I would like to share my experiences of living an outdoor lifestyle in a rural area. I am very fortunate to be involved with the fur trade in Canada for more than 39 years. Besides the fur trade, I have in the past owned and operated a tourist hunting & fishing camp, I own a sawmill, I archery moose hunt, keep honey bees and pick blueberries. Since it is January and the trapping season, my first videos will be all about trapping, but over the course of a year I hope to share many of the activities that surround day to day life in Northern Ontario.
Processing Moose Meat
Something a little different today, we are butchering a moose. Traditionally we would take the moose to a butcher but in todays world finding someone to cut the moose into steaks and hamburger is more and more difficult. The last two moose that we have harvested we have had to cut ourseleves. Moose hunting for us is a very cultural thing involving a party of hunters to harvest process and share the meat. We hunt under a tag system in Ontario and tags are awarded on points and from a quota per hunting unit. After you harvest the moose the real work begins, a moose can go close to 1,000 lbs and you have watch the temperature and hang the moose in quaters before you butcher it. You have skin and quater the moose in order to be able to cut it.

What to look for as a trapper when grading fisher pelts. The biggest problems I find with Fisher handling is not fleshing them and using the old style wide boards. Handling Wet Beaver

I show you how to clean up a beaver that I drummed after fleshing. The beaver pelt was still wet so I drummed the wet pelt which caused the sawdust to stick to the skin side. I made sure to scrap clean all the sawdust off the skin side of the beaver. If I left it on the sawdust would make the hide like sandpaper and the beaver graders do not like this.

Rough skinning a beaver using my improvised extra hand. Funny thing I started out as a clean skinner but evolved into a rough skinning. Hopefully you pick up a few tips that will help you. For sure I have skinned a few thousand beaver. I always prefer to skin beaver that have been dried.

How sharp should a fleshing knife be? I’ve heard as sharp as I can get it and I’ve heard dull. How sharp do you keep your fleshing knife?

It's by far the best marten video I've seen. I've been trapping for over 30 years in MT, ID, AK. Jim knows his stuff.
Are you using freezer paper or pink butcher paper? To get the best freezer life ie no freezer burn you should be wrapping your meat in plastic wrap and freezer paper which is shinny on one side. Freezer paper used to be waxed on one side but now it has some type of polymer coating. The way you showed in the video is not very good for keeping out freezer burn and down right bad if the paper is just pink butcher paper like I suspect it is. Eat the meat up in a month or two and you should be fine but I bet in 4 to 6 months your going to start seeing freezer burn. Wrapped in plastic and freezer paper I have had 2 year old frozen meat without any freezer burn. If your going to keep cutting your own meat look into a stuffer and 1 pound meat bags / chubs along with a bag taper for ground burger. Ground will freeze a lot better in the 1 lb chubs then zip lock bags. I've found 6 year old chubs of ground in my freezer that were still good as the day I put them in the freezer.

I get them made by Mactraps in Quebec, They have them on their website but in french only. I prefer my cable to be 12 feet long they sell them 6 feet but i get them custom made.

Most folks go overbroad with the nails, just enough to maintain the oval pattern. Too many nails cost you a lot of time.
Hi! Loved the video it was informative and easy to follow. Do you tan it after it’s done drying and if so what is your process? And if not, why? How does it stay preserved? Sorry for all the questions Im new to harvesting fur and have a fisher id like to dry using your board method but im concerned about how soft it will be after drying.
I ship them to sell after I dry them. If I hold them for any amount I store the raw dried pelt in my freezer. The pelt will turn yellow and the bugs will get into it if not in a freezer.
This year here in michigan a dozen leaches are $7.99 .....thats why im watchinh this video ,I wont pay that , or 6 bucks for crawlers. Prices have gottten crazy . I like to use the little leaches for bluegill and the big ones for smallmouth and brown trout .... Thanks for the video

So interesting that you leave flesh on mink a no-no in northern Alberta lots of fat under the saddle In my section. Good to see price is finally starting to rise
different sections of mink are handled a little different a western type mink has a heavey saddle with a lot of fat that needs to be scraped a northern type has very fine leather and little fat so better to leave the saddle on. Central type mink same deal you have to take the saddle off.
