Stromboli Meal in a Jar Recipe | Homemade Pizza Dough | Freeze Dried Ingredients | Shelf-Stable Food
Mama Mia! I did it! I've created an absolutely delicious, restaurant-worthy stromboli recipe as a meal in a jar with a shelf-stable crust and freeze dried filling ingredients. Yay! Stromboli is like a giant pizza roll. You could also make this into a regular pizza or a calzone (a folded pizza). The crust is based on my artisan bread recipe. It's a yeasted dough, so be sure to check your expiration date on your yeast before making this. But WOW. You won't believe how fantastic it is! I'm so excited to share it with you today. Stromboli
jar #1 the filling
1/2 cup sausage crumbles, pulsed in the blender
1/4 cup ground beef, pulsed in the blender
1/4 cup mushrooms
1/4 cup bell peppers
2 Tbsp sliced onions
in a snack baggie: 1/4 cup tomato sauce
in a sandwich baggie: 1 cup mozzarella plus 2 Tbsp parmesan
oxygen absorber
jar #2 the pizza dough
1/2 Tbsp sugar
1 tsp kosher salt
1 2/3 cup AP flour
1 rounded teaspoon active dry yeast (make sure you have checked your expiration date on this -- use by that date)

To Prepare:
Start with the crust. Into a medium sized bowl, empty the contents of the jar and stir to combine. Add just shy of 3/4 cup warm water. Stir well to incorporate all the dry ingredients. Add more water a teaspoon at a time if needed. Dough should be slightly tacky and pull away from the sides of the bowl when stirred. Cover and let rise for 2 hours or until at least doubled in size. Meanwhile, refresh your filling ingredients.
Get out 2 bowls for the cheese and the pizza sauce. Empty the contents of the cheese baggie into one of the bowls and add about 5 Tbsp water. Stir very well and completely coat the cheese in water. Cover and let refresh in the fridge. Stir once or twice while the dough is rising. Empty the snack baggie tomato sauce powder into the other bowl. Add about 3/4 cup hot water and stir well. The sauce should be about the thickness of ketchup. Add more water if necessary, or more sauce powder if it's too thin. Cover and refrigerate. To the jar with the meat and veggie filling, add about 1/2 cup warm water and stir well. You want to make sure there's sufficient water to hydrate all the ingredients, so add more water if necessary. Refrigerate until dough is ready to fill.
Preheat oven to 400 F. After 2 hours of rising, turn out dough onto a floured surface. Flour your hands and flour the dough. Fold the dough a couple times then knead 10 times. You're wanting to incorporate the extra flour into the dough so we can roll it out without it sticking to the counter or to the rolling pin. After kneading, cover and let rest for 5 mins while the gluten relaxes. Then roll out the dough into a rectangle shape, about 10" x 14". Melt a tablespoon of butter (or use olive oil) and brush the dough lengthwise down the middle to create a "fat barrier" to keep the crust from getting soggy from the filling. See video. Sprinkle with Italian seasoning if desired. Top with half the mozzarella, some shelf-stable pepperoni, the meat and veg mixture, and then finally the last half of the mozzarella, being sure to leave a border around the outside edge. Stretch the dough to cover the filling and tuck it in before rolling the dough into a long rope. Tuck in your sides to prevent leakage during baking. Transfer to a parchment-lined baking sheet (or onto a preheated baking stone) and bake for 15-18 mins. Let rest for 5 mins before slicing. Heat up the tomato sauce and place in a bowl; use as a dipping sauce.

    Great recipe! When I make pizza dough, I add garlic powder and pepper, I think this dough would make grisinni for soups and salads.

      Thank you!! Your additions sound yummy! My dad was the pizza chef at our house when I was growing up, and I can remember him hovering over the dough in the kitchen. He tried the "toss in the air" method for stretching the dough -- without much success 🤣😅 He had gotten the recipe from a friend who had worked at Pizza Inn. Do you remember that place?? It was popular in Dallas in the '70's. Happy memories. My recipe has simpler ingredients but it's similar. I had never tried stromboli until I was an adult... but I had my fair share of pizza rolls, so maybe that counts! Lol

    I sat down with my sausage and gravy biscuit, pulled up your channel to watch while I ate and you're making sausage gravy! When I made your quiche recipe for a test run I had just a few FD mushrooms left so I threw those in too and it was so good. Definitely need to try the eggs with potatoes and refried beans. I love refried beans.

