactly how you just made it. We had a fire several years ago and lost everything, including our house. My recipes from my own Mother and Mother-in-Law were also lost. I'm slowly getting some of them back. This was one of them. I cannot thank you enough for this video - it brought back wonderful memories of her teaching me all her family recipes. Thank you so much - You now have not only a new Subscriber, but a new Friend! xxx
My step dad, Michael was from Mexico and him mom made the best Mexican rice. Your food reminds me of her. Michael died in the late 80's but I'm reminded of them through your wonderful meals. Thank you 😊

That is so nice and I know it's been a while since his passing but still sending my condolences. I'm so glad you can think of him fondly by this. Wishing you the best. 😊
You never disappoint! And just when I was trying to figure out what to do with a pack of chicken thighs I bought Update: I made it that night and my whole family LOVED it. I even doubled the recipe and there were still no leftovers to be found the next day. Thanks so much! 😊
@ I'm a big fan and a follower of yours. I winged chicken and rice last time, my Spanish rice is similar. But I will follow your recipe for this soon. Thanks for sharing your skill of cooking with us.
I just want to tell you… I made this and it was so delicious! Even my picky kids ate a large helping. The next day, the leftover were even better. We shredded the chicken and put it on tortillas.
So I have made this at least a dozen times now. It is my go to recipe and I am Puerto Rican and have tried so many recipes. Nothing as flavorful as this!
You voice, plus your recipies = me being cradled by my mom when I was a kid and afraid of the dark ❤ absolutely loving everything about your channel. Thank you and we want more 🤗 #comfort
This recipe, I cannot even say it enough how this is one of my all time favorite recipes. It’s definitely become a staple in my home. I’ve been making this recipe for quite some time now and I’ve never mentioned how much I love it. So easy to make, so flavorful, and I make double the recipe so I have leftovers. 10/10 recommend. ONE OF THE BEST! Thanks again, lovely! You never disappoint.
I've made three of your recipes in one week. Video length, audio quality, ingredients in the description, and thorough verbal execution... perfection, a very intuitive tool right in the kitchen. Don't change a thing!
I grew up eating dinner at my best friend's house many nights and his grandma made amazing arroz con pollo (like grandmas tend to do.) When you lifted the lid off at the end, it looked so good, I could SMELL it! Can't wait to make my own now!
@Willis Huerta all the elements are there she's fucking on point with the cuman and tomato sauce she just changed a few things I would add some cayenne and some peppers to go with the onion and garlic also I would've used cilantro instead of parsley also I wouild've used Sinaloa rice for arroz rojo but like the spices, she said you don't have to use shortgrain but morelo rice or some other short grain is just fine U have to start looking at cooking as more like algebra and less like arithmetic
example usually I would say for this dish, let's call the final spice "x" normally I would say x=cilantro but x=parsley also totally makes sense, they are very similar
im 23 years old a mom & wife and being a wife im new too all the cooking and my husband is always wanting something new bc im always cooking the same things over & over so im happy i found you’re channel so can start cooking new things for him especially since he’s a picky eater & our daughter as well is a picky eater so hopefully new meal will have them stuffing there face & quite lol can’t wait too make this today
I absolutely love how you list all the ingredients. Thank you so much for doing that!! Please don't ever stop posting them. They are so helpful. Great channel!
I've made this three times in the last 2 months and my family absolutely loves it!! I just add some jalapenos/corn/bell peppers or whatever other veggies I have in my fridge and it always turns out great (: Thanks for such a great recipe!
Thank you for making these delicious videos, 2 of my bbis left me to start college in San Antonio & I send them your life saving recipes all the time🙏🏼🙌👏
I made this today for dinner & it turned out delicious! I love how simple, thorough & patient you are with explaining your recipes. Thank you for sharing them.
All of your recipes look amazing, and I love how you have alternative ways to make some of your recipes. And a lot of the spices you use are things I already have! This is the first one of your recipes I have tried , and it was amazing!
Love to cook too since I was 8 my father is yogoslavian so he made alot of those dishes aI make mexican and American being my grandkids are mexican too. Love your cook book. My family says I should have a cook book by now .
Just made this today (with the lesser measurement of tomato sauce, chicken thighs, and homemade chicken stock) and it was amazing! Thank you for so many great recipes and clear instructions. 💖 You're the reason I can finally make rice come out perfectly on a consistent basis!
Oh my gosh!!!! Made this!!!! Used 8 pieces of chicken, 2 cups if rice, 4 cups water, because we are 5 hungry peeps! No other changes made, and it smelled and tasted great!!!!!!! Thank you!
I made this for dinner tonight! Both my husband and daughter loved it. So good! I love your cooking channel your recipes are clear easy to follow. Also all of your personal touches keeping it real.
