    Ahh good ol 10v! My fav steel to make knives out of and my fav steel in use. The performance it's capable of still boggles my mind. It's only rivaled by 4v as a close second of my fav steel in use and to work with, thin geometry 4v at 67rc is pretty mind numbing as well but 10v is just on a different level.

    Beautiful knife & I know a big effort went into thinning that massive blade. - Thin blades for sure one of the undeniable keys to real world performance. - With my first Nakiri I also had expectations of limited use case scenarios, but it's amazing in terms of versatility. - The main advantage to these knives in terms of design is the forward portion of the blade can be ground very thin, significantly thinner than blades with small points. - Knives require a minimal volume of metal in the tip to ensure stability. - You have two choices as a knife designer, taller & thinner or shorter & wider. - I like to sharpen the forward edge of the blades increasing the versatility if these knives. - This works well when used for cutting off portions of larger fruits & vegetables.

    What is the edge angle? The steel seems like overkill until you consider edge angle stability and just the amount of use it gets compared to an outdoor fixed blade. Loved your Psalms 141 blackboard in the background.

Needless to say it sits in a knife chest with my collection, but I did get her a vegetable clever. I my opinion is a vegetable clever should be your first purchase then the meat , the vegetable clever does get very sharp. Merry Christmas and happy new year

    Thin enough to penetrate, yet thick enough to eject the chips seems like the optimal combination. Optimal blade designs will depend on what we are cutting. Hello! I only have the Arkansas translucent, so cannot speak to the hard black. I like the Spyderco UltraFine and find it similar in edge finish to many other stones in that category (Shapton Glass, Arkansas Translucent, other fine ceramics). I personally am liking diamond water stones lately, I'm not sure if you have checked out Venev, but I am getting some good results from them lately.

    • @jensebu78

      Thank you for your answer. I heard a lot of good about the veneves. Not sure if i will try them The one i can get here are pretty narrow. And already expensive. I love the Spyderco UF for not dishing at all and it makes a really good edge. But i have to say, don't have much other experience. (DMT Diamond, Sharpal Diamond and Spyderco Medium and UF). The Blaaaack Arkansas would be very interesting because it is an natural stone. But i guess the edge will be almost the same as from the Spyderco... Thank you anyway. Wish you a great 2025!!!

    The blade flexing means less shock going into the blade and hillt but is converted into vibration. Stiffer, thicker blades are more likely to come loose or snap because of that. This is why machetes are thin, to absorb the impact better.

    • @homeslicesharpening
      @homeslicesharpening 19 днів тому

      Interesting! Thanks for the info - I definitely felt the flex on this one. I suppose there are reasons why high impact blades are flexible. And I suppose that there are reasons we often use axes for this kind of work!

      @@homeslicesharpening For most people, if they can cut a piece of paper, it is sharp. We know that you can cut a piece of paper between 300 and 400 BESS and still the knife is not sharp. Sharp comes in different sizes and the sound tells you how sharp, grrrrrrr is not as sharp as whoosh. If you cut your finger with a 100 BESS knife, the cut does not go as deep as with a 65 BESS knife.

  • @computeronzin
    @computeronzin 28 днів тому

    Finally sharpened a real Japanese knife, the owner had experimented a bit himself and completely ruined the edge. The maximum sharpness was 74 BESS, which I reached twice in the sharpening process. I continued up to and including the 30,000 Grit stone and ended up with 86 BESS. I wonder how long the knife will stay sharp. After years of getting sicker and sicker, I have now found something that seems to work. Pranayama, I now go outside once a week and am among people. If this still works in January, I will make a UA-cam series about it. Greetings and happy holidays with the family.

      @@homeslicesharpening As usual I start by restoring the flow of the knife and determining the angle. The flow was almost right, the knife was partly hollow ground because it was sharpened with a machine. The angle from the factory was 24 degrees and the owner of the knife had done something that I couldn't quite figure out. There was damage to the knife from a clamp and the bevel was messed up. I first tried to solve this with a 400 grit stone, but it turned out that I needed a 320 grit. The point of the knife was gone and I restored the point with a file from the back to the edge. After the 400 grit stone I have the knife under control as I want it. From there it is easy, going one stone further each time. 600, 800, 1000, finishing and measuring in between. The 1000 stone already tells me how sharp a knife can become. Then over two days I did 2000, 3000, 5000, 8000, 10,000, 12,000 and 30,000 grit. I could have gotten the knife a bit sharper, but 86 BESS was sharp enough and I put instructions with the knife on how to keep it sharp as long as possible. The sharpening technique is still the same, two fingers per part, 20X.

      Hey Marc! For production Nitro-V I would recommend finishing on a fine, hard water-stone. I've had great results on my SueHiro 3000 grit, but also good experience on the Shaption Glass 8K and Venev 3|5 Micron Diamond OCB. The real clincher is the strop though. For ultimate durability I'd strop on flat denim with Mother's Mag or similar 10-15 passes each side. For max aggression, Stroppy Stuff on Bass or Balsa Wood, probably 1 micron and I'd do 10 passes or less (by feel).

      @@homeslicesharpening thanks heaps Gabe, I do like the venev stones, get a great finish so easy off them. Nice benefit. They still cut so well. They feel different. Merry Christmas!

    Hehe I really like the Opinel and I totally agree about kitchen cutlery. The sliciest blade has already been invented, people just dont think kitchen knives are as cool as folding pocket knives or huge fixies with jimping and "blood grooves" and all that. Ive even had that conversation with people a couple of times where they keep searching for a "more slicy blade" eternally, and when I ask what they need that cutting performance for spesifically im told "oh I do alot of food prep". That has to be the definition of not seeing the forest for the trees, right?

      Yeah man! I guess I should just make a factory and start producing a proper version of this custom I made!

    That was like watching Chinese water torture on an inanimate object. If you ever sharpen it successfully, never use it again, put it in a glass display somewhere.

      Haha, I felt fairly tortured. Funny story, I resharpened it on a Venev diamond water stone and am carrying it now... Like literally this moment. Edge seems fine. Either: -BESS Number obsession is unhealthy and unhelpful OR -The Spyderco UltraFine stone is not good with steel this malleable

      I think BladeHQ still has some. And they are like $54 or something. Worth a gander perhaps.

    This is great! Thank you for the break down in information through the process. I do have some questions, because i do plan on testing this on one or more knives. During the vacuum stage and bubbling, how long am i leaving the scales in the mixture for, is there a tell tale sign of when to remove scales, or a ruff time line to follow? Also are you suggesting more than one oil is beneficial or can i make it work with boiled linseed and beeswax alone, or perhaps mineral oil? Thanks again for any information is appreciated! Thanks man - sorry for the delay in answer. I usually leave the scales in the wax until it cools fully. This is inconvenient because it hardens and must be re-melted to retrieve the scales, however being that the vacuum only operates by temperature drop, I like to make sure I have evacuated as much air from the wood grain as possible, so I leave it and re-melt it overnight and re-melt it to get them out. I am sure you could use linseed oil. Probably one of the better products to use. The diluting oil just affects the viscosity (thickness) of the final wax product. More smooth, watery textured oils will fill the handle more fully as they flow more easily, however they won't harden when cool and could be prone to coming back out if there is not enough beeswax for it to be fairly solid or pasty at room temp. Also, food grade oils like olive oil promote mold growth if not paired with an anti-mold agent like copper compounds. usually not an issue for knife handles, but would be a problem if you apply this to outdoor wooden decorations. Cheers bro. Merry Christmas.
