Stinky bean is a kind of beans that is a specialty of Malaysia. It has a unique taste. Malaysians love eating the stinky bean very much. "Sambal Petai Fried Minced meat" is one of my favorite dishes cooked by my mother. It is not easy to get fresh stink beans in the UK, so I bought canned ones, which also taste pretty good.
臭豆是马来西亚的特产的一种豆类,它的味道很独特,马来西亚人非常挨次这个臭豆哦。"叁巴臭豆炒肉碎"是我最爱吃的一道妈妈煮的菜,在英国比较难买到新鲜的,所以我便买罐装的,味道也挺不错的。
Ingredients:
Petai (stink beans) 150g | 臭豆 150克
Red onion ½ cup | 红葱 ½杯
Garlic mince 1 tbsp | 蒜蓉 1汤匙
Minced meat(chicken/pork) 250g | 肉碎 (鸡/猪) 250克
Cooking wine 1 tbsp | 料酒 1汤匙
Oyster sauce 1 tbsp | 蚝油 1汤匙
Soy sauce 1 tbsp | 生抽 1汤匙
Sambal Shrimp Chilli paste 2 tbsp | 叁巴虾米辣椒酱 2汤匙
Brown sugar 2 tsp | 红糖 2茶匙
Dark soy sauce 1 tsp | 老抽 1茶匙
Chilli flakes(dried) 1 tsp | 干辣椒碎 1茶匙

00:33 | Adding garlic mince at this time after frying the minced meat because the meat will have to take longer to fry and the garlic will not be burnt

      We are malay in Malaysia is a not like people who want to claim anything. For us, Rendang Malay is our dish. Our rendang is not 100% same like indonesia rendang. We have atleast 3 type of rendang here. That is difference like in indonesia rendang. Every Hari Raya we cook rendang as one of permenent dish. We do this generation by generation for long time ago.

      Hi, salt is used to dry up the pork skin to make it more crispy after frying. The coarse salt was chosen instead of fine salt, because coarse salt will not make the skin salty and it is more easier to be removed as well. Hope this helps and thanks for the comment😊

    Has your meat already been scored prior to you poking holes? What is the difference between your large holes and other recipes' small holes, using nails or tooth picks?

      The meat was not scored prior the holes poking process, and it is best to use something firm and sharp(small knife) to make proper holes into the skin for better end result.

    Why the Air fryer, oven and grill?? Can't you show how to fry it in a wide Pan or something?? A person who likes it very much 🤗🤗👍