      Thank you!! Yes, we did all 4 share a room. We were in 1864 on deck 12. In fact, we chose our cruise date based on when that particular room was available. If you'll watch my other cruise video - "Mariner of the Seas: what we loved about our cruise" - I show our room in there. It was ideal because it's bigger and is split into 2 sections, divided by a huge TV wall (that swivels). Our daughters slept in the living room area. It was perfect. It's one of those "panoramic ocean view rooms" but it's much bigger than all the other rooms in that category. It has 5 floor-to-ceiling windows! There's only 2 rooms like it on the ship. 1864 and its "mirror" room on the other side of the ship. It's on the curve where we could look out our windows and see both out the side and the front of the ship. You can look it up on Royal Caribbean's Mariner website. The deck plans will show where 1864 is and you can see how big it is compared to the ones near it. It's the same price as they are, so we really felt blessed to have it. I'm sure they have other rooms that fit 4 adults, but that one was ideal for our needs, without having to pay for a suite. I've heard of people just getting 2 interior rooms side by side, and it costs about the same as 1 panoramic ocean view. That way you get 2 bathrooms. My kids probably would have preferred that because they wouldn't have to listen to us snore 😂But we preferred the gorgeous views, and we were paying, so there. Lol!     Apologies, but one more challenge. FMF - Fresh Milled Flour. Have you tried (not likely) fresh milled whole grain flour? Probably not (yet). If one were to take your basic recipe and create it with an FMF for max nutrition and "can" it in a vacuum sealed jar would we come out with both a better tasting and more nutritious version of what you have presented here? Just a thought.

    I am relatively new to creating Meals In A Jar* (*MIAJ). However, I do have a few $$$ worth of Thrive Life items. I mostly started with pantry cans (I have recently started buying #10 cans), as I am a single dude in the mountains, I have a few neighbors that I am concerned for if SHTF. I like the idea of four ample servings per jar regardless. It seems as if most, if not all, of your recipes are written as "one jar at a time". I would like to minimize any perceived waste by only opening up the correct size can. I am relatively new to your channel and I am wondering if you could address this in a future video. That is to say, aside from the $$ per serving, what would be the most economical can size for the maximum number of MIAJ? I know, it's a lot to consider. But I don't have a family, per se. I am rural and have a few neighbors. Basically, I want to know what might be the best bang for the buck, per jar, or the can, so-to-speak. I will continue to research your free info and consider your e-book (but it is getting late and I am getting a bit loopy). Thank you for all of your efforts to inform us of your progress.

      P.S. I have a relatively inexpensive vacuum sealer for my Ball/Mason jars. I won't be buying any oxygen absorbers. Not that this is relative to most folks but I thought I would throw that in here as a strong suggestion (right or wrong).

Okay, I suggest you try the recipe before you make an assembly line of jars. Just in case you don't like it or you think it needs to be tweaked to fit your tastes. I say this a lot in my videos -- they are like a template. Try it first, then customize it to fit your preferences. Everyone's taste is different. Once you've perfected it, then you could definitely assemble 3 or 4 (or however many you like) at a time. You might have to do some math to figure out how many cans you'll need to make that number of jars. As far as waste goes, there shouldn't be any. Once you open a can, it's good for a year. Just try to use it up within that time frame. Or vacuum seal the leftovers in mason jars and you'll have even longer. To save $, I usually buy the monthly specials packs if I like all the foods included because they're all 25% off, and I definitely buy the #10 size when they're on special. That's the most economical way to go per serving. I don't think I've ever thrown away any TL food. If I don't use it in one recipe, I'll use it in another. The Black Friday Sale is coming up next month. Whoever your Consultant is should be letting you know about sales, etc. That's a good time to save some money for sure. And make sure you're using the monthly delivery service to get free shipping, which is usually 12%. Hope that helps!

