Today we taste an inadvertently aged "Honey Black", a Landrace Da Ye Zhong from Guangdong, here at JagaSilk.
We have cupped it yearly since 2021, because though the sample was good, the tea we got was not. But life is full of surprises.

      Thank you! It is definitely a journey to try and understand it. Feels pretty core to our goals as a company, and Yamaguchi-san's work is inspiring. We had a great time learning from Fujioka as well in the previous episode, and hope up visit Takaki in the fall for a bit of a story on transitioning tea fields to organic by a second generation tea farmer in Fukuoka. 👍

    Why did you brew it for 3 minutes?

      Good question. When we initially brewed it me traditional gongfu at a hotter temperature and shorter infusions, we found it lacking the honey note and body that really makes us love this tea. The less dense leaves make it more of a challenge to up dose, which would have been another alternative. Always interested in improving our game though and experimenting to make the tea taste better for sure. 👍

    This is really interesting. I've been trying to work out how to extend shelf life for a bottled RTD cold brew tea with no sugar or additives that will impact flavour and health benefits. Considering some combination of HPP, microbial filtration and pasteurization. Have you had any luck with extending shelf life without impacting the product in a noticeable way? (i.e flavour, appearance, health benefits)

      We are all in on pasteurizing in the bottle or can to protect the aromatics from blowing off. There is somewhat of a flavour transformation, but it's good. 👍

      That's interesting! I wouldn't have thought pasteurisation on its own gives a very long additional shelf life? Presumably its still a 'fresh' product that requires refrigeration through storage and distribution? I imagine the can helps as well by keeping light away from the liquid. Thanks for the response :)

    This is very good that you show people that it is easy to make loose leaf tea, they need not be afraid from brewing good tea, it needs no equipment, this is how I started drinking tea, and sometimes I still use 2 cups and a strainer and I can make great tea.

    Do proportions affect steeping time? Specifically, does making 4 cups of tea at once mean that it should be steeped longer?

      Just takes 9 years to respond. Yes we find the water volume will affect heat dynamics which will affect extraction times. Regardless, we try to keep the pot filled to the top and dose accordingly.