Made this tonight and it did not disappoint at all. The key was letting it sit for 10 mins to let the rice soak up all the liquid. So much flavor in the rice.
I doubled this recipe and made it for my family tonight! My 7yr old can be picky sometimes and he doesn't really care for mexican rice. But he looved this dish!! He ate his entire plate! Thanks again for another great recipe ❤
I've watched this video several times thank you for making this so easy. My daughter requested. My mom never made this growing up but I ate it at other peoples houses thank you for your time and video
Those large chunks of onion, well this kid will eat those! Great dish, and the cool thing is almost every culture has chicken and rice! So the flavor profile is endless. Put that in your cookbook!
Making this right now! I'm so excited, your recipes are straight to the point but added with so many tips and tricks! The only reason I know how to cook rice is because of you!!!
Made this twice in a week. First for my husband and kids and another just for me to eat for a few days. Smell so good cooking it and the taste really good. Love that it's one pan meal, simple and uses cheap cuts of chicken. This recipe is a gem especially for families. Please keep sharing your recipes and more one pan meals, please. Thanks! I used shallots instead of white onions for a slightly sweeter taste to balance the spices and made the chicken stock using B than B paste.
Making this for the second time tonight, last time I made this every single drop was eaten. My hispanic husband loved it, and all the kids loved it as well. I think my man had 3 servings the first night ! They have been asking me to make it again, and i love the clean up, super easy. I used boneless chicken thighs and it was perfect
Glad I found your channel. First video I’ve seen but that was all I needed to subscribe. No extra nonsense talking, just straight to the point! 🙌🏼 thank you!
It's time for my granddaughters to learn to cook. We're going to watch this video and then make it together. This looks a lot like what we called sopa and ate with torn pieces of flour tortillas.
My mom made this. The trick to delicious Mexican rice is to use chicken stock. My mom usually boiled the chicken and used the fresh stock while using the shredded boiled chicken in things like tacos and enchiladas. To add a punch of green and color, she added peas. She also used large chunks of onion so we kids could remove it. Yummy. I tried this recipe and to save on calories, didn't brown the rice in oil drippings before. Just added rice to the liquid. Not as colorful, but still a very nice flavor and came out well.
I made this last night with boneless skinless chicken thighs and with out tomato sauce cause we were out but followed directions otherwise and OMG was it so damn good. My wife can be picky but she loved it and said it's a keeper recipe. Thank you so much.
Thanks you so much it's just like my grandmother used to make. I miss her everyday, i was missing a couple of spices and i could never get the taste right but when I make your dish I always get a little taste of home n my childhood :)
I just made this and I have to say: this is LITERALLY the best Arroz con Pollo I’ve ever had (sorry mom 🙈). The rice is super flavorful and the chicken is soooo tender. 🤤 The “Don’t worry if after 20 minutes it looks like there a lot of water in the pan” it’s true because it did absorb after 10 minutes. The rice also didn’t burn on the bottom. This will be on my recipe route from here on out. Thank you so much, Angelica. 💕
Thank You,as i type this in my pollo is close to being done.I like the recipe.I kicked it up by adding a few top ingredients.Roasted a large california chili, peeled and some San Marzano italian certified tomatoes. If only you can smell it now,I am blessed, thank the lord....Bless Mama also,,
I just made this dish and it was absolutely amazing. I thought the skin would be rubbery but it cooked through very nicely. One of my favorite recipes I've gotten off utube. Delicious. Thank you.
Gonna try it your way, when i make chicken and rice i boiled the legs and thighs, deboned the chicken and after browning rice added the water left from the boil, added the chicken when it was on simmer, comes out pretty good, but gonna try your way...thanx again
I just made this for dinner tonite and lemme just say it was a hit . My rice was perfect , the chicken was cooked throughout. Thanks for a great recipe
If you want to make the bullion cube melt better, grate it into the water or use your knife to thinly slice the cube and it will just fall apart. Wonderful recipe!!! I will be trying!
Yumminess! Adjusted the recipe a little. Used boneless skinless chicken breast. Added Adobo, cayenne/black pepper and chili powder. Also put some gandules and bay leaves in pot. Served in warm flour tortillas with melted queso blanco on top. Soooo good! Thanks for this recipe. Super easy to make!
One of My Childhood Favorites as well! Long time fan~first time commenting. So truly happy to see your success from beginning till now! Just wanted to say I love all your videos and recommend them to all my family and friends! Love You!
I made this recipe for dinner for my partner's 30th birthday and both of us could not believe the taste. It was DIVINE! I will be trying this recipe again but instead of drumsticks, I will try with chicken breast instead (since that is all I have left in the freezer haha)
Sooo happy to have “found” your channel. I’m Pinay and love to try making cuisines from other cultures. Your voice is soothing and the recipes are not complicated. I tried your pollo guisado last night and it was a big hit. I’m a fan!
