The approximately 600 farmers that deliver cherry to this washing station come from the surrounding, have between 2 and 3 Ha of land each with farms at an elevation of 2,200 m.a.s.l.
Once the cherries arrive at the Gutiti Washing Station, they are placed in water for sorting and the removal of floaters. The cherries are then placed on raised beds made of wood posts that are covered in burlap, and sun-dried for 14-20 days. During this time, the cherries are often moved to ensure an even drying. Hi Noakes, hi Alexis!
Alexis said hi!
Any suggestions for a pour over with this coffee?
My experiment at home using filtered tap water: 20g coffee to 320g water, 94c, 1 bloom 3 pours. Total brew time is around 4:30-5 mins. (yes very slow.) If it's running fast and tastes dry and bitter, double brew it, which means, pouring the coffee liquid over the coffee grounds again. You'll get a smooth and sweet coffee.
Engagement!
Steely have good suggestion. If you do use lower ppm water and not Edmonton filter tap water, you can bring down the brew time. If you are using 20g, you could do 340g water. Big bloom 70g, then water to 200g, and then water to 340g. Brew time around 3min. Hope this helps. Will be a bit more vibrant side of cup.
This was really helpful. I am struggling with a natural coffee from Brazil using a V60 pourover. The tasting notes describe chocolate, almond, cream and plum. I am only tasting black tea. It is definitely a clean cup.. Using 15 grams of coffee, 90c temp, a 2 pour with a 80 gram bloom to 225 gram(15:1). I have been adjusting grind size going from courser to finer. Med-fine seems better. Your thoughts? Thanks.
hi! I think you need to extract a bit more but not grind too fine. Maybe you can reduce your bloom to around 45-60g, and then do 2 pours. If you find there are lots of black tea still, you can split the pours into 3 pours after the bloom. Hope this helps.
Need buy q air for aeropress be good or bad for aeropress?
very good for aeropress :)
@@roguewavecoffeeco what the grind size use for aeropress
Been trying to find an easy explanation of this for a few weeks and ‘coffee coffee’ makes perfect sense to me!!!
Glad we are able to help!
Не понятно ни чего
What setting would you use for the Ode 2?
I think it would be around the 3.5 range.
And today it hit 30C!😂
Yup, but it gonna get cold soon :(
This thing of tightening it until it is "kinda tight" and then know it's calibrated, is just a sucky thing about these grinders. How tight is too tight? When the spindle or crank kinda stops moving? You could be miles off from a previous calibration and effectively lose all your settings. There has to be a better way
Unfortunately, calibrating the butt as been something like this for the longest time. Just off the burr touch, just touching, etc even with the big grinder like the EK43. I hope there is a better way :(
@@roguewavecoffeecoI now calibrate mine when I start to hear the slightest bit of touching of the burrs at the 9th click. To my mind that is the most accurate way as I struggle to gauge it on level of tightness
I’m going to place an order because of this video. Thank you form Arizona !
Thank you so much!
How’s this compare to Lagom mini? Taste and operation wise? I love commandante
We have not test them side by side, but the grind quality should be comparable while the taste it produce can be different due to different burr. From my recollection, the moonshine give more body and the A5 burr give slightly more clarity. Operation wise, we like the autostop and magnetic catch cup, easier to clean, and doens't have to be plug in . Lagom mini is easier to adjust the grind size due to the top adjustment.
Thank you!!
I tired to order that whale filter holder but it was out of stock, now its just sitting there mocking me :D
It actually unfortunately.... the company decided to discontinued it too :(
Thxs a lot for this introducing video. I bought the last one with no bags from you two weeks ago, and finally ready to brew with the Teshome ❤❤❤
Thank you very much! Enjoy!
Update to my complaints about the new Femobook A4 I purchased directly from Femobook.. From a UA-cam post I made here about how unhappy I have been with my new Femobook A4, Ply at Rogue Wave Coffee in Canada jumped in and offered to assist. I wasn't getting anywhere with Femobook themselves, which was a bit of a pisser given I purchased the A4 directly from them. But Ply offered to send me a new A5 to try out and then return, shipping costs born by them, the A4, the A5 or both grinders back to him if the A5 wasn't a big improvement for espresso flavor & texture. The difference between my A4 and the new A5 was night/day. The A5, even though Femobook states its a grinder for pour-over, is providing very good flavor profile & separation of flavors with good texture. So, the A4, which I truly believe had defective burrs, was sent to Ply apart of their return offer. They are roasters also, so I added 1Kg of their medium-light roasted organic Daterra Full Bloom Natural beans: roguewavecoffee.ca/products/bra ... -natural-1 and enjoying the big hazelnut, stone fruit, caramel and creaminess of these beans. Ply also provided a few sample bags of other beans...all at no cost to me. I can't sing the praises of Ply and Rogue Wave Coffee loud enough. If you're thinking of purchasing a Femobook grinder, I can unequivocally say, based upon my experiences, you should NOT purchase directly from Femobook but source the grinder from Rogue Wave Coffee instead.
What grind setting range would you recommend for a K-Plus?
Around 6-8, if it is this coffee, I would say around 6.2-6.5
This looks cool... (oh, I didn't mean that initially - eye roll) My first project for my new Chemex. I don't have all the fancy utensils, but I'll get there : )
Have fun!
The Washed Anerobic from Colombia you guys have right now is amazing, reminds me of the specialty coffee I had in Japan.
Thank you very much! Very happy to hear :)
Double brewing is an interesting idea 🤔
You should try it :)
@@roguewavecoffeeco I will :)
Wow, just got my Origami brewer from you! Going to order this coffee too 😋
Enjoy the Origami!
How would this work with a french press?
