    I've learned that using enough cooking oil, or even spray, to cover the whole bottom of the pan and be sure the pan is hot enough to receive the food. I've found like you did that it really didn't matter, but you put your eggs on the hot pan and let it be for a little bit before you tried to move it, that's the way to cook on these things. My wife doesn't do that and hates cooking on cast iron because she puts the pan on the heat and then puts her food in it before the pan is hot, then you end up with a stuck mess. There is something cathartic about watching cast iron maintenance videos though, lol. Not sure why. Good job.

    I received two cast iron skillets ( one a 10 in. & one a ribbed steak pan ) for Christmas . They're labeled " Mirror" ( made in China ) . The texture on the skillet is so rough I can't use a paper towel on it ( it shreds it ) ! I decided to season it one time. After one hour in a 450 degree oven , I let it cool in the oven till I could handle it with a pad . Then I shallow pan fried some potatoes.. non stick btw . Then sausage, then a two egg omelette , also non stick btw . Next time I used the steak pan w/same result .

      I would not recommend. Animal fats can go rancid and begin to make your food taste "off".

      Lodge and others have videos showing how our cast iron is made. I can see why what they make now could be better than what was made decades ago, there's more testing of what's in it and what temperatures are during the process.

    Who is spreading these myths lmfao??? And i dont really see a need to ever wash my cast irons unless i do tomato sauce or something thats nasty. Otherwise i just wipe with paper towels. But sure washing is fine if youre anal i guess. Any oils or greases left after a paper towel will just burn off or die when its used next time. Ppl worry way tooooooooo much about cast iron. Ill never use anything else.

      Yeah man, I wash with soap after every use. My pans seasoning still builds up. You cannot wash away polymerized seasoning. And that is what makes your pan lovely, not the unpolymerized animal fats left on the pan due to not washing and can go rancid and bring all kinds of unpleasantries. Just because it hasn't happened to you yet, doesn't mean it never will. Leaving your pan dirty is poor kitchen hygene. Those unwashed greases and fats do nothing but risk health and at best make your next dish taste icky. It's the COOKED ON and POLYMERIZED FATS which enhance your non-stick surface. Those won't wash away. That's just my take on it dude. My food always tastes "off" if cooked in a dirty pan. I used to do the "don't wash" thing. Food tastes kinda icky.

      I use my new Lodge more than my Griswolds, Wagners, Columbus Hollow Ware, BSRs or old Lodge. They're great pans made by a great company.

    Thank you! I'm 71 years old, cooking with cast iron 60+ years and the people I learned from, decades before that. Everything you said is correct. If you read the comments section of people promoting seasoning you will find people having problems and they always start with what work they put into seasoning. I have a lot of cast iron, a lot of the old stuff people rave about and new cast iron. You are right about new Lodge doing anything cast iron does. I use my new Lodge more than my old pans because it holds more heat than my old, thin pans. If I had to just have one skillet, it would be a new Lodge. I admire Lodge as a company; fifth generation, since 1896, employs about 350 people in a town of about 3,000 people. They make almost 2 million pieces of cast iron per month. They spend a lot on quality and I believe they could double the price of their products and make more money. I believe they would rather serve their customers and employees than make money. The only suggestion I might have for you is you may want to try stainless steel scouring pads for those few times you have something you want to get off your cast iron. I get mine at Dollar Tree and one pad lasts for months. For me it's usually where I allowed what they call "seasoning" to build up and something stuck.

      @@I_Am_L_3 You don't even have to boil, just heat and scrape. If you don't get the "seasoning" off, it'll stick crud on it again. If I'm cooking something I think might stick, I'll pick one of my skillets that is not black, one I can see metal.

      @ I was curious about Victoria pans and saw a #10 on FB Marketplace for $10. It rang so, I knew it wasn't cracked, was plenty flat enough for me to use on my gas range and it didn't bother me at all that it had crud stuck on it. When I got it home I figured it had been "seasoned" and baked at least 3 times on the inside and once or twice on the outside. I could see why food was stuck. It didn't make it in the house, I laid the makings of a small wood fire in my smoker, put the pan on top, lit the fire and left it until the next day. A couple of minutes to brush the ash off, a good wash with dish soap, dry it on a burner and rubbed in just enough lard that it wouldn't rust. It's absolutely flat and I doubt it ever had anything successfully cooked in it. If people don't get an honest start, they'll give up and that makes me sad. Thank you for showing people that honest start.

      Almost any cooking oil will work. But I recommend a high smoke point oil like Flax or Grapeseed. But even just vegetable oil will be fine.

    Love that you are back posting. Excellent information. And fun spirit of cooking. With relaxed energy and being in the moment with cooking the simplest dishes are wonderful cooked in cast iron. I love my Lodge pans. Glad I learned as a kid long before youtube watching my mom. She just cooked in her pans, used soap and dried pans thoroughly. She never used high heat. Would put pan or pans onto warm up while getting things situated for whatever she made. I just relax and cook. That chefs pan looks very interesting. Cant beat that price.

    Nice video. Do most American Homes use cast iron pans and skillets in the Kitchen? In Australia its mainly a camping open fire or butane stove top product. My cast iron pots live in our camping boxes. I always oil them on the last morning of camping. Never really crossed my mind to re season. I've always felt if it's sticking, add more oil lard etc. cheers

      My experiences have evolved since making this video. Today, I agree that just using the pan over time will make it a great pan! Pre-seasoned Lodge cast iron needs nothing but a good scrub with soap and start using right out of the box.

    I had a Japanese cast-iron pan that was even rougher than a lodge. It would not season well enough to keep things from sticking. It was just too rough. So, I sanded it down nice and smooth. Seasoned it up, and things still stuck. That is when I wondered whether a little micro structure was necessary, so I got a grout bit for my oscillating multitool. I turned it sideways and used it to put thousands of tiny necks in the surface. Then I knocked off any burrs with 80 grit. Now it works great. This is clearly a Goldilocks problem. A pan can be too rough, or it can be too smooth.

      Interesting. I think if a pan is VERY rough, sanding down a little bit by hand is sufficient as long as you do not sand it smooth. Just knock down the peaks and it should be good to go! But at least you saved the pan.

      I'm glad you found it funny. The more folks the merrier! Actually, my experience has evolved since I made this video. The only thing you really need to do with a new pre-seasoned cast iron skillet is wash it then start cooking with it. Seasoning will build up over time. But if you want to put more coats, it certainly can only help, not hurt.

      I'm glad you didn't take a power tool to your cast iron. The best thing about Lodge Cast Iron is that it's cheap enough to buy a replacement after you discovered that you ruined it with a power tool! I'm happy I was able to spare you from this fate. Keep cooking!

      You can definitely use grapeseed oil, but flaxseed oil is the best choice for its high smoke point.

      To be honest, I ran out of the Tillamook mozzarella, so I grabbed the great value to just put over the toppings for the visual. You don't have to use Great Value. You can use any darn cheese you like. Personally, I can't tell the difference between the two brands.
