Mable has a beautiful voice for sure, but she is much harder to understand than anyone else in the production :/ That aside this is still my favourite Pirates of Penzance ever....probably with a sentimental bias since I saw it when I was three but still :D
I agree that the sisters are the weak point of this production, although in other respects it's one of the best and most roaringly fun I've seen. Bear in mind that in their time, G&S were the populist humour of their time - only one step above the cheap melodrama of the time like the original play version of 'Sweeney Todd'. They are, at their heart, silly, not sacred pieces of literature that are to be taken so seriously that they are deemed to be above a few cheap gags.
G&S aren't exactly "high art," keep in mind. They were basically the Monty Python of the late 1800's, and I'm sure they would have been fine with a few changes. My problem is really with the Broadway one - it sounds like a well-meaning failure; an accident. The sisters in this have impressive voices - albeit in a sort of gospel-influenced style rather than a classical one. These people understood the play, and riffed on it from there. The Broadway version was tactless, though.
I'm not really talking about their ability to sing, I'm talking about the artistic judgement in the way they're being presented. They may be able to harmonise well, but the way they've been directed is cliched and clashes aesthetically with the rest of the production.

I've still got one, Simon is like a vintage port, just gets better with age. Still got a fantastic voice and still gorgeous
