Onions and Eggs Casserole with Ground Beef (Albanian Kimë me Vezë)
I grew up eating this dish called Kimë me Vezë in my native country of Albania. My two sets of grandparents cooked this slightly differently and I am aware there are regional differences in this recipe.

That’s actually ricotta! We either add it over toast with olive oil and then top it with the peppers or sometimes I even stuff the peppers with ricotta. Delicious either way:)

History of the dish is that few drunken men went to a restaurant that was about to close and they literally put together leftovers & random things to create the dish. Hola Kelly, a veces lo encuentro en Presidente supermarket de North Bay Village. Despues si no lo tienen ellos voy en El Bay Supermarket que esta en el mismo camino (la 79) yendo por la playa. Tengo un otra opción pero no voy alli muy seguido, es el Tropico o Tropical supermarket en la 79 y 81.

Hi Sonila, I am just wondering if I absolutely have to boil it afterwards? I just don’t want to lose the crunch factor in the tomatoes. Also, can I pickle other vegetables the same way, such as cabbage? Thanks for sharing I can’t wait to try it.
Hi Jen, thank you so much for your comment. The boiling of the jar top down is usually so there’s no oxygen left in the jar and the tomatoes pickle properly. However, I know when I was little we didn’t boil it. We put a rock or something heavy to weigh the tomatoes below pickling solution level. Rinse the tomatoes with cold water before using into a salad and they’ll be crunchy:)).

First thing is id switch to a much higher proof neutral spirit like everclear and soak the rinds, no sugar yet. Let the higher proof do its thing for weeks and then seperate out the rinds from infused spirit and i then take the rinds and sometimes even a few fresh ones and make a simple syrup using the rinds in the process so you end up with a lemon simple syrup and thats when you combine the lemon infused spirits with the lemon infused simple syrup and depending on what strength you want maybe a little distilled water. It will come out a much more vibrant yellow and the lemon taste is superb. This way you did works too just not going to be as lemon strong. The way i do it is how most Italians i was around made it.
I use your method for limoncello but for this orange one, I used what my grandparents did to make homemade liqueurs a long time ago. Sometimes their methods are not perfect but that’s what they had available so they had some limitations. I use this liqueur in cakes for example, 1-2 ozs. It really improves the taste pf baked goods a lot:)). Thank you for a constructive comment, too many people just go negative right away and it’s hard to have a conversation. Have a great weekend!

Hi, here are all the ingredients I used - Full recipe in my blog: mediterraneanlatinloveaffair.com/pinto-beans-soup/ 16 ozs pinto beans 1 red onion 1 green pepper 2 large carrots 3 garlic cloves add more if you like garlic 4 tbsps olive oil extra virgin 3 tomatoes better if they're soft 14 ozs tomato sauce 4 cups bone broth 3 bay leaves 1 tsp cumin 1 tsp dry parsley 1 tsp dry oregano 0.5 tsp black pepper 1 tsp smoked paprika 1 tbsp sea salt 2 tbsps freshly chopped parsley garnish 2 tbsps freshly chopped onion garnish

Thank you so much!!! And true nectarines, also white peaches work great with this recipe too. I make a similar salsa around May/June when mangoes are plentiful in my area with mangoes & strawberries! There’s so many variations and they all enhance grilled meats, chicken and most meals really:)). Have a great weekend!

Shume faleminderit per komentin!! Ky brumi qe perdor une ka vaj brenda plus i sperkas petet me gjalp kur i shtroj, keshtu qe skam pasur shume nevoje ti thaj petet dhe del shume e shkrifet bakllavaja. Per sheqerin po thoja qe vete nuk e dua sherbetin shume te embel prandaj nuk i hedh aq shume sheqer sa eshte tradicionale. Une ve pothuajse gjysmen e sheqerit.
Une ve 3 gota sheqer me 4 gota uje per sherbetin.

How long will this last?
If you seal and sterilize the bottle, unopened it’ll last couple of years. Once you open a bottle then estimates are 6 months to 1 year. I try to push to the end of the year by keeping my opened bottle (cork or lead on), in the refrigerator.
First time I made this was so spicy the second time I make it was bland l dont lnow what l did wrong.
