Hi Chelsea. Don't know if you remember me. I was the one that told you about my braided rug stair treads and braided rugs that I had bought and put on our 1916 farmhouses stairs and upstairs hallways a few years ago. Just noticed that you have the same floor in your kitchen that we put in our family room and pantry room and will be going in our downstairs bathroom and our utility room. That's so funny. We must like the same things. You in Canada and me on the southern oregon coast. Just made beef broth a couple of weeks ago. My boss gave me 7 big bags of beef bones that he didn't want. So I made beef broth and got 86 pints. Then I took all the carcasses from chicken and leg pieces etc to make room in our freezer for a third of a beef that my boss gave me. And I got 48 pints and 7 qt. Of chicken broth made and canned. Then I just canned 26 pints of clam chowder base. Still have a bunch of potatoes to can. And chili. And more canned dry beans of a bunch of different kinds. Since working full time now. It's harder to find the time and energy to can. Just turned 65 and I've been a canner for 46 years on my own. Use to help my mom and gram can as a kid. Back in the 60's and 70's. Everyone we knew canned. It's nice to see more people getting into it now. Was afraid it was going to become a lost art. Thanks to videos like yours and lots of other you tubers it's gotten popular again. 😊

I'm 70 and live in a 9th floor apartment. My garden is hydroponic leafy greens and a tomato plant. I smile when I hear the sound of a lid sealing, too. It's the only thing I regret about retirement is not being able to have an outside garden and canning. I'll just have to watch you and a few other channels to hear that "tink". Thank you for your wonderful channel content.
Those are some cool looking carrots. lol I canned moose meat and salmon when we lived in Alaska. Now I can venison, beef and chicken. Yum all good. Here in southern Missouri we are having lots of rain from Helene. Praying for the people that have lost their homes in Florida, Louisiana, Georgia and the flooding in all the other states involved. I put beef and venison in jars with just salt and pepper, no liquid and can it. I don't have chickens, but I buy breast meat and can it also. I like have canned protein for easy meals on busy days.

We are getting our Cornish cross butchered in a couple of weeks , they are over due but I plan on canning some of the meat and freezing the legs and thighs and making chicken broth with the carcass! It shall be a big canning day !

The wings are great smoked and then cooked with greens like beat greens turnip greens or even kale. Though I do add scraps and skins to the bones to roast for the stock.

Yes tis the season for turkey. I love turkey. I debone whole turkeys spread stuffing and seasoning across the bird (breast is down) then take the meat and put together (back bone area on either side) flip tie up also your legs. Hard to describe it but there are video on it. It looks just like a regular bird. When you have a lot of people for dinner you just use an electric knife and slice Looks amazing. This way each person gets stuffing/turkey. I find that stuffing seems to be the first to get eaten up. It truly is amazing the amount of tendons that are on the legs. Legs are the hardest to debone. I get orders from friends at Christmas for this. Great video Chelsea. Was great fun to see all on the zoom the other night.
Another thing I like to do with my canned turkey is mix it with a turkey flavored stuffing, broth, whatever thanksgiving vegetables you like and serve it over mashed potatoes.

I’m in the UK where the pressure canning community is fairly small. I searched ForJars lids for information and its website didn’t say. On another site, I picked up that ForJars lids are also supposed to be reusable, because of their thickness, and the seal reforms once opened. Is this true? Wow, Chelsea!!! Those turkeys are huuuge! Do you have a ginormous plucking machine or do you hand pluck? 😮 Can’t believe another of your garden seasons is almost over. Love your videos 💃
I think they don’t recommend reusing lids, but you could plump up the sealing compound by heating the lids in hot water. I’ve never used ForJars lids, but I do reuse lids. I reuse lids from things I’ve canned for 10-15 minutes, like juice or jam, to can water bath canned foods for a longer time. I use the water bath canned lids for pressure canning. People sometimes have to make do when there are not things available.

I would be cutting flowers like crazy and stuffing my house with them! I have been gifted 2 turkeys whose freezer did not make it through Hurricane Helen's storm surge. I am excited to make turkey broth to turn into gravy for turkey tetrazini and turkey pot pies!
I have a similar memory. We mostly just canned jam growing up. But we grew all of our own raspberries and my dad was so excited about it and would get excited about jars popping. I love the forjars lids but it is a massive downside that they don't pop very loud.
This summer I had to cook a turkey for more freezer room. I broke it done just like a chicken and cooked it in pieces instead of whole and I will never cook a whole turkey again. Cooked way faster, in less than 2 hours and was so moist and the flavor was awesome. Everyone agreed no more whole turkey's LOL
I always love Fall best, but I do miss the flowers, so I kick it off with huge bouquets of the last flowery huzzah bf the frost. When they start to droop, then I do my Halloween and Thanksgiving decorating. That broth looks so scrumptious we can almost taste it through the screen!
It will be very expensive to replace all your rings I remember how expensive they were. Well seeing you come from a butchering background the way you cut that turkey. Did you keep one for your thanksgiving and I bet your whole house smells gorgeous like ours at Christmas. I love the smell of cooking turkey don't like the taste but I love the smell. I used to cool my broth to remove the fat but always had problems with fridge space. Now I use gravy separater that pours out the bottom. Just a few seconds in the separater and then I pour directly into jars. The fat stays in the separater

Wow. Huge yield. We do not have space yet for animals. I just buy the rotisserie chicken at costco and pick it then boil scraps for broth. I place mine in quart plastic containers and freeze. If you crinkle up the parchment paper, like you were going to throw it away, it is easier to work with. You can lay it flat, and it doesn't roll up.

With a stream heat there's a good chance you'll heat stroke I did. After I heat stroked I had a massive stroke that heat stroke brought it on

Technically, no. If your careful with them you could just make sure to check the seal well.

You can render down the turkey skin like you do cracklins and the fat that comes off it is amazing for frying stuff

I never strain my chicken soup broth. Used for soup? The carrots & celery are beautiful in it.
