My goal is to make aesthetically pleasing and informative coffee content.
Making good coffee is hard.
The first part in an espresso series I have been working on for the past few months.
This is an introduction into espresso, outlining the brief history of the evolution of the three waves of coffee, the unique attributes associated with espresso and how it differs when compared to other coffee preparation methods.
This will be a several part series detailing the importance of coffee beans, the science and importance of water for espresso, the role of the espresso machine and the importance of the grinder.
In addition to this I will outline the fundamentals of espresso preparation techniques, as well as the science behind the extraction process and how you can influence this by modulating the various parameters at your disposal as a barista.

Would you get the micra instead or are you still happy with the mini?
I'm still happy with the Mini. If the Micra had been out when I bought the mini it would have been tricky to pick between the two. Aesthetically I prefer the proportions of the Mini but it's hard to ignore how capable the Micra is and it is much more affordable. Really quite a personal decision that I don't think there is a wrong answer to, both will make great coffee.

I read people’s comments that the LM LM is not good because one cannot do flow profiling. Is that really such a big deal or is flow profiling over rated?
In my mind flow profiling is mainly important when it comes to pre-infusion. I don't really think it adds much during the actual extraction phase. Whether or not it is a big deal for you probably depends on the type of beans you enjoy. If you prefer light roasts you will probably want a longer pre-infusion, the darker you go the less important it is. Having said that, I think the best results are obtained from a combination of flow and pressure profiling. All of this really depends how much of the rabbit hole you want to go down; the LMLM makes excellent espresso, but it's just less customisable and flexible than something like a Decent DE1.
I deciding between a Micra and a Bianca V3... I think the Micra may be best for someone like me who just wants a consistently good coffee. I am not as interested in messing with flow and all that stuff.

I have it w the SSP Red burrs,, It's PERFECT.. The machine and burrs, that is.. MY ONLY COMPLAINT... The cord at the rear protrudes a little bit much, so it can't get as close to the wall as possible.. Maybe if it was angled downward or had a flat plug

Thanks for a great video. For a novice, you offered more valuable perspectives than most self-proclaimed experts on UA-cam, and with more sincerity/credibility. First class production quality too - I struggled to find a video that showed all the important angles of the LMLM in an uncluttered environment with neutral lighting. I had decision paralysis trying to choose between black and white... after watching this, definitely white.
As a barista and video lover and someone who have watched tons of reviews, man...this is just freaking' amazing!
Did you season the burrs? If so how many kgs of beans did it take to season?
I'm personally not sold on the idea of seasoning burrs, so for my grinder I didn't bother.
@@SimonDrysdale did you notice any changes in consistency/taste during your initial month or so of using the grinder? Or was it just great out of the box?

Love the video - exactly the setup I was looking at! Good to see info about the app and how it integrates into your work flow. One question though… If plumbed in, does the premonition compare well to the GS3s flow control? Or is the versatility of flow control something very different?
Pardon my second comment! I was set on the P64 until I saw, just today the existence of their new 01 grinder. I found the P100 to be lacking in the elegant esthetics of the P64 so had no interest. This 01, on the other hand seems like it has several substantial innovations. I like that it has eliminated the forks. The new design has a magnetic holder for a mobile portafilter. It has a button on the front that can aid in knocking out any remaining fines. It also incorporates some antistatic component so no RDT is necessary. The motor spins up after it detects the grind is finished to further motivate fines into surrendering into the exit. The motor is a monstrous 1300W and can do a grind with its much larger burrs in about a third the time or less. No forks also means no mishaps of a portafilter vibrating out and falling, scratching that aluminum. The size is truly a beast and it weights twice as much as the P64. It's also about $800 more than the P64. It's more than I and most home users need unless you have a family the size of a sports squad. The style design is also less than enchanting. But now I am torn as to which one to order, though both are magnificent machines. Do you have any thought on this new offering or feel intrigued to make a change?
Thank you for your kind comment yesterday, I do read them all and they mean a lot. I haven't used the 01 so I can't really comment on that grinder specifically. However the innovations seem quite interesting, I like the idea behind the magnetic grinder stand thing; but I'd have to use it to know for sure that it wasn't a gimmick or something that is easily knocked over. I'm sure they put strong magnets on it. Provided it's stable it's a good idea. Having said that - option-O said that they have changed the fork design on the P64 since I bought mine and there's no longer a risk of the portafilter holder vibrating out. It doesn't happen on mine all that often but I just stand there for the short time it takes to grind to avoid it. The choice between the 01 and the p64 is more of a matter of if you want the 'absolute best' and are willing to pay significantly more for it, or if you're happy with what is already an excellent grinder in the P64. You could probably argue both are overkill for the home user but I'd say the p64 is probably more suitable for a hobbyist home user. The other thing is that 01 looks massive; so I would factor that into your decision and the distinction between 64mm burs and 102 I don't think is very large when. it comes to the actual taste in the cup; although I've never tested burrs that large so I can't be certain on that. Regarding your question on colour, it's obviously personal and a taste thing but I am clumsy and always scratch / ding things despite my best efforts, and I think that would show up more on the black (as would the fingerprints); and as it happens I prefer silver, so I'd always buy the silver one. Best of luck deciding, I don't you can really choose wrong either way; they'll both be great.
Incredible review, content and execution! I just ordered my P64 in black. I saw it first on the real sprometheus channel and was enchanted by the quality, design and esthetics. Im having second thoughts about the black vs silver, though. I believe the black will show scratches much more prominently as well as collected static fines. Did you choose your silver version for esthetic reasons or wear concerns, or perhaps both. Please continue to create more content. Wonderful work.

I came back to watch this video, I have never really considered getting this scale before but because it looks as though La Marzocco are about to update their software to add brew by weight to their App and machines the Lunar could be a very good addition to my Linea Mini to take advantage of the updated feature.

Just curious if you thought about the Olympia Cremina lever? Sadly for me, I was getting my Delonghi Dedica in 2019 repaired and it happened to be at Cerinis in the Bronx. BTW Arthur Ave in the Bronx up near fordham is a fantastic mini Little Italy. Very very cool. Anyway Cerini is a main distributor of Olympia machines. And naturally they offered me an espresso from a Cremina. I pulled the shit and it was the single greatest coffee moment of my life. Like drinking anWriss beer in the Black Forest. The heavens shone down upon me and the angels started singing. I am waiting to be able To afford a Cremina. It seems like you have the same experience with your La Marzocca. Very nice video.

Thank you, that's very kind. The animated drawings were just made in after effects, but you could also replicate them in other programmes like motion or fusion.
Did you have to pay for any extra tax to get it deliverd in the uk?
I checked and I can't remember / find any record of paying any additional taxes to the UK but it looks like if you buy new from Option-O then there are extra taxes to pay.
This is a very well made video. The measured commentary is great; some people just try to say too much, too quickly. It's obvious that you are a meticulous person: the sound, the lighting, the production and editing are first rate. The LMLM seems to be a near perfect home espresso machine. Excellently made, like the lagom you made me buy :).
Now that there is the Micra, the Mini should offer volumetric dosing and flow control (let's say at least a version next to it) without touching its price. Eventually, a little more electronics with pressure management by an application, but that's not the most important.
What is youre take on the df83 in comparison to p64?
