Canning Corn Salsa
This corn salsa is so good! It's the taste of Summer preserved in a jar.
If you have any questions, leave them in the comments below.
Thanks for watching!
Corn Salsa Recipe
5 lbs. tomatoes, roughly chopped
2 c. corn kernels
1 c. onion, chopped
3-4 jalapeno peppers, seeded (or not) and chopped
1/2 c. fresh lime juice (about 6-8 limes)
1/2 c. fresh cilantro, chopped
2 t. salt
Instructions
Prepare all vegetables by washing and chopping. Seed the peppers for a milder salsa or leave the seeds in for more heat. Peeling and seeding the tomatoes is optional but recommended. Strip the corn from the cobs. (Frozen corn kernels can also be used, just defrost first.)
Prepare a water bath canner (if canning), along with rings, lids, and jars.
Place all ingredients in a stock pot or dutch oven and bring them to a boil. Simmer gently for 5 minutes, stirring occasionally to ensure all ingredients are evenly distributed and heated.
Ladle into prepared canning jars, leaving 1/2 inch headspace. Seal with 2 part canning lids.
Process in a water bath canner for 15 minutes (adjusting for altitude, see notes). After 15 minutes, turn off the heat but leave the jars in the canner for an additional 5 minutes. (This helps prevent siphoning from thermal shock.)
Remove the jars from the canner with a jar lifter and allow them to cool on a towel on the counter for 12-24 hours. Check seals and store any unsealed jars in the refrigerator for immediate use.
Enjoy!!

Black Raspberry Pie ~ Husband Bakes With Me!
Left mine on the double boiler the entire time. Worked good and stayed melted, but made one hell of a mess trying to transfer them to parchment. Also might be too hot to keep them over the boiler, I noticed peanut butter dripping on to my white chocolate a few times, still worked very well, but might actually be better your way (removing the choco melt pot).
I love this video!! Nice and slowly explaining the process. Is it ok to use regular granulated sugar and a 1 lb pizza dough? I didn’t have confectioners. Can’t wait to make this! Ty
Kick him out of the kitchen 😅
Can I can left over shep pie (without the mashed potatoes but with carrots and peas) and do I have to cover with broth?
Great video
Will you share your pizza sauce recipe?
This is so great!! I would like to can leftover jambalaya . , and chicken spaghetti… thank you ma’am
why do you cook the jars so long if the food is already cooked. 75 minutes, ?????
You are ensuring that the bacteria is killed
Can u cut recipe in half ? Not sure if the balance of sugar and pectin will still work
Love you 3 cooking together. ❤
Thanks for the video! I’m about to do this with our steam canner and it’s great to get an idea of the final product before we get going!
They no.longer have the instructions in box, you have to go to the website, and it's dumb for that.
I just found that out a few months ago. That's just crazy!!
Great video. 👏 I drain the hot juice right into the jars and pop the lids on. Cover them with towels and they self seal. Any that don’t seal get boiled in the water bath for 10 minutes
This was helpful. Thank you!
Rhonda's Kitchen, I have to say I was pleasantly pleased with The Amish Paste. They produced allot of fruit and the taste gets better as the season progresses. Thanks for that tip.
👏👍👌
I am a huge fan of hot salsa. I sauté slices of serano peppers in olive oil then add 3 eggs and scramble. Once eggs are on my plate I add chunky hot salsa. Yummy! Sure would like to try your salsa. Looks delicious. 👍👍
Sounds great!
Great video
Thanks!
Perfect canning video 💯. Rhonda is one of the cooks on UA-cam, really like all the cooking. As always makes me hungry 🤣🤣🤣🤣
Why not use iodized salt?
You could use it, but there are additives in iodized salt that would turn the liquid cloudy or discolor the food.
Thanks
My wife uses lime juice for making key lime pie. It is one of our favorites. Your Salsa looks like a wonderful recipe. Sanders needs to be complimented on his sweet corn. We are impressed.
Love ALL Salsa including Corn Salsa. 👍🙏
Good Morning Ronda I’m not really a fan of Salsa but you may have made me want to try it they look so yummy and you are such a very busy lady it amazes me how you fit all these chores into your daily routine ❤😊 As always your good friend from Massachusetts Kenny D
Great job again Ronda!!! I think I will use just tomatoes and sweet corn for my salsa. As you may have already guessed from my last comment in your last video (relish), I am not a fan of relish and salsa. Not a fan of spicy or weird tasting things. Again,.....Kevin can have my share.
