Out foraging again with the girls to get some elderflower florets, but also spied a bunch of honeysuckle, so plans changed slightly. This is a recipe for elderflower (and honeysuckle) wine, but do note that it is not a recipe for elderflower champagne. Will do that separately, maybe next year now. Happy brewing, cheers!

On the hunt for some wild garlic. Usually found in abundance up in the north of England, and probably a ton of other places too. Simple to identify given its shape, smell and taste, but as always if you’re unsure, don’t pick it. But my 3 and 5 year old can Identify it, so I think you should be good... Picked on 8th April, a little later than planned, but still plenty of leaves in good condition...

    I would not put in Campden tablets along with yeast, they can inhibit fermentation as well. Best to put them in a few days prior if you want, although I wouldn't at all pre-fermentation, they are only a bacteriostatic not a bacteriocidal.

    I just finished my batch of this and really enjoyed it, it turned out very clean and bright and carbonated with no issues. I read that it was bitter but honestly mine wasn't overly bitter, lovely hoppy flavour and very little sediment in the bottle. Absolute winner from mj.

    I agree about the maturation process. I made some several years ago, which I tasted upon bottling, when it was peachy pink in colour. Even with the sugar it tasted dry and not very inspiring. I left it on the shelf untouched and forgotten for ages. Then when I rediscovered it it was so much darker. Intrigued I popped the stopper and discovered I had something special after all. Like an aged, far more alcoholic sherry. Just passed a bush stuffed rosehips on the way to collect my car from its MOT, which is how I feel need up here. I've got a two large coat pockets filled with them. Time to get the jar out and get infusing.

    Is sugar a requirement? I want to make extract with the rosehips like you do with vanilla beans and vodka. Does it help or is it just for taste?

    Hey. What do you think about the idea of adding an extra 50g's of hop for the dryhopping, and using simcoe hops? meaning 50gs of citra, and 50gs of simcoe? I'm somewhat new to brewing, so i dont really know if its blasphemy against the beer gods, to do such a thing..? I just know that i absolutely love the flavor/aroma of simcoe, so i was thinking about ordering this kit, along with some simcoe, to get a very hoppy final product..

    Hello. We’ve made this wine a couple of times and it has turned out great! We’re just making more for next years drinking and we’ve hit a problem! We done exactly the same as before but after adding the lemons, raisins & sugar it has started to ferment? We added two crushed camden tables after crushing the sloes. Please advise, or HELP!     1.038 Minus 1.000 once its fermented 0.038 x 131 = 4.9% so ur hittiny around 5% range if it contunes to ferment below 1.000 , check out my home brewing videos mate? :)

      Hey - it’s up to you really. For this type of beer it’s designed to be dry hopped with a fruity/citrus style hop, so I guess if you didn’t add the hops you would miss out on some of the flavour, but honestly, I think this would still be a really tasty beer even if you didn’t add them. That was a really long way of saying “no, you can just do pouch and yeast” ha 👍🍻

      Depends how sweet (or dry) you like, but I’m currently at around 1kg rose hips to 1.2kg sugar and scale up from there 👍

      Thanks - no I don’t, I just go by volumes and weights. I think the minimum you would make is a gallon, so approx 5 litres, and scale up from there if you have a good crop!! Cheers!🍷

    Do you use the same cold water disconnect from the condenser and attach it to the plate chiller? Or do you have a separate hose for that?

      Hey - yep, I just use the same one. I have quick disconnects in both, so it’s super easy. The hosepipe type connectors, hozelock I think they are called 👍🍻

    How much table priming sugar should i use for IPA style beer in 330 ml bottles.

      I’ve never used 330ml bottles but as a guesstimate I would probably go one carb drop or a 1/4 teaspoon sugar per bottle. Might be worth checking out a batch prime calculator online too. Hope it turns out good! 👍🍻

    Hey, great video! I plan using kveik Voss on Mangrove Jack's pink grapefruit IPA and I have a question...because kveik will finish fermenting so fast (aprox. 3 days) when should I add the hops for dry hopping? I read online that it would be bad if I add them the same time with the yeast, but I also read that kveik goes down very fast in the fermenter and if i don't bottle it as soon as it stops fermenting there will be no yeast left in the bottle for secondary fermentation and carbonation...i really dont know what to do. Thanks!

      Hey man. Thanks for the comment. Honestly I wouldn’t worry too much. I would probably go for dry hops around day 4 or 5, and bottle around 7 to 10. Kveik is supposed to settle down in the fermenter pretty quick, but have never had any issue with carbonation in secondary when bottling within two weeks. I tend to leave my bottles a while though (they are the reserves), but tried one recently after 4 weeks and it was nicely carbed. 🍻

    Hi mate. A top tip for the bladder containing the juice.. fit the neck of the bladder through one of the pre-cut carry handles on the box. That'll hold the neck of the bladder and help save any waste 👍👍

      @@8pibrewing867 Darks tip is legit, cause those bags are a pain in the ass to deal with. Which is why I am glad to actually have wine grapes and make wine from grapes instead of making wine from kits. Though i do still like to make a kit from time to time.

      Yep, it’s a good tip. Recently I’ve just taken the bag out and then lowered it back into the box whilst holding the cap up and then popping it off whilst the bag is secured in the box. Similar kinda thing, but that works nicely too 👍

    I'm just made my second of these. It tastes good with amber malt as the extra fermentable. Very bitter but the amber gives some sweetness and you can knock them out. You only need one yeast packet. It still rips through the wort in 3 days and you get a free sachet for something else. I bottled in PET bottles and kept them at 33c and they were rock solid after 10 hours.

    I would have left that manifold connected to one of those secondary regulators. With that 3 way, you lose the ability to cut off gas to kegs individually.

    Looks lovely. For this Christmas I've decided to make damson vodka, Bullace vodka, and sloe gin - all picked from the hedgerows nearby. Hope your vodka turns out well! Some people say not to put sugar in at the beginning, as this inhibits the osmosis of the natural fruit sugars into the alcohol, but I'm no expert. I put in just 100g of caster sugar in each, as I find it goes too bitter if I don't sweeten at the beginning. All the best

      Thanks Jim. I suppose the logic of not putting sugar at the start makes sense, that said, it’s never given me an issue doing it this way. Always more than one way to skin a cat right? 🙂 Bullace vodka sounds good, don’t seem to have any of those round my way which is a shame. Trying to get a few sloes together for a small batch myself too, but leaving it a bit late and someone’s been at them before me 😬 still got a few places to check though!     Its a traditional English IPA - the original IPA. They weren't anywhere near the hoppiness of today's New World inspired IPAs. Story is it they were over hopped so as to last the three month sail to India. Hence the intention was to have a malty beer as drank in British pubs when it arrived. Today's IPAs would still be very hoppy after just 3 months which wasn't the in thing in Victorian days.

      Hey - I wouldn’t discourage using a nice whiskey, but yes, a cheap whiskey is fine too because the flavour and mouth-feel change significantly anyway. You may miss some of the subtler notes, but if you want to get rid of cheap whiskey or want to do this as cheap as possible, then definitely go for it! Cheers!
