Super Chicken Burgers
Super Chicken Burgers
6 fresh chicken Breasts
3 tablespoons Atlas Peri Peri spice
Salt
Oil, a splash
1 cup mayo
2 tablespoons tomato sauce
1 tablespoon Dijon Mustard
1/2 cup chopped gherkins
1 small onion chopped
2 sporing onions chopped
2 medium toimatos slices
1/2 head Ice berg lettuce, finely sliced
6 sesame seed buns.
Light you Weber Genesis Gas Grill with the flat top attachment to medium heat on the left for the chicken, and low heat on the right for the buns.
Butterfly the Chicken breasts open with a sharp knife.
Season with salt and spice it up generously with Atlas Peri Peri spice
Oil the grill and lightly and start grilling the chicken.
While the chicken is on the grill, mix the piquant burger mayo.
Add the mayo, tomato sauce, mustard, gherkins, onion and spring onion together.
Cut the buns in half and toast on the Weber Flat Top.
Lay the bottom, buns in tray and spread a generous spoonful of burger mayo on each bun bottom
By this time, the chicken should be done - it will take approximately 6 - 8 minutes depending ion the size of the breast.
Garnish with tomato and sliced lettuce.
Another spoonful of burger sauce on the top bun, pop it on and Smash em!