Haha!! What do you eat? 😄
@@acresofclaykitchen I am more of a plain-Jane person. Meat, Potatoes, some vegetables. Beef, pork, chicken, turkey, duck, goose, squirrel, fish, rabbit, pheasant, deer, frog legs, lamb, shrimp, turtle. Potatoes mashed, boiled, french fries, baked, au gratin, scalloped, hash brown, american fries. Vegetables, corn, peas, cooked carrots, tomatoes, kidney beans, asparagus, broccoli, cauliflower, baby spinach. Pastas like lasagna, spaghetti, alfredo, etc. I just don't like anything spicy or weird tasting. This list is not all inclusive.
Good morning, Acres of Clay family. After a week of heat advisories, we finally have a forecast of cooler weather. I just finished cooking some fried green tomatoes and I'll be making a beef version of your chicken noodle casserole later. This corn salsa looks great, I just wonder how much dried cilantro I'd need to substitute. For some reason I react to fresh cilantro but not dried. Have a blessed day, I look forward to the farm video tomorrow.
I would reduce the Cilantro to 1/4 c. if using dried.
Great video Rhonda, you can turn your hand to anything, well done.
Good morning Rhonda. Great video and it looks delicious. Take care and have a blessed and safe weekend
Hey Rhonda! It’s been a while since you have had your Mom helping you in the Kitchen on this Channel. Is your Mom doing Well ? Thanks! 👍🙏
Yes, my Mom is doing well. Thanks for asking. We should do another video together!
Bet your relish is yummy. Love relish on hotdogs 👍👍
Me too!!
It's great to see Rockin Ronda doing her Kitchen videos again!
Nice job explaining things. I do not like relish,.....Kevin can have my portion.
Thanks for watching!
You really do a great job explaining the recipes, Rhonda. I bet it tastes amazing. Both of your channels are bright spots on UA-cam. America really needs to see awesome families like yours. Thanks.
Thank you so much!
Good morning and great video Rhonda. Looks delicious 😋 Take care and have a blessed labor day weekend
Thank you! You too!
Great job Ronda!!! We had a lady in our Bible Study group, that made Kombucha. She had a corner of her kitchen countertop that had all various things she worked on. We lovingly called it her "Chemistry Corner." She had me and another guy, try the Kombucha one time. WOW!!! You should have seen our faces!!! Neither one of us liked it. It was a taste that I had never tasted before. I didn't know my face could make so many weird looks. Everybody had a good belly-laugh. I appreciate all you taught us, BUT,.....you can have my portion!!!
🤣
Hello interesting video
Thanks!
Ronda it looks delicious I don’t believe I am intelligent enough to make this but you hit the nail right on the head I learn something new everytime I watch your videos 😊
Hi Rhonda! Do you still Can things ? I remember seeing previous videos about Different things you Canned and the Fact you had Over 1000+ Jars at one time. Thx!
Yes, in fact, I was canning tomatoes today. 😄
Cool. 🙂
Happy Birthday to Kevin.
Great information. Thanks, Rhonda.
Oh my goodness. In all my years I've never heard of this before. But it sounds so good and would make an excellent pick me up drink. Do you keep using the Scoby to start a new batch? Or do you grow a new one every time? I might be mistaken . But I think Kevin's birthday is coming up in a few days.. Mine was Sunday and turned 70. In any case wish him a HB for me.
Every batch grows a new one, but I keep them together and use them. Kevin turns 50 tomorrow!! 😃 Happy early birthday to you, too!!!
@keylargo2001 Happy birthday.
@@acresofclaykitchen Thank you very much. I guess my memory isn't as bad as I thought. It has been about 2 years since I sent him the WS for his birthday.
@@ohmbug10 Thank you very much.
Even those who know about kombucha, there are so many who don't realize just how old this drink is. You've done a great job in educating us on how to make it. It seems this would be a great way to take medicinal herbs when feeling under the weather. Have a blessed week, stay safe and enjoy the cooler mornings.
Good morning Rhonda. Nice video. Never heard of it before but it looks yummy. Take care and have a blessed and safe week 🙏
Rhonda, how do you can apple slices. I can't find a good recipe. I am hoping g that you have a recipe similar to peach slices.
I'll try to make a video when apple season is upon us. :)
Rhonda they look wonderful.. I know you keep your cupboards well stocked with such things..For me my kids are grown so my home rarely smells of fresh baked goods. Many Blessings
Hi Ronda, I was wondering if you could do a video on the white icing that's on a Bismark donut? Not sure if you have made it before but figured as good as you are you might know how it's made!! Thank you and love both of your channels. Ed....
Sounds good! I'll have to give them a try.
Delicious
Yummy
Can you cann pasta
No, canning pasta isn't safe.
