      Haha. My 75 yo husband has a crush on Mary Berry (public tv in the states/she’s from England). She was a judge in The Great British Bake-off. I think that was the name. She’s written a 100 cookbooks I think of one kind or another.

    It‘s so interesting what you tell about canning and safety. I live in Austria/Europe and I dont know the rule about the lemon juice because we are told, that tomatoes have the right PH level anyways. Also for me it sounds like making the sauce disgusting when added even more acidity 🙈 generally our government does not panic so much about all the at-home canned products, its been done for many years, nothing happened. Pressure canning is also non-existent here, because a) they dont sell these pressure canners and b) nobody is scared about bad things being in canned products. For example jam/marmelade: we just cook the fruit with sugar and pectin and put it hot in the glass, seal it, then it creates vacuum inside and done. No water bath canning, no freezing, no nothing. Just put on the shelve and enjoy for years because the sugar content is enough for long shelve life. So interesting, how different cultures approach this topic!

      Our. Tomatoes have been bred to be sweeter hence the lemon juice. Yours may be different. I would go on the careful side, it really doesn't change the flavor to much. I grew up the same way on jams etc. But they don't take very long in the water bath. We used melted wax on those as well. Now that's a no go

    I have been canning for almost 50 years. My children used to help me turn the hand crank on my squeezo to make tomato soup, sauces, applesauce and grape juice. Then my husband retired and got involved with turning the handle. The next day he hooked up a cordless drill to turn the hand crank. It is amazing! If you don’t have little ones around to turn squeezo’s handle, I highly recommend setting up a cordless drill. It will speed things up. Cleaning squeezo was always a challenge. My husband soon hauled everything outside and blasted squeezo with the hose and high water pressure. Voila, the mess is easier to clean up on the grass using water pressure. Why didn’t I ever think of that?

    I am 82 and I canned 37 jars of tomatoes yesterday and helped can 70 jars with my sister in law. Tomorrow I have 37 more to can. I have slowed down but I still enjoy filling my pantry with great products. I am subscribing to your channel, thank you for all that you do and will be looking in to the survey and possible prize.

    I learned the hard way to always wear shoes while canning. A few years ago while scalding tomatoes using a pot with a pasta strainer insert I emptied the scalded tomatoes into the ice water, quickly put the strainer back into the boiling pot. It splashed up and I suffered third degree burns on the top of one foot. Many lessons learned that fateful day!!!

      Mom always told me to start with shoes. I thought it was for comfort, but she was concerned about stepping on things. Hope your foot is all better with no lasting effects.

    Quick tip , If you put milled sauce in the fridge over night in will seperate. Then Siphon water off bottom of vessel

    For those with arthritis in your legs or feet - wear compression socks - helps alot!

    That juice you poured down the sink is really quit deliscious. I like to add a little salt to it. It's even better if you soak some chopped onions and sweet peppers in it after adding the salt. It's one of our favorite treats on the days we can salsa.

      Also seen people can the juice and then use it to cook rice in or add it as vegetable stock in soups etc.

      The juice should be kept with the tomatoes. Part of the tomato…. Just need to cook down more.

    I enjoyed this! I learned to can as a young man because I am an avid gardener and I realized it’s not really fair to bring a big harvest into the house and expect my Mum and then wife to just deal with it, plus you know what they say about what to do if you want something done right😇. I’m amazed how many tomatoes you processed in one day, I see that lots of canners is your secret, I just use one All American 921. I have geared myself up to do one 25KG (55lb) bushel at a time! I have a Fabio Leonardi milling machine too, from Consigleos. My advice to anyone who gets one is buy the splash guard and only wash the gasket in cold water, hot water causes the gasket to expand! It was nice to see someone following all the safe canning rules, I always add bottled Lemmon or citric acid too. I was interested in your use of Crock pots, I use two 40 quart pans, one for pre cooking the tomatoes and then I mill directly into the second pan and use it for cooking down the passata. Thanks again, your production was truly epic!!

    You are a wonder! It took me all day to get through (7) 12 oz jars of salsa yesterday. Granted, I had no help, and only one canning pot, and arthritis in all my joints, but man. You and Dan are an amazing and durable team!

    You and your husband definitely take the prize. I could not do that many in a day. My feet would not hold up. In my younger days maybe. I still love the process and end products. Thanks for showing how you get that many done. I appreciate it.

    I just finished canning 30 cans of tomato paste, 7 cans of pizza sauce, 14 cans of tomato sauce, 6 cans of diced tomatoes, 3 cans of marinara sauce and 11 cans of garden salsa sauce… I know how much work goes into this!

    I canned only 7 jars, 20 lbs worth, and i was pooped out! Bravo to both of you on all that work canning. I do mine in batches. Going to process another 50 lbs next week... i love watching those cans on the shelf!

    loved this video so much! Yes, your efforts, skill, and ultimate production was amazing, but for me watching you work together just warmed my heart. My late husband and I spent much of our dating sharing our love of canning - we'd go to farms, harvest from his garden and go to PYO farms and them can it all up, getting to know each other over that shaed interest. We'd both had learned canning as children from our parents. What a joy to watch you both. Thanks for sharing and great work getting all that completed!

