Judging by your accent, can I safely assume you're in Europe and starting with room temperature eggs? As I understand it, Europeans don't refrigerate their eggs, but in the USA we do.

@@tinykitchenuk so glad I found your channel and I just subscribed because I found a great bargain on quail eggs last night and was hoping not to screw up having them soft boiled . Needless to say they turned out perfectly and they are of course gone . But we'll have some tomorrow and off and on for the next week . The reason I wanted to try them as I had heard they are about three times higher or five times higher in vitamin E than regular eggs .

Yes I can't understand how they charge premium prices and don't tell us the steel. It's "premium Japanese steel" folded over copper I guess. My guess is it's VG-1 or a high molybdenum steel like Aus-8. If it was something like VG-10 I think they would tell us. No HRC at all anywhere. Crazy when their competition, Shun, Miyabi, Misen, etc., all tell you. Even the western knives like Wustoff tell you the steel. Very odd and stops me from buying this knife.

Hi Martin. You should give it a sharpen every week, depending how often you use it. My knives all get sharpened every time i use them, just to keep them as sharp as possible. If you leave them too long, it takes longer to get them sharp again.
