Good work! I hope you try eating raw beets sometime. Canned ones are mushy. Raw ones have a similar taste and texture as sweet carrots. I just peel them with a potato peeler and cut them up into French fry sized pieces. Great for snacking. You can shred them like carrots, too, and add them to salads.
