黄姜饭 | 传统简单煮法 | 光泽表面 | Nasi Kunyit | Detail & Simplify Traditional Method | Glosy Surface
"Nasi Kunyit, or steamed turmeric glutinous rice, is a popular dish in Malaysia, Singapore, and Indonesia. Although the ingredients are quite simple, not everyone manages to achieve that beautiful, glossy finish with perfectly separated grains unless they follow a few traditional steps.
I used to be skeptical about these techniques myself, but the truth is, I never quite got that same shine and texture when using a rice cooker. Steaming the glutinous rice is crucial, and getting that glossy finish takes a bit of extra effort."
The following are the required ingredients:
- 3 cups of glutinous rice (for 3 to 4 people)
- 3 teaspoons of turmeric powder
- 1 tablespoon of white peppercorn
- ¹/2 teaspoon of salt with 1 cup of water
- 200mL of coconut milk/Santan diluted with 100mL water
"There’s a fascinating chemical reaction that happens between the heat and the way we add the coconut milk. The salted water helps raise the surface temperature of the rice, which slowly causes the coconut milk to release its oil. By using just a small amount of coconut milk, the rice doesn’t absorb too much coconut flavor, nor lower the temperature of the rice, but allowing the fragrance of the turmeric to shine through. It’s incredible how our traditional methods carry so much wisdom."

“黄姜饭,或蒸黄姜糯米饭,是马来西亚、新加坡和印度尼西亚的著名美食。虽然材料非常简单,但如果不遵循一些传统步骤,不是每个人都能煮出表面光滑、颗粒分明的糯米饭。
我一开始也不太相信这些步骤的重要性,但事实是,当我用电饭锅煮的时候,确实没办法做到那种光泽和质感。蒸糯米饭是关键,而让它变得光滑光亮则需要额外的努力。”
“当热量与我们加入椰奶的方式相互作用时,会发生一种有趣的化学反应。盐水有助于提高米饭表面的温度,从而逐渐释放椰奶中的椰子油。由于加入的椰奶量有限,米饭不会吸收过多的椰子味,反而能够保持黄姜粉的香气。这正是我们传统方法所蕴含的智慧,令人惊叹。”

      High and VIP seats both have a better view of the entire show, way better than Eco. Because there are plenty of activities happening simultaneously at the arena (left, right, middle and further back), so only those in these seats can grasp everything in one glance. Meanwhile, the difference between High and VIP is VIP seats are under a roof while High seats are open air. So if you visit during raining season, I encourage you to pick VIP seats better, because the show will go on except for thunderstorms.

      I am not sure about the afternoon at 4 pm because most people will go in the morning and are scared the queue is too long. You may try and let me know, I have not tried before because I am avoiding queueing under the hot afternoon sun or possibly under rain heavy rain. 😅

    Cooking time is simple: - on high heat cook for 15 mins, - follow by medium-low simmer for 45 mins - add in the peach gum and rock sugar - medium-high simmer another 45 minutes then is done. 烹饪时间很简单: 大火煮15分钟, 然后转中小火慢炖45分钟, 加入桃胶和冰糖, 中火再炖45分钟即可完成。

    I tried your recipe but my kaya jam ended up turning into brown egg custard 😂,

      There are a few things that need to be careful of in the process if Yr Kaya turns curdle 1. The heat during stirring, shouldn't be boiling water, the water should ALWAYS remain with steaming, it is 70 - 80 degrees. Any higher you got a chance to get what you have 2. Your bowl that contains the mixture shouldn't touch the water surface. If can use a taller pot and let Your mixing bowl an inch or more above the steaming water. If direct contact with water, even is 70-80 degrees, The mixture will also curdle 3. Stir patiently and continuously without stopping. You need to stir to distribute the heat the Yr mixture gets from steaming water. If you slow down, some of your mixture will get cooked and curled. And very soon the whole thing will become a Steam Egg as you said. This needs to be detailed in these particular 3 areas. Many beginner will overlooked this though it may sound simple. The egg curdle only happen when it cook unevenly and too fast. Hope you will success next time. Ask me again if you got more information to share

    Hi, my Kaya always have a strong coconut taste and doesn't taste like the one bought off the shelves. What went wrong?

      I see, may I ask a few questions - do you kaya form curdle (rough surface) where you find small pieces of cooked eggs? - do you add in the Santan (coconut taste) and egg in this orientation (egg+sugar & Santan +sugar before you mix these two?) - the quantity of santan and type of santan you use (fresh, or box, and the type of brand) Based on my experience, the only time when I get a super strong coconut taste (too strong I mean) and also super sweet, is when I mess up the orientation and I cook it with high heat. Making this jam is like baking, the step has to be exact and cannot be out of order. And when we cook on high heat, the egg will cook very fast instead of forming a harmonious structure with the coconut milk. And you coconut milk with break down and release coconut oil (even a tiny bit) will also cause your jam to overpower of coconut taste. Do let me know the consistency of your jam and other conditions, so I might able to answer more precisely. I failed too just like my mum did before. And whenever I failed, I will usually get these conditions, rough texture, too sweet and too coconut taste even though I used the same amount of ingredients.

But yes, I do realise mine tasted like the Kaya you get in pastries and not those Kaya that is meant for bread. And yup, I mix everything together before I even put into the double boiler.       That time the video is on Friday, but you have to remember for Kedah and Perlis, it is their weekend. That's why it's so crowded. If you go during any public holiday or festival season, it will be overwhelming. That's why usually I take the train rather than drive, though we can buy more if we drive there. To beat the crowd, try to go there as early as early as dawn, but u need to get your insurance and documents ready a day before. Still, it is by your luck because many tour buses are also queuing up before dawn. It is a fun experience, but with kids and elderly, it can be overwhelming for them

      Do you mean to drive up from Southern Thailand to Cambodia or travel to Cambodia directly by flight? I have not driven for such long-distance Malaysia to other South East Asian countries, but I have been to Cambodia (Siem Reap) for couple of times

      Nope...still the same. You need a document to prove that your sis let you drive her car. You need to commission of oath to certify it too. Unless your sis is in your car and let the owner go down and get the document chop and check, then it will be easy.

      Hi, this is the origin link for the full recipe. I make this by using porridge, more fragrance and traditional method, and easy to do with mess up the consistency of the Koay Kak compared to using rice flour. Hope you enjoy it

    Hi... notice you mentioned that passengers need to go down themself... what if travelling with young kids....

      From what I can see is that all passengers have to go down including kids. If u see the video, some only go down with the driver when at the Pondok/the Kastam officer there to stamp your passport. Just like taking flight, i think children also need to bring together. Hahaha sorry I don't have children travel with me, so I can't be 100% sure to tell u about this.

      Not difficult right? Everything is very straightforward. If lazy, prepare the paste and marinate the fish overnight. Next day wrap...easy without hassle