    If you have never raised Amish Paste tomatoes I think you would love them. They are very meaty and grown especially for sauces,salsa ect. I freeze mine and as they ripen and after I get a large amount of them frozen I then have a canning day. Thaw them out over night, open your tomatoes pour the water off of the tomatoes then run through a blender. After that pour through a food mill for any seeds you may have. This saves lots of time cooking your tomatoes down. I have very thick tomato sauce making it this way.

    Canned two batches of tomatoes into pasta sauce. (Half bushel at a time) I split up the work in two days. (Blanch, peel and seed first day. Cook down and can the second day. I’m disabled so can’t stand long periods and do it all alone. I got 13 quarts of sauce, also made 4 cowboy candy for my future son n law, 4 quarts of blueberry pie filling, 2 blueberry syrup and 3 blueberry juice.
    Gave my mom a quart of tomato juice from the fresh tomatoes.
    Next are apples. I’m in the Adirondacks and apple season is here!! I’ll make two batches of apple pie filling. It’s so good!! I use it in bread pudding or we eat as a sweet treat.
    (I’ve blanched with and without the cut on the bottom of the tomato and the time difference is huge to get the skins to split. I do the X in the bottom and take out the stem button. Just takes a few minutes for the split to start.

My husband helps me too when it comes to large batches and so appreciate it. Hard day at work alright and just look at all that fantastic product to put in your pantry.     Love watching your videos I enjoy seeing how you are growing vegetables and some fruit. I had a mini garden last year I was able to grow four big containers full of potatoes I had peppers tomatoes cucumbers carrots and okra. It was so much fun I hope next year I can grow more veggies since I live in a City from a fan in CT

    Holy cow that’s a lot of jars in one day! Thank you for addressing the blow out issue. I’ve had that happen twice this year and I wasn’t sure why. I know now!
    My tomatoes are mostly green here in southern Arizona but I definitely will have a lot to deal with (for me) when they all ripen. I pull them off the vine when they blush because we have all sorts of critters who will gladly put holes in a beautiful tomato making it unusable for canning. Anyway I’m new to your channel and wanted to say hi too!

    Chelsea, I got the electric tomato mill and it is truly a game changer! I am also using a presto electric canner! The whole process is so much easier than hand peeling and deseeding tomatoes! Technology is awesome and I have learned so much from your channel. ❤

    I'm glad you shared the blow out jar with us. I had the same thing happen last week. I was so confused. The jar didn't break even though people who have been canning for decades tried to convince me it did. I came to the realization that I simply didn't get the lid screwed on tight enough. It happens. You don't like to waste any product but snafus happen. For newbies please don't let this scare you away from canning. It's such a satisfying way to be able to provide for your family. 💚

    When you reconstitute diced tomatoes, can you use them as fresh tomatoes like on 🌮 taco's? Dan's been on plenty, but l never knew he was so funny! You two crack me up together. Nice to have him on making me laugh out loud. I truly needed that today. Thank you. Have him on more often. He'd be fun to hear comments as you read notes from the OLD cookbooks. Lol.       I think not, because when you thaw tomatoes after freezing the lose their texture. But also, i dont have a FD or have consumed FD tomatoes so i'm not completely sure.

    I think the dicing kit is only for the larger food processor but you can also get an add on dicing kit for a kitchen aid stand mixer which I have and that works great too and you can put a huge bowl underneath for processing large batches ☺️

    I just love how much in love you are. This is wonderful. Passion and love for your family and nature is the best foundation for a happy life. And a great looking skin . My wonderful husband and I have been sailing for the past three years. On my sailing boat I had my pressure cooker and my sour dough. I have been canning almost all of my adult life. We just sold our sailing boat and bought a house in Greece. We just started planting our selfmade highbeds. In Greece you can practically sow and grow all year. This is amazing. We feel so blessed. And we are a couple in love just like you are. ❤

    Y'all are amazing? I know a lot of hard work goes into all of this. One thing I know, you must absolutely be organized! I saw some beautiful jars of product there. If that was my first time to can that much, I'd be so overwhelmed.

    Thank you for explaining the siphon issue. I have had that problem before but i learned to not be in such a hurry to take the jars out of the canner. I have another way to make tomato sauce from roma tomatoes if anyone is interested.

    I really admire you'll for taking you'll time planting ,careing, for your tomato plants and then going through the process of canning different kinds of sauces that's just awesome you'll know where the tomatoes came from how they was process etc. to many people is interest in how they are dressed ,but we really need to be interest in what foods are going in us and where they come from 😊

    Thanks for such a good video! It's been a hot minute since I did any canning, but enjoyed it immensely when I did. I had a recipe from (I think it was) Putting Food By called Tomato Junk. It was essentially a seasoned sauce that, when opened during the cold, damp days of winter, smelled like a breath of summer. So glad you and Dan have each other and can work together and share some fun.

    Wow!! Great job!!! We did 70lbs today and I thought that was a lot!!! My guy rigged a hack and was able to use his drill on the food mill. Love having all that sauce on the shelf. I could have used your advice on figuring out your meals for the day...we skipped meals and ended up ordering out...which defeats our whole purpose in why we are growing our own food. I'll remember that for next time!!!

    I use tomato powder to help thicken my sauces. Saves a lot of time.

    Your bulk canning days always amaze me. At the start of the video you went through all the canners and other appliances that you'd be using during the video. Given that you've been canning for over 20 years, what some major changes to canning that you feel have eased the process and what is something you wish could be made more efficient? Looks like that tomato processor is a huge plus.
