Soy is NEVER essential to adobo! Its just vinegar! The Chinese product "soy sauce" was never used in traditional adobo. Adobo with soy only came up after WW2. Why do westerners bastardize foreign cultures?

It's cheaper to use ox tail or short ribs first for the flavor in kare kare then for the extra meat add beef shank as it's less expensive compared to the ox tail.
Philippine national dish is sinigang not adobo
The "Filipino food" that is so commonly presented on the media are foods that we rarely ate in everyday life. Our everyday foods were simple, cheap, healthy and easy to make. They were usually boiled/braised resulting in a lot of broth, eaten over rice My mother hardly served fried foods, God forbid anything deep fried because cooking oil was prohibitively expensive. Meat in dishes were usually mixed with lots of different vegetables.