    A few things. Thrive Life doesn't always have all the ingredients in stock. I have not yet purchased any fd pinto beans, No Biggie, I do have black beans, kidney beans and refried beans. I may also order some of The Fresh Chile Company's fd Hatch (NM) chile for this recipe. However, my questions relate to how many jars, minimizing "waste" for the various cans can I make? Pantry cans v #10 cans - I would have to open so many cans for this recipe but I am a single man, I can't eat everything all at once. I am specifically speaking of the leftovers in the cans after assembly of the MIAJ*. I may not be making myself clear but there seems to be unequal servings per container in this mix (as with most mixes). If I only want to open one each of each of the TL ingredients, how many MIAJ* can I make and what can I do with the leftover portions from each can? I suppose that these are reasonable questions for each of the MIAJ* recipes. * MIAJ = Meal In A Jar TYIA - Rojer

      Hey, Rojer! Thanks for the comments. I'll try to address each of your questions. Firstly, yes... Thrive doesn't always have all the ingredients in stock. Sometimes they sell out and sometimes they're discontinued due to lack of sales. Thrive works with farmers from "seed to shelf" meaning, they only purchase produce from farmers who agree to grow according to their standards with non-GMO seeds. So the cans of instant beans you see for sale on their website have been months and months if not years of planning and a series of inspections before being offered to the public. And it depends on the growing season for each of the items as well. Thrive has to balance having a good stock of food available for customers with not wanting food to sit on their shelves too long. If we say our food has a 25-year shelf life from manufacture date, then we would prefer it not to sit on our warehouse shelves for 3 of those years. That's a difficult balance and results in sometimes being out of stock. Secondly, the cans of food are good for an entire year after you open them. And even that shelf life can be extended if you re-seal the leftovers in mason jars using a vacuum sealer. My channel has more than 100 recipes for meals in jars and even more combining freeze dried with fresh. If you decide to open your cans, I bet you could find enough recipes to use up the remainder of the can within that year just from my channel alone. Once you create a meal in a jar, add a fresh O2 absorber, you just extended your shelf life again. I always recommend trying my recipes first to see if you even like them, making adjustments with seasonings, etc., then doing an assembly line process to make 3-4 or more at a time. Each recipe will be different as far as how many jars you can make with each ingredient. You'll just need to do some math and plan on having some leftovers to deal with. That's when re-sealing in mason jars with a vacuum sealer comes in handy. These are very reasonable questions and I'm glad you asked.     I love this! I didn't think of putting almonds on it. Just got a big bag of smoked almonds. I've made a similar recipe and substituted freeze-dried pulled pork for the chicken. That was PDG (Pretty Darn Good) too!

    Yum, yum, YUM! This sounds deeeeeelish! 🙌😋 I've also found various flavors of shelf-stable tortellinis randomly at Big Lots (hit and miss, but good deals). For me, I see the butternut squash in a creamy version and the zucchini in the broth-y version. Our temperatures are starting to dip and this will be a ** perfect ** addition to my pantry options.     I made something similar to this a couple weeks ago, I need to use up some Red Pepper/Tomato soup I got from Costco. Used dried tortellini with ricotta and spinach, had some left over rotisserie chicken, some FD veggies and fresh that needed to be used, added garbanzo beans. Took to work for lunch with crusty garlic-parmesan baguettes (to dunk in the broth). Put the soup in pints, heated in the microwave, topped with extra parmesan, was awesome. I use some short cuts for my lunches and it keeps my rotation of my pantry and refrigerator, thank you for this so I can add to the pantry! Enjoy food diversity! ❤

      @adsrentals that sounds sooo good! I can remember my mom making delicious soup out of "scraps" from the fridge. She'd throw in random veggies and whatever meats need to be used. Her broths were always tasty because of good seasonings and flavor combinations.😊 Sounds like you could make just about anything with your stash and have it turn out great!!

      @@freezedriedfoodie My mom was a farm girl...basic staples, my dad was a WW2 vet who loved the European flavors. Once a month he would cook something to expose our pallets to different cuisines. He would say, don't eat with your eyes...use your senses to experience the food. I love seafood but could not get past anything that contained liver! Garlic became my go to!
