    Over time, with 1-2 meals a day in a 4-8 hour window, your loose skin, which is more likely fat, will keep going away. Ladies doing this have mentioned it taking many months after they reached their ideal weight, but the loose skin is gone.

      I eat once a day currently. After losing 300 lbs the amount of skin I have to remove can never go away naturally. Especially at my age nearing 50 yrs old. A little bit of help unfortunately is necessary. I wish I did not require surgery. Nobody ever wants to go under the knife.

    As a former restaurant manager seeing you handle that meat and then stick your fingers in the salt I winced big time. That is MAJOR Cross contamination! Just wiping your hands on paper towels is not sufficient. You have to wash them. Your salt now has raw beef bacteria in it.

      Please Rest assured the rest of the salt was used the same day on more beef for my friends and I. The container was then washed and sanitized in my dishwaher with built in booster.

    there are many natural tenderizers i have used on tough or cheaper meat cuts using fruits like papaya, kiwi, pineapple etc and even ginger for chicken or beef but you have to know which one to use and how much and for how long , i made tender beef jerky using papaya

    Hi Tony. Health is influenced by many things. One of them is hardening in cold water. Simply add on a short morning shower in cold water. First baby step. Then you can slowly proceed to ice bath ,sleeping outside in cold weather,hiking in the wilderness. Our western civilization with all the airconditioning and lack of physical activity is spoiled . Simply bunch of pussies. Toughen up,man

    If you are doing the "brisket bend test" like other UA-camrs, you need to cut the piece a little thicker. A quarter inch to a half inch at least. Any piece of meat will bend if you slice it as thin as you did in your video. I do like that you cooked it in 1/3 of the time and it did look like a pretty good brisket when you got done. I'll give your recipe a try on my next brisket. Thanks.

    I'm a retired nurse. A cold is a virus and I'm very doubtful that cheating for a couple of days would reduce your immune system that quickly. Haven't researched that specifically though. Inflammation will likely not help your speedy healing though for sure. Glad you're feeling better 😊

    Great video! I generally get small briskets (2-3 pounds) and make them in the oven. Would you recommend an hour per pound or so, and cook until it reaches 203?

      Thank for watching 🙂. You want to hit 203 because the connective tissue breaks down after about 195. By hitting 203 or so, you are allowing enough time to achieve the full breakdown of the tissue which will give you that tenderness that you're looking for

    Congrats on the journey! I do the same thing with chuck rolls. Spend about 3.50-4.00 per lb, slice most of it into steaks,grind the rest into hamburger. I dry brine the steaks just like you do - but just for 24 hours, then seal them into vacuum packs. Freeze anything not getting eaten this week. Drop one into the sous vide tub at 131 degrees for 24 hours, then a minute per side in hot cast iron. Add some ghee and salt on the plate. Melts in your mouth.

    Loved this and the previous one re salting the meat. I watched your utube on carnivore ice cream using ice and salt and will definitely be making that. I do miss ice cream. So you have thrown me a life line 🤣🤣🤣. You have done wonderfully well on the carnivore eating plan. It’s inspiring me to up my game as sometimes the sweet tooth takes over. Thanks again

      Just a note for you to consider. When you're making this ice cream the less butter you put the softer it is. Also try combining your ingredients before putting it on the ice to stop the butter from solidifying prior to being combined. Crispy bacon bits are a fun topping for this

    I'm convinced those old halogen ovens from the 80s/90s are better than modern air fryers. They have a fan and crisp things up quite well too. They often go higher temperature. You can often find them in garage sales or facebook market for $5-20. They are also all glass so no plastic/non-stick coating, just find a rack that fits. Also great for rendering animal fat from drippings as the fat can just drip right into the glass pot.

