Let's Can! Lemony Eggplant Caponata
Thanks to the extended warm weather we've been having, my garden gave me enough eggplants and tomatoes to make a batch of lemony eggplant caponata. We love this stuff! In particular we like to use it as a pasta sauce. The recipe is from one of my Ball canning books and is such a winner!

With the upcoming tariffs next year we're going to need to save every penny possible because prices are just going to go up
I think it's always wise to be prepared for hard times. People get sick, lose jobs, etc... and it's good to have a stocked pantry for those times as well as larger scale problems.
I use a hack to debone that is just putting the whole chicken in a ziplock bag and then massage firmly. Pull the meat out and dump the rest in the pot for broth. I like this on my shelves as well, tacos in a jiffy!
So interesting! I'm assuming it's more of a shredded chicken texture doing it that way? It would definitely keep your hands cleaner which is a nice bonus.

I haven't used angel hair in a baked pasta. I would assume it would work fine, but maybe undercook even more. That super fine pasta probably finishes cooking more quickly than a spaghetti would.

I don't like the stuff they put on the chickens, my husband just eats the thighs and legs. I won't even give to my dog or cat. Too much sodium. He came home with 9 plus others for friends. I cut off the chicken and put in the freezer. I do just what you are doing and making soup and it was so good. Canning it might be a good idea.
I think doing what ever works for you is best! Personally, I just find it more quickly accessible for me in canned form. The canned soup in particular is a blessing when I'm under the weather and don't want to cook.
I agree canning it makes it so easy when in a hurry or too busy to cook. I just found you and I thank you for sharing. I look forward to seeing more good things. I am 82 and a couple of years ago I canned ground meat, chicken and sirloin meat. I really don't like the texture of the meat, but nice for when in a hurry. Thank you.

Officially, the USDA says 12-18 months. I think I read once that is the length of time Ball says the seals on their lids are guaranteed to last.

I love chicken on my shelves! I think it's my favorite thing we have canned so far. Although, we canned pork butt, and I made pulled pork sandwiches the other day, and it was great. I am disabled with Fibro and arthritis. There are times I am so grateful that I can open something and have supper really quick and easy. Only on our 3rd year canning, so still learning.
It really is fantastic to have "fast food" on the pantry shelves. I have so many food sensitivities that our food has to be mostly from scratch and this helps tremendously on days where you just don't feel up to cooking. Did you can the pork butt plain? I've been wanting to try the roast pork in spicy broth from The All New Ball Book of Canning and Preserving. I believe it calls for pork butt.
Yes, 2e canned the pork plain to leave options for how we use it. We like spicy foods though, so I'm guessing the spicy broth would be wonderful.

Does the chicken in the jars come out a little mushy after being cooked, basically, twice. I’ve never canned the rotisserie chicken. I’ve always broke it down and portioned it into freezer bags for meals. I have canned the broth from the bone’s though. Good video.
I wondered the same thing before I tried it for the first time. Personally, I don't find it to be mushy at all. I've broken it down for the freezer before too. I'm really bad about deciding night of what we're going to have for dinner and I find with that aspect of my personality, the canned chicken works a bit better for me.
I prefer canned chicken, but I raw-pack it. That way, it is just like store-canned chicken and it doesn’t take up freezer space. I love “ugly” chicken salad. (Home-canned chicken is notoriously ugly…lol.)
I do the same thing, only I put the bones in a crockpot to cook 8-10 hour on low. So easy , you don’t have to watch it.
Sometimes I do a longer cook on my broth. On this day I needed it quickly, so I just followed the two hour instructions from Ball. It's probably not quite as nutrient dense, but is still really tasty.
Onions fumes search out the water. If you put a lukewarm glass of water next to the cutting board you wont tear up.

I freeze the carcass, veggie scraps (onion tops, celery scraps et ) throw it in my roaster, and 48 hours later, gorgeous broth.
I have probably six carcasses in my freezer at the moment!

