Nonstick cooking spray is more nonstick than oil

I see a lot of UA-camrs who recommend that you don't use standard cooking spray, and instead use plain oil. whether that's packaged in a spray bottle but without the lecithin and silicone additives, or just straight oil smeared on a pan. I disagree. Standard cooking spray works better than oil or butter to prevent sticking, hands down. And it's great for anyone who's trying to use less fat in t...

    I've seen countless of videos showing how to cook eggs on S.S. pans but none is easier than using aerosol spray cooking oils. I know from experience. This is the only video that I've seen that talks about it. One can even fry eggs at lower heat when using spray oil. It has got to be the lecithin that bonds oil molecules to the pan surface. I often use spray oil then top with olive oil or butter to add a richer flavor.

      Yea the knobs are too easy for pets and kids to turn. I'm not too concerned since it's induction - I like radiant electric the cooktop doesn't get hot I less there's a pan on it. Plus I don't have any pets large enough to accidentally turn the knob. But it's worth mentioning for people who do until they fix it - think they were issuing a knob that you have to squeeze before turning to solve the problem.

    Classic cooking spray also uses "propellants" (usually propane, butane, etc). I'm not 100% sure how important that is either thought since a lot of these people cook on a gas range, which I'm sure also produces similar compounds (these burners aren't 100% efficient, and some can literally be hooked up to butane or propane canisters) Then again, a lot of people seem to be moving away from gas too, and not all sprays use propellants, even ones with lecithin. Kroger has a "simple truth" store brand version with is nothing but oil and lecithin. No anti-foaming agent, and no propellants, just pressure. I've heard it was the lecithin that tends to gunk up pans. Supposedly it's not just oil that's been "burnt" (partially polymerized). I guess if it were, it'd eventually fully polymerize and become a layer of seasoning. But it's also supposed to take time to build up, and it's mostly an issue with "nonstick" pans (teflon, ceramic). It doesn't come off with just soap and water, so you'd generally need to use a mild abrasive, which tends to damage nonstick coatings. So it's less an issue with lecithin being hard to remove, and more an issue with nonstick coatings being so fragile. I don't think it's an issue for tougher pans, whether cast iron, carbon steel, or stainless. Even seasoning layers are tough enough. That said, have you actually tried using butter? Butter should also have some similar compounds (phospholipids?) which should at least make it more slick than pure oil. I should probably test that myself some time... I do like a fine mist spray though, especially for my cast iron waffle maker. To reduce packaging and maybe long-term price, I recently started buying liquid sunflower lecithin and making my own cooking spray. I bought mine online but supposedly you can also find it in _health food stores,_ apparently it's sometimes taken as a supplement? In this form lecithin really is very goopy. It reminds me of molasses.

    • @Jeremyschannel1
      @Jeremyschannel1 Місяць тому

      No I actually haven't tried just butter on stainless. I usually find myself using my carbon steel for eggs anymore, and usually use either spray or butter with that. But haven't specifically tried butter with stainless. Will have to test it sometime.

      All aerosol cans have a propellant -- that's where the pressure comes from. Somewhere in my cupboard I've got a re-fillable oil atomizer that you pump up with air, but it dribbles oil all over itself, and exposure to oxygen makes oil go rancid faster anyway.

    • @MustSeto
      @MustSeto Місяць тому

      @@Vegemeister1These are advertised as propellant free and propellant isn't listed anywhere on the label (PAM's label says it contains propellants underneath its ingredients). I guess you could argue that the "air" is still a propellant. Though it's probably compressed co2 or nitrogen. I've tried a few types of refillable spray bottles. But I've found many work better when you dilute the oil with something. Even just water works, though you can also use pure grain alcohol and keep it more concentrated. Lecithin is also an emulsifier so it keeps them mixed fairly well. But once diluted like this even many normal spray bottles not intended for oil can work well, with a good spread and a fine mist. I have found they tend to spray in a ring instead of a cone though, at least if its not diluted enough. And for all I know it might damage some types of bottles.

    Well Jeremy,... It looks like everyone is advising you to do the same thing about preventing the rust which is to warm up the pan after you wash it, I'm sure not only I but the rest of your viewers place their washed and dried pan on the stove and heated up to make sure all moisture is off the pan that's generally the wisest thing to do..... But in this situation you are pointing out one of the negatives of using an induction type stove, given the way it heats pans. So, I might suggest this... Clean off the rust with like a toothbrush and get but you can out of their... Then in that area or some preferably high temperature oil like grape seed or preferably avocado oil you'll just need a splash you won't need much just get it into the area between the pan and the handle, and then place it in the oven at a temperature that is near the smoke point of the oil you use, the idea here is to season those areas you can't get to once they get season this should curtail the rust that you see you may have to do this a few times. But I think you get the idea of what to do. As with any seasoning, it is a process and it takes time. in this case... With the state of your current pan I would strip it down and remove the rest and redo the seasoning process using your oven and preferably avocado oil that has a smoke point of about 521°, or grapeseed oil which is about 420° of discussion that I never see being brought up and that is low temperature oils and seasoning... Let's say an oil that has a smoke point of 350 to 375° have you ever thought about what happens to the seasoning if you were to use higher temperatures when cooking??? let's say something like pancakes or frying something given the lower smoke point even though it is carbonized on the pan and is considered seasoning or seasoned... Wouldn't you think that a lot of that lower temperature seasoning would burn off? anyways,... there's a tidbit of my life's experiences in comment. Using oils with higher smoke points seem to be much more durable. Now as far as breaking the budget I see you shop at all these at least that's where I get that brand of nonstick spray and I use it also.... But purchasing a bottle of grape seed oil shouldn't damage the budget, and also grape seed oil is a very good oil to use when cooking versus canola oil, or vegetable oil both of those are slimy greasy and both have a non-enticing taste. 🙂 Anyways the group here is pointing you in the right direction and since you chose an induction oven which is just fine, As with every cooking utensil or method of cooking and pans all have their pluses and minuses that you have to find workarounds. To get the best performance out of them. P.S. I have some glass lids for pans I absolutely love them but.. They have a proclivity or characteristic about them after being washed in the middle ring that surrounds the glass... Water is in that hidden area... And I will heat them up on the gas stove and if you tilt the lid you will see water dripping out of them is actually quite interesting because you get the lid hot enough and as the water drips to the bottom edge of the tilted lid it vaporizes... And splashes Ha ha ha it makes for some entertainment for the cook.... Who is so easily entertained by such phenomena 🙂