    You saved your life and im trying to do the exact same. Celtic salt is indeed the best and give you the magnesium you need better than others.       It is so true I did save my life but I still have a little bit of a ways to go. I had an A1C of 7.15 when I was in a coma. It is now below 5.     I discovered dry brining about a year ago and this really works. I like to eat the meat no more than a day later though, just my personal taste. I’ve also done this with hamburger patties as well and 12 hrs is about right for me in the fridge. I cook my beef almost exclusively in a cast iron skillet because it’s so easy to clean up and easy to learn how to control the temp of the skillet. I don’t cook on really high heat as it makes a total mess of the kitchen with grease flying everywhere. I find it tastes great cooking on medium high. I also do keto so I love to throw some onion slices in there with the meat as it cooks and top with blue cheese crumbles or bacon slices as well.

    You should give dry brining a try if you have not tried it yet and have a digital kitchen scale (by weight is the best for consistent results). 1% is a good start and you can adjust according to your taste. Weigh out the steak, lets say it is 300g, measure out 1% so 3g of salt and coat the whole steak evenly. Then let it dry out on a rack in the fridge uncovered for 6-24 hours (less is OK, but make sure at least 2-3 hours until the surface of the meat is completely dry), and cook as normal. Results in a much better cook, more developed crust and juicier steak. You can do it with any meat, but the percent salt will vary depending on the cut and animal.

    Tony, congrats on your success, so good to hear how much your health has improved. As someone who lost 140 pounds in my early 20s and had an abdominoplasty myself, followed by a revision a year later since he kind of botched the scarring, my only thought when you said you still wanted to lose another 80 pounds is that you should wait for the surgery until you are at your goal… it’s not something I’d want to repeat if I had to do it all again. I only mention it because you said the surgery isn’t until November so I’m hesitant to raise the issue, I know it’s a big moment for you and don’t want to rain on your enthusiasm but just wanted to share my personal experience and offer you the advice. Eighty pounds is a lot more weight to lose and more loose skin to come,which is why I would wait. Anyway, sorry for the unsolicited advice, I wish you all the best with your surgery and continued weight loss. Good luck!!

      Good advice is always appreciated. Especially from somebody who's actually gone down this road before. The thought has crossed my mind but the reason why I need to get it done sooner is I am prone to skin problems in the areas that are overlapping and it also hinders my ability to exercise in an efficient manner. My doctor has also advised me that there will be the requirement for more surgery as there our problem areas to be dealt with around the thighs and chest also. I do have a question for you though, how long did it take you to recover where you could be mobile and walk and shop and do normal lightweight everyday activities. This is actually my greatest concern. How much real downtime am I actually looking at? Your feedback would be highly valued. Thanks again for the great advice and congratulations to you too!

      @@REAL-CARNIVORE Thanks Tony, I’m glad you took my comment in the spirit I intended, I figured your doctor had probably had the same conversation but of course he’s aware of the full situation you’re dealing with regarding the skin issues (I totally understand) and other complications. As for the recovery, it’s been quite a while (25 years ago) so I can’t give you the specifics at this point, but I was in college at the time and scheduled the surgery for winter break so I would have time to recover. I was still wearing the abdominal support wrap like 5 weeks later when classes resumed. If I recall correctly, the first 2 weeks were no fun at all, thankfully I was staying with my folks during recovery and they took good care of me, so I didn’t have to do a lot of moving about for daily necessities. I believe the first postoperative check with the surgeon was about 10 days after surgery and I recall that was difficult due to still being very sensitive all along the scar. I had the full abdominoplasty so I was cut from hip to hip and then some, the scar was probably about 60% of my waist circumference so it was a lot. There were also drains left in to help with healing that were in the groin/pubic region that were also tender, and of course they reconstructed my belly button after removing all the old skin so there’s a lot of stuff healing all at once. In terms of being back to “normal” daily activity I would say it was probably close to 3 weeks before I was up and about and moving but of course still very sore and believe I wore that abdominal support wrap 6-8 weeks if memory serves… just don’t plan on doing anything too physically demanding the week after your surgery, plan for the downtime and if you’re a fast healer then maybe you’ll be back to normal before I was… I was mid 20s at the time and in pretty good shape at that point and it was still rough, so hopefully they have made a lot of progress on the surgery techniques and recovery plans in the years since so it’s not as bad for you. Sorry for the long response but wanted to give you my experience with it, as I mentioned yesterday unfortunately I had to do a revision surgery a year later and went through it all over again, so I know it’s no vacation. Regardless, I wish you well and hope you’re a better healer than I was… hopefully the years have clouded my memory on the timeline, but that’s the best I can offer at this point. Best of luck, Jim