Those $5 chickens were a lifesaver after a large costco trip. No one wants to cook after spending 2 hours shopping, unloading your car and then putting it all away. Its smart to have a quick meal ready for your customers

I love meals in a jar! There are a few I haven't made that I still want to try, but the ones I have done are absolute favs.
Put onions in water for few minutes. It helps. Friend of mine told me about it n I tried it. It works

Oops, I even forgot to add links for the recipes! I went back and added links for my canning tools to the rotisserie chicken video. Rocket City is Huntsville, Alabama. I live in that general area. The Saturn 5 rockets were developed here and we have a big NASA presence as well as Blue Origin.
Yes, buying the $5 rotisserie chickens from Sam's is the best deal! Im wanting to try this soon! I usually just buy 4, 1 to eat fresh, 3 for the freezer. I take them out of the package, put them in freezer bags. I take them out and thaw in the fridge as needed. I can fit one in my large crock pot with little water and get it warmed thru without drying out.
That's a fantastic idea! It never occurred to me to freeze them whole. I'm terrible about deciding what's for dinner at the last minute, so I'd have to improve on that front if I wanted to thaw a whole chicken.
If you're able to see well enough to cut the onions without your glasses, you might try wearing swim goggles. I have a pair in the kitchen just for that purpose.
I've worried that things might be too blurry without my glasses, but I may have to give that a try!
Why do you prefer to use coconut sugar over regular sugar? And I've never heard of using acv in apple butter but now I want to try it!
Cane sugar is really inflammatory for me and makes my joints hurt if I have too much. I made apple butter a few years ago, I think from the Ball canning book. It didn't have the vinegar and just tasted like heavily spiced applesauce to me. Then I saw a video from Bri from Scratch's channel where she added the acv. I went investigating after that and it turned out the apple butters I liked included vinegar in the ingredients. The National Center for Home Food Preservation has a recipe that includes vinegar if your interested. nchfp.uga.edu/how/can/canning-fruits-and-fruit-products/apple-butter/
There's almost 4 liters in a gallon, and I'm in western Canada. We pay $6.50 or so for ONE LITER of whipping cream. Grocery prices are insane up here compared. I'm jealous!! Btw.. you are so pretty and you have great skin and such thick hair. Again.. jealous!!
Oh my goodness, you're so nice. I'm blushing!!! I've heard Canadian groceries are really expensive before. I don't know if the price you cited is USD or Canadian, but I was looking at the regular grocery store price here for the cream, where the largest container is a quart. It's $5.67 USD, which Google tells me is $7.89 in Canadian dollars. But buying it in the half gallon at Sam's Club is a savings of almost $2.50 on the same amount! As grocery prices have gone up, I find myself shopping there more frequently.

That's very kind of you. It's not super practical when I'm cooking or gardening, so it's not down often in videos.
If you only have one or two frosty nights in the forecast, you can just cover your tomatoes for the night. You would be amazed how well a blanket works. I kept my beans alive for an extra month this year by covering them on frosty nights. I got an entire extra harvest off of them.
I love that you were able to save your beans for an extra month! If I had determinate tomatoes I definitely would have covered them rather than pick, but my plants are a good 9-10 feet tall on a long trellis. I did cover my squash, bush beans, and sweet potatoes though.

Your garden is beautiful. Enjoy the nice weather while you have it Crazy weather these day, but we're ready for some rain here in CA. Usually by now we are burning wood fuel for heat, but it's been hot! I'm one of those who love Fall and Winter...Give me the cold and snow! But I'm not a gardener, not much success with plants other than geraniums...lol . My friends gave me young basil plants, babied them until they were ready to repot. Once repotted, I put outside on the patio for better sun only to discover the next day the deer ate my babies! .Now I'm nursing them back to health. We'll see...🤨

I made something very similar tonight. I had some defrosted sausage so I cooked it up with some veggies (and peppers from the garden!) and added rice. I cook the rice in the same pot, as well. I used a lot of Middle Eastern spices like sumac, cardamom, and za'atar. I love one-pot meals!! Other easy go-to's for us are tacos and stir-frys.
That sounds delicious! I spent a summer in Beirut when I was in college and love all of those Middle Eastern flavors.
