180 g butter with a fat content of at least 82.5%. Milk 400 ml. Heat the milk until the butter has completely dissolved. stir constantly. Once the butter has melted, turn off the heat. Add a pinch of salt and sugar. Beat with a mixer for 3-5 minutes. Then pass through a sieve. And heat up again. Squeeze the lemon juice from the lemon. When the milk is almost boiling, add 1-2 tablespoons of lemon juice. Mix well. 1/2 tsp sugar. The milk has thickened and is beginning to curdle. turn off the heating. Cover with a lid and let rest for 10 minutes. Prepare a bowl and a colander. And also gauze. We shift the curd mass. Leave the serum on for 2-3 hours. Time is up.
