    It’s difficult to buy dried flatfish in the UK. Last week, I happened to see flatfish on sale in the supermarket, so I bought a few to make dried flat fish. Dried flatfish powder is a seasoning commonly used by Cantonese. It has the effect of enhancing the taste. The roasted/fried dried flatfish taste even better and can be used to make soup, or as a seasoning for fish balls, wantons, dumplings etc. Hope you enjoy it!
    外地比较难买到比目鱼干,刚好我在超市看到很多的大地鱼大减价,我便买了几条回家做比目鱼干。大地鱼干/粉是广东人常用的调味料,它具有提鲜的效果,烤/炸过的比目鱼干香味更浓,可以用来熬汤,或加入鱼丸,云吞,饺子等等。
    Ingredients:
    Dover sole fish | 比目鱼/大地鱼
    Salt | 食用盐
    Cooking Materials:

    02:03 | Adding salt will help dehydrate the fish, which will make it easier to dry.
    02:32 | It is recommended to bake 4-6 fish at a time because the baking time is 4-5hrs
    02:37 | It is recommended that the roasted dried flatfish be placed in a dry area for 1-2 days to allow the fish to dry completely. Then it is ready to be ground into powder or to be kept in a container
    03:09 | Fish head is not recommended to be ground into powder
    [Dried flatfish can be kept for about 3 months. It can be kept longer if store in freezer]

    02:32 | 烤干时间比较久,建议一次烤4-6条鱼,这样比较划算。
    02:37 | 建议烘烤后的比目鱼干放在干燥的地方1-2天,让鱼彻底干透,再磨成粉或放入收纳盒保存。

      Hi, you can use normal oven but it will take longer than fan oven. If you live in a place with warm sunny weather, you can dry it under the sun as well. 😊
