The Ultimate Cheesy Spinach Chicken Recipe
This dish combines tender, golden-brown chicken fillets filled with a savory mixture of spinach and cheese, served alongside velvety mashed potatoes. Perfect for a family dinner or a special occasion, it’s sure to impress with its rich flavors and inviting presentation. With simple ingredients and easy-to-follow steps, you’ll create a satisfying meal that warms the heart and delights the palate. Let’s get cooking!
Ingredients:
Chicken breast - 1.1 lb (500 g or 3 pcs)
Garlic - 5 cloves
Spinach - 2.6 oz (75 g)
Grated cheese - 3.5 oz (100 g)
Frozen white bread - 5.3 oz (150 g)
Eggs - 3
Flour - 3.5 oz (100 g)
Oil - 2.5 fl oz (75 ml)
Potatoes - 2.2 lb (1 kg)
Milk - 16.9 fl oz (500 ml)
Butter - 1.8 oz (50 g)
Parsley - few sprigs
Instructions:
Prepare the Chicken:
Pound the chicken breast until it is of even thickness.
Season both sides with salt and pepper.
Make the Filling:
Chop the garlic and sauté it in a pan over medium heat for about 3 minutes.
Add the spinach to the pan and sauté for another 3 minutes.
Stir in the grated cheese until melted and well combined.
Prepare the Breading:
Blend the frozen white bread into crumbs using a blender.
Set up a breading station with flour, beaten eggs, and the bread crumbs.
Coat the Chicken:
Dip each chicken fillet into the flour, shaking off excess.
Next, dip it into the beaten eggs, then coat with the bread crumbs, pressing gently to adhere.
Cook the Chicken:
Heat oil in a skillet over high heat.
Sauté the chicken fillets for about 1 minute on each side until golden brown.
Transfer the fillets to the oven and bake at 356°F (180°C) for 15 minutes.
Prepare the Mashed Potatoes:
Peel and chop the potatoes, then boil them in salted water until tender.
Drain and return to the pot. Add milk and butter, then mash until smooth and creamy.
Season with salt and pepper to taste.
Serve:
Plate the chicken fillets alongside the creamy mashed potatoes.
Garnish the potatoes with chopped parsley and serve warm.

I don’t use truffle, this is a truffle paste based on mushrooms. It can add a slightly tangy flavor, but it's not essential at all. I added it simply because I had it on hand. Make the sauce without it, and it will still be very delicious-you won't regret it. Thank you for watching me!