      @@jaurouze hi Jim, thank you again for your great input. I'm glad to hear that the recovery time is not as long as I thought it would be as I will be going this one alone. I am a pretty good healer I recently got five stitches in my thumb and it healed up literally in just a few days. I know this is small potatoes compared to what I'm walking into but it's a good indication that my body is willing and ready to heal at will. The good news is I will also have the holiday season to recover so I won't have to do much until the new year. This should give me enough time as my surgery is going to happen on November 29th. I can't thank you enough for all that valuable and helpful information I will definitely arm me better for what's to come after my surgery and through the recovery process. I am 48 years old so I won't heal like a 20 year old but I'm pretty sure I'll make it through this. I think anybody who has the persistence and resilience to lose enough weight to get to this point they should have enough resilience to make it through the process. At least I would like to think this is the case🤣. Nonetheless I will be documenting everything on this channel before and after and probably for much longer even after that. I am hoping that my experience shared here on UA-cam will be able to help others who need it. Whether it be by way of motivation or by way of information.

    Yes, honey is carnivore. It is an animal product, produced by animals. That makes it carnivore. It's probably best not to eat it, though, because of the sugar content.

    Congratulations man! That is an amazing accomplishment. I am down 200 lbs since Nov 2019 myself, and lost 70 of that 200 since I started carnivore in March of this year. You are so right when you say it's a lifestyle change! You're doing great and you are an inspiration to me on my journey.

      Hey thanks a lot and that's a great achievement for you too! It's totally a lifestyle change I don't think I could ever go back. I've cheated a couple times on holidays with a few things here and there and it is a good reminder as to why this is the proper human diet

    I cheated a bunch of times on Carnivore. I'm now at a total of 100lb loss since March 10th of 2024. Yeah, it really does make you feel terrible, at the cost of good taste. I now treat junk food like "alcohol" and eating "responsibly". I mainly eat any food I want during a social setting, but 90% of the time I'm on track. People also need to realize the perfect "dietary lifestyle" doesn't exist. Even at the beginning of our species we ate stuff that probably didn't sit well, our ancestors sometimes stumbled upon high sugary fruits, berries, and even honey. They ate it (not all the time), and yeah, they probably felt dizzy, jittery, tired and passed out, but they kept moving on and living life. Some folks beat themselves up way to hard after getting off track, and it's not worth the negative energy. But good video and hope you feel better soon!       Yes Dr Poon is a metabolic doctor that has clinics in the greater Toronto area here in Canada. I am not sure where you are located but in his clinics basically he promotes a ketogenic style diet and from there I evolved into full carnivore

      That's amazing! I've now lost nearly 300 lb over the course of 30 or so months also no fruit no veggies no snacking no carbs no sweets although I will admit that a couple times a year I will have a small Indulgence. Typically Christmas birthdays that type of thing.

    Looks yummy! I'll try this for Christmas :) How much stuffing did you have left over? We typically buy around a 14 lb turkey as well.

      It was about two to three cups of stuffing left over. It is important that you drain the fat from the pork before adding the ground beef to make sure that it does not get too oily inside the bird. It's also good if you can Elevate the bird inside a pan to catch drippings. You can add heavy cream and reduce down for nice gravy

    Why not salt them, vacumn seal them, and wet age them in the fridge?

      Its a diferent process with a different outcome. The method you describe is good too but the method I show here actually dries the meat out while drawing the salt in. Reducing cook time and concentrating flavor as the volume of the meat has changed.
