When we caught an enormous cusk I knew it was time to make a filleting guide for this monster fish!
In the video we show you how to fillet the cusk the most common ways, both from the top, and from the bottom. Then I'll go through how to fillet the cheeks of the cusk as well.
In Norway, cusk is called brosme. Sometimes I'll refer to the fish as brosme as well.

How cold is out there? I’m guess pretty damn cold 😂
Haha it gets pretty cold in the wind, especially during winter. But I guess the saying “there’s no such thing as bad weather, just bad clothes” really applies here. Tons of wool and thick waterproof clothing eliminates most temperature related problems. Fingers and toes still need some heating up every now and then though haha

Thank you! It was quite tricky to cut the big fish with that small knife, but my father managed it somehow. Cusk is a very delicious fish, one of my favorites.

Best knifes around for filleting and deboning chicken, beef and pork ect. I have all three sizes in my kitchen. I have about 25 years experience and they do keep a sharp edge. Here in the states buy from Walmart starting at $15.00 for the 6”

I’ve had this knife for 50 years. I switched to dexter only because I wanted a longer blade. Otherwise I think it’s a great knife

How do you know which to keep and which to let go?
Usually we just let them all go as we can’t fish them commercially, but sometimes we will catch a few if for personal use if we want to eat crab 🦀 obviously we go for the biggest ones since it can be a bit painful to prepare them due to all the spikes haha

I don't care about knives being sharp out of the box, they were not when I was a kid being taught to sharpen. My favourite knives for filleting fish are the Marttinni knives. I would always use a heavier blade to behead and cut cod into steaks, filleting knives are not suitable in my opinion for rough cutting longline bait either !

I processed hundreds of thousands of pounds of these back in the 1980s. The tail and pectorals went to Asia for shark fin soup, the bellies we skinned and sent to Germany to be smoked for Schillerlocken, and the bodies went to England for fish and chips. I always said that the dogfish was a world traveler.
That is amazing! My grandfather on my mother's side also worked with processing dogfish for many years. I believe they were primarily interested in their livers for the oil, but it is very interesting to hear that the rest of the fish was being utilized so much as well. I plan on doing some cooking videos for dogfish in the future as well, as I think the meat is great!

My go to is the Victorinox but it doesn't hold an edge that long. We need a filet knife in LC200N or Magnacut.
Most people would have a hard time sharpening those steels. Dexters and victorinox are very easy to sharpen and strop
The old cast aluminium handle Gerber Muskie is hard to beat..
You have forgotten the tongue . Tongues & cheeks a Newfoundland staple.

Dexter. Victorinox/ Forshner, & Marrttini( rapala) are my go to knives Rapala doesn't make knives Marrttini makes knives for Rapala. You might look at steel content before judging the rust on the Dexter, ive never had a issue of this & my several by them are razor sharp & about 30 years old & cut fish from February to late November here in the US
Thanks for the info! I also read a lot of positive things about the Dexter before I bought it, so I am sure I just got a lemon, but I thought it was worth mentioning since it happened to me it could be a quality control issue. Victorinox is still my personal favorite along with the Kastking
@TortheFisherman it's hi carbon stainless steel that Dexter-Russell uses. Keep it clean & dry u will have no issue with it
