- Ingredients for Garam Masala Recipe for 1.5kg, shelf life is 1 year:
1) Star Anise (chakraphool) - 25gms
2) Fennel seeds (badishep) - 130gms
3) Nutmeg (jaiphal) - 45gms
4) Cinnamon sticks (dalchini) - 45gms
5) Black peppercorns - 50gms
(kali mirch)
6) Cloves (laung) - 50gms
7) Fenugreek seeds- 30gms
(methi ke dane)
8) Poppy seeds (khas khas) - 130gms
9) Cumin seeds (jeera) - 20gms
10) Mustard seeds (rai/sarso) - 30gms
11) Caravey seeds (sahi jeera) - 15gms
12) Black Cardamom(badi elaichi)- 15gms or add 10gms black elaichi & 5gms green cardamom pods
13) Mace (javitri) - 20gms
14) Bay Leaves (tej patta) - 15gms
15) Coriander seed- 360gms
(sabut dhania)
16) Dry Red Chillies- 500gms
17) Dry Turmeric- 130gms
You can also add goan rice about 70gms. Dry roast until it's color changes and turns aromatic on low flame.

Yes, instead of dry turmeric add same grams/amount of turmeric powder i.e 130gms.

want to try your recipe. looks good. just a bit of advice. do not store masala in plastic bags or bottles, as the oils in the spices evaporate easily. store in a glass bottle and keep it in the fridge for up to 6months.

Hello Lynette. Dagadful is star anise. Its already there in the ingredients.
dagadful in NOT star anise.
What do you use this masala for?
This masala is used for vatana Ross, alsande Ross or any such veg. recipes. For non veg I usually prefer both in equal portions I. e garam masala and chicken masala.
If you want to give it a try then prepare in less quantity.

Yes, some people roast and add goan rice. You can add around 70gms of goan rice..... Roast until it's color changes and aromatic......
Since, I have already added black cardamom so it's ok to skip green cardamom....
If you want to add few green cardamom pods then remove 3-4 black cardamom pods and add green cardamom and see that the grams do not change.....
What type of chillies have you used?
Moosuri?or bedki?

Instead of khas khas you can add parboiled red rice (ukade tandul) around 25gms....but see that it is well roasted until it turns aromatic and light brown....
