Tasty Lazy Cooking is for all the busy people who want comforting and simple meals. I post easy recipes that take minimal clean up and are super delicious too! With all the hustle and bustle, we can all use a little more TLC :)
*EPIC* BREAKFAST BURRITO | 1 PAN | 30 MINUTE | TASTY | LAZY |
This wrap is SERIOUS BREAKFAST GOALS!!! It is so delicious, hefty and looks like it came straight from a restaurant or food truck!
You can enjoy this for breakfast, brunch, lunch, dinner, or even a snack. It makes AMAZING LEFTOVERS too. But they won't be leftovers for long ;).
To make this wrap gluten free, all you need to do is sub a gluten free wrap! Or you can even enjoy this as a breakfast bowl with some rice. YUM!!

Ingredients:
- 2 TBSP of oil (I used grape seed oil)
- 2 red peppers
- 1 pack of Italian Sausages (I used a 500g pack of Mild Johnsonville Sausages)
- 4 large eggs
- 2 large wraps (I used Casa Mendosa 10" whole wheat wraps)
- YOUR FAVOURITE CHEESES (I used a combination of Jalapeno Monterey Jack and Marble)
- Optional: Avocado
- Salt and pepper
Directions:
1. Heat a large frying pan to medium heat and add 1 TBSP of oil.
2. Slice the red peppers into thin slices
3. Once the pan is hot, add the peppers, salt and pepper to taste, and cover
4. Remove casings from the italian sausages and chop into 1/2" pieces.
5. After around 5 mins, transfer your red peppers to a plate and add the italian sausages to the hot pan and cover
6. Put your wraps on 2 separate plates
7. After 2 minutes, give the italian sausages a stir and cover again.
8. After another 2-3 minutes, check the done-nesss of the italian sausages by cutting them in half. If there's no more pink, transfer them to a plate.
9. In the same pan, add 1 TBSP of oil, add 4 eggs, and scramble. Once they are complete, transfer them to a plate.
10. Slice up as much cheese as your heart desires and add them to the center of the wraps. Leave about 1.5-2" from each end.
11. To assemble the wraps, first add a layer of red pepper, then sausages, then eggs. If you love avocado as much as I do, add it last :)
12. Carefully roll up the wraps and transfer them to the same frying pan.
13. Cover the wraps and cook them for 2-3 minutes on medium heat until the bottoms are golden brown and sealed.
14. Flip the wraps and cook for another 2-3 minute until the bottoms are golden brown.
15. DEVOUR :D

I just made it. Since the instant pot, I no longer have to stand over the stove for 3 hours! Also works with 3 cups of leftover white rice. I top with thinly sliced romaine, shiitakes, green onions, and a dash of soy on top.
Thank you for this lovely soul-satisfying recipe. I love Kato! A smart dog- he always sniffs his food before he eats it! My dog Sammy has the same, above the eye's markings. I call them St Francis thumb prints. St Francis is the protector of animals and the environment. So dogs with these markings (in my view!) get an extra blessing! I love this recipe! I topped mine with green onions and a sautéed portobello mushroom, dash of liquid aminos, a capful of apple cider vinegar, a drizzle of sesame oil and then dried pork :) SO good!
thank you for the veggie packet idea!!!! i usually would fry the veggies separately while beef is cooking in the instant pot cos I don't want them to be mushy, yet I don't like that I'd be doing another cooking and cleaning another pan lol. I'm filipino and in our house, we normally add a little can of liver spread. but on special occasion, we'd add cheese! It just makes it so rich and yummy!

You should put on some gloves, especially while grabbing cheese and giving your dog food. Very unhygienic.
I use the blunt side of a fruit knife to peel ginger skin and it really works great every time.
Why not just leave the gingers on? Btw, don't we lose the vitamins by washing the rice until the water run clean?