    No way to dry the crevice? My guy just put it back on the stove. That's how you are supposed to dry all cast iron and carbon steel after you are done washing them.

    • @Jeremyschannel1
      @Jeremyschannel1 4 місяці тому

      The stove doesn't really heat the crevice very well since it's induction - it heats only the bottom of the pan, I'd have to have it on for quite a while for heat to travel up the side that far. And my other carbon steel pan doesn't have a crevice that holds water. So it's definitely a flaw that didn't need to exist.

      I honestly rarely use the oven and the stovetop at the same time, but I could see that happening. One gripe I have developed with the stovetop is that if the glass top itself gets too hot the burners will turn their heat down to low. It's only ever an issue for me when I'm making something like corn tortillas from scratch, where you want high heat for an extended period of time. But if you have the oven on high heat and also have a hot pan on the cooktop I could see how it might turn itself to low quicker.

I also personally haven't had dieting issues eating 2 tbsp oil with my eggs in the morning since I don't eat snacks which is truly where 90% of peoples excess calories are coming from in my experience. We bought a pricy model, about $2,000, at Costco in July. It worked really well in the first 2+ months. Then one day, I heard a loud pop while heating water in a pot. Something on the control board broke. We tried to contact Samsung for repair just right upon the 3-month warranty. Then we talked to Costco about the possibility of exchange or other options. It's been over 1 month and the range hasn't been fully repaired yet. A sad Thanksgiving without a functioning induction range. PS. A technician came and changed the control board and the power distribution board (?) more than a week ago, but he failed to recover the range due to a missing screw for the burner connection. Six weeks passed and we are still waiting for repair.

    • @Jeremyschannel1
      @Jeremyschannel1 10 місяців тому

      That's a shame. I did hear that in some areas Samsung appliances are difficult to get serviced. I had no way to know whether that's true here in central Pennsylvania so just went with it and hoped I didn't end up with a lemon. Hope you get yours fixed, esp since it's the higher end model. Where are you located, out of curiosity? (Roughly - we don't need your address!)

      @@markolo25 yea there still really aren't many available! Especially in this price range. I really do like the Samsung, though at times I'm envious of those larger cooktops with the flex zone. If I had more money I might have upgraded to a 36" induction cooktop with flex zone plus a wall oven. But had to go with the budget option and I. Really happy with it so far.

    I bought the NE63B8611SG range and i have the emporia electricity monitoring system in my house, which monitors power use at the breakers. It says that the stove uses 1.2amps continuously even when off. This is a lot of power! This equates to $31.5 per month or $378 dollars a year @0.15 $/kwh doing nothing. While i do like the stove its a lot to pay when not in use and its only powering thr clock and wifi. Turning off wifi didnt change much. Im trying to determine if this is typical or my stove is defective.

    • @Jeremyschannel1
      @Jeremyschannel1 11 місяців тому

      Really it's drawing an amp just to have the clock face turned on? Wonder what my old electric ranger drew when it was off? That's interesting.

    • @Jeremyschannel1
      @Jeremyschannel1 11 місяців тому

      Hmm a Google search suggests that so e of those power monitoring systems might not be super accurate at low draw levels, esp on 220. This forum suggests that you switch off all the breakers except the oven and go watch for your meter to spin instead of trusting the monitoring devices: forums.whirlpool.net.au/archive/1885411

    • @mtbphil168
      @mtbphil168 11 місяців тому

      @@Jeremyschannel1 I was skeptical as well so I used a clamp on handheld current meter at the back of the stove. It was accurate. I have s8nce removed the back of the stove and traced the draw to the cook top. The are 4 large gauge wires with each pair drawing 0.6 amps

    • @Jeremyschannel1
      @Jeremyschannel1 11 місяців тому

      @@mtbphil168 I still think you should turn off your breakers and watch your meter spin. The clamp on current meters are mentioned in that link I sent as also being inaccurate at low draw.

    • @Jeremyschannel1
      @Jeremyschannel1 11 місяців тому

      What do you mean by "set up correctly?" There's no setup, just put an induction compatible pan on and turn it on. When there's no pan it gives you a little icon where it usually shows the power level (1 through 9). The icon looks like a pot over a burner, it's kind of neat. I can post a quick reel about it later. Then eventually it'll just turn off the burner and give you a " - " if I'm remembering correctly.

    Thank you Jeremy! I have a question: How well does this non-convection oven cook roasts? I've never used the convection fan on my gas stove(which I will get rid of) because of fan noise, yet my roasts always turn out well. I mean, do you wish you had the next better model(convection), or does the oven you now have perform well enough that you're happy with it?
