Canning Corn Salsa
This corn salsa is so good! It's the taste of Summer preserved in a jar.

Corn Salsa Recipe
5 lbs. tomatoes, roughly chopped
2 c. corn kernels
1 c. onion, chopped
3-4 jalapeno peppers, seeded (or not) and chopped
1/2 c. fresh lime juice (about 6-8 limes)
1/2 c. fresh cilantro, chopped
2 t. salt
Instructions
Prepare all vegetables by washing and chopping. Seed the peppers for a milder salsa or leave the seeds in for more heat. Peeling and seeding the tomatoes is optional but recommended. Strip the corn from the cobs. (Frozen corn kernels can also be used, just defrost first.)
Prepare a water bath canner (if canning), along with rings, lids, and jars.
Place all ingredients in a stock pot or dutch oven and bring them to a boil. Simmer gently for 5 minutes, stirring occasionally to ensure all ingredients are evenly distributed and heated.
Ladle into prepared canning jars, leaving 1/2 inch headspace. Seal with 2 part canning lids.
Process in a water bath canner for 15 minutes (adjusting for altitude, see notes). After 15 minutes, turn off the heat but leave the jars in the canner for an additional 5 minutes. (This helps prevent siphoning from thermal shock.)
Remove the jars from the canner with a jar lifter and allow them to cool on a towel on the counter for 12-24 hours. Check seals and store any unsealed jars in the refrigerator for immediate use.

Great video. 👏 I drain the hot juice right into the jars and pop the lids on. Cover them with towels and they self seal. Any that don’t seal get boiled in the water bath for 10 minutes

I am a huge fan of hot salsa. I sauté slices of serano peppers in olive oil then add 3 eggs and scramble. Once eggs are on my plate I add chunky hot salsa. Yummy! Sure would like to try your salsa. Looks delicious. 👍👍

Why not use iodized salt?
You could use it, but there are additives in iodized salt that would turn the liquid cloudy or discolor the food.

My wife uses lime juice for making key lime pie. It is one of our favorites. Your Salsa looks like a wonderful recipe. Sanders needs to be complimented on his sweet corn. We are impressed.

Great job again Ronda!!! I think I will use just tomatoes and sweet corn for my salsa. As you may have already guessed from my last comment in your last video (relish), I am not a fan of relish and salsa. Not a fan of spicy or weird tasting things. Again,.....Kevin can have my share.

Beef, pork, chicken, turkey, duck, goose, squirrel, fish, rabbit, pheasant, deer, frog legs, lamb, shrimp, turtle. Potatoes mashed, boiled, french fries, baked, au gratin, scalloped, hash brown, american fries. Vegetables, corn, peas, cooked carrots, tomatoes, kidney beans, asparagus, broccoli, cauliflower, baby spinach. Pastas like lasagna, spaghetti, alfredo, etc. I just don't like anything spicy or weird tasting. This list is not all inclusive.
Good morning, Acres of Clay family. After a week of heat advisories, we finally have a forecast of cooler weather. I just finished cooking some fried green tomatoes and I'll be making a beef version of your chicken noodle casserole later. This corn salsa looks great, I just wonder how much dried cilantro I'd need to substitute. For some reason I react to fresh cilantro but not dried. Have a blessed day, I look forward to the farm video tomorrow.
I would reduce the Cilantro to 1/4 c. if using dried.

Great job Ronda!!! We had a lady in our Bible Study group, that made Kombucha. She had a corner of her kitchen countertop that had all various things she worked on. We lovingly called it her "Chemistry Corner." She had me and another guy, try the Kombucha one time. WOW!!! You should have seen our faces!!! Neither one of us liked it. It was a taste that I had never tasted before. I didn't know my face could make so many weird looks. Everybody had a good belly-laugh. I appreciate all you taught us, BUT,.....you can have my portion!!!

Oh my goodness. In all my years I've never heard of this before. But it sounds so good and would make an excellent pick me up drink. Do you keep using the Scoby to start a new batch? Or do you grow a new one every time? I might be mistaken . But I think Kevin's birthday is coming up in a few days.. Mine was Sunday and turned 70. In any case wish him a HB for me.
Every batch grows a new one, but I keep them together and use them. Kevin turns 50 tomorrow!! 😃 Happy early birthday to you, too!!!

Years ago when my mom used to make jelly I always remembered her having wax on the top of it I don't understand why
The wax gave the same seal as a self sealing lid . My grandmother used more wax than self sealers in her day I would say.
