Vito's pizza dough from poolish is the first ever recipe to come out just perfect for me. Unfortunately, I'm too far away from my brick oven by this dough is so good it also works for home oven. Yeah, you'll need a pizza stone, pre-bake pizza before adding toppings, drain mozarella overnight and make other precautions so the pizza will not get soggy... But the result is really really awesome. The only thing which is the hardest -- is to make yourself start the dough a day before so it will ferment correctly. But time is everything... And the stretching technique ... damn it... that is my kryptonite :D

Perfect video, Vito! You present the daily routine of a pizzaiolo! I have one question: How do you manage the dough balls on the final day? I mean, some pizzas will be cooked some hours later than the first ones. Do you keep them in the fridge or in RT all of them?

Hey Vito, I've hit a snag with making multiple pizzas consecutively. Although the oven floor initially reaches temperatures above 400°C, it quickly cools down at the bottom after baking a few pizzas. As a result, I have to wait for it to reheat between each batch, causing delays for our guests
