  • In today's video we are going to be making oyster omelette (蚝烙). This is a popular dish across different parts of Asia. There are different variations of this dish and today we are making the Chaozhou (or Teochew) version.
    Recipe by: Chinese Cooking Demystified
    Ingredients:
    1) 50 grams (or 1/2 cup) sweet potato starch
    2) 90 grams (about 6 tbsp) water
    3) 1-2 green onion chopped
    4) Oysters, amount to your liking
    5) 1 egg
    6) oil, salt
    7) Dipping sauce: fish sauce and chili oil (optional)
    Instructions:
    1) Mix your sweet potato starch, water, oyster, and chopped green onions
    2) In a hot wok or deep shallow pan add a generous amount of oil. Wait until it is hot.
    3) Add your mixture and add it to the oil
    4) After the bottom of the omelette has a chance to cook a bit (about 1-2 minutes) beat an egg and add it on top.
    5) Flip the omlette over and let the other side cook as well.
    6) Plate it and add cilantro or chopped green onions (optional)
    7) Serve with fish sauce on the side
    Hope you enjoy :)

hey unfortunately i think sweet potatoe starch will give you the best texture. Otherwise, the taiwanese version is made using a tapioca starch/flour mixture