I am actually not too sure for double brewing with french press. I think if you would like to do French Press iced coffee, you can do a 1:10 or 1:8 brew, for longer like 6 minutes and then pour it over ice might be a good alternative method.
For femobook a5, what grind size do you recommend?
For this recipe, we used 1.7 for the Brazil. We find that for double brew we are between 1.7-2.0.
your table had me sweating lol
very nice of you to call that a table haha :D
Going to try this today! Yum! ☕
☺
So it’s externally rotated, but the calibration process is still extremely clunky and hard to explain. Great.
It a bit hard to explain, but once you do it once or twice its become quite easy.
How is the femobook compared to the niche zero?
Hi! Unfortunately, we have not compare side by side. From our experience, The A5 would likely be a much better filter grinder but not as good for espresso grinder.
Awesome! I wanna buy the A5, any promotion for pre-order Ply?
Thanks! Email us :)
I purchased the A4 variant from Femobook for my travel espresso grinder and I like the overall form factor, etc. But the flavor from the burr set is just shy of terrible. I've owned and extensively used dozens of espresso grinders and have never had a burr set that resulted in such mundane flavor: Dark, medium or light roasts making no difference. I've ground about 2Kg of beans with very little flavor difference. Communicating with Femobook about this issue was...frustrating at best and without resolve.
Hey! Unfortunately, we haven't test A4 yet, only A4Z. From what I understand the A4 burr is specialized for espresso. That seems to be frustrating for sure. Thank you for sharing your experience. I wondering if they would be willing to exchange it for an A5 for you. Have you tested the A5?
@@roguewavecoffeeco Femobook wants to charge me another $300 to swap burrs & carrier! This, after I e-mailed them, within a few days of receiving my new A4, feedback on how compressed the flavor is for the A4 burr-set! The burr carrier appears to be pressed together, so no discernible way to swap burrs...
@@roguewavecoffeecoHow is the A4Z? Can they grind for espresso?
A4Z is terrible for espresso haha. Very clean and bright, but flat and muted. It produce too little fines needed for espresso.
@@roguewavecoffeeco Exactly! Which raises the question: Why is Femobook marketing/advertising/posturing the A4 as an "espresso" grinder?! A little more than light on cred.
Hey, Ply! Thanks for the great content! In your opinion, are the K-max or K-Ultra capable for Turkish grind? And If so, which settings do you recommend as a starting point?
Hey, both are capable, but they are not very fun to grind that fine haha. Around 2.5 rotation (25 clicks K Ultra)) is the starting point. Range is usually around 2-3.5 rotation (20-35 clicks K Ultra).
@@roguewavecoffeeco thanks!
More Coffee With Ply!
Cooooooooooooooooooool! 🙌
Get rid of the damn background music so we can hear the narrator without distraction. I chose to watch the video with the sound muted because of it.
Hi George, thank you for your feedback. We will keep your suggestion for consideration.
Thank you! and Tell me Please! should this knurled thumb be tightende till we hear clicks? because my k-max is aligned only before thumb start to click and Im confused :(
You can tighten the knurled thumb nut all the way, and see where it land (don't over tight). However, if the nut is lock right now at where it is then there is no issue. As long as the calibration doesn't move while grinder you are okay.
Great video. I also like to use my AeroPress for travel. One question I have is why do you stop pressing when you hear the hiss? I thought the purpose of the AeroPress was to extract as much as you can under pressure.
You stop pressing once you hear the hiss because at that point you are pushing through air and not liquid. As a side note the pressure is not doing anything to assist extraction, the purpose of the plunger is to create a vacuum inside to prevent water from leaking during the brew, and to make the drawdown faster than it would be otherwise. You could place the plunger inside right at the very edge, remove it, and let gravity do the work, but it would take much longer.
Thanks! How about.... the honey processing where the mucilage is kept after washing?
yup, that is in between. There are so many more processing method now as well. Maybe its time for us to do another processing videos hmmmmm
@@roguewavecoffeeco funnily enough, i bought castillo honey and natural... and then my friends gifted me castillo washed for my birthday, so now i have the whole range to compare!
I have the same cezve/ibrik kit from STC :) It’s a pleasure to use and brewing specialty coffee with Cezve/Ibrik need to be democratized. Best luck in Copenhagen!
so it is basically a melitta filter
essentially, very similar with a few design change. Just like how V60 is just a funnel.
your favorite setting for pour over is 7.5 with the zp 6? can you show us your pour over recipe?
Sorry, the 7.5 is for K-max/K-ultra. I might have misspoken in the video. Zp6 is 4.5-5.5
hello there! so once you have aligned the red spot with the number 0, do we need to push down on the inner mechanism? or due to the user checking on the alignment, the inner mechanism has dropped down again and we can start using straight away? 🙆🏾♂️
You shouldnt have to push down on the inner mechanism. You could do that to check if there is any burr lock issue, but in general it is not necessary. You should be able to use it straight away.
Is it bad if it’s not calibrated? Can’t I just pretend wherever the resistance starts is 0?
It is not bad, and also not necessary, you can definitely make up your own '0' :)
How to git this 😢
get from our shop www.roguewavecoffee.ca
Totally confusing video. No context. ¯\_(ツ)_/¯
You are mentionning espresso at level 2 but their chart seem to say to try it at 1.2 ? Do you have a custom chart ?
Same chart, but range is pretty wide depending on dose and machine and basket etc. Ours is based on 20g dose with commercial basket. Definitely just a guide but just like with any espresso, please dial in to your setup.
What’s your grind setting on the zp6?
we are at around 4.3-4.5 for this recipe.
ordering this now. excited to try the Layo Teraga!!
Thank you! Enjoy!
I do a lot of french press with the J-Ultra, if you have a sifter to sift out some ultra-fines then you can grind at around 330 which produces really good results
That is a very good approach!
I'll try it with my JE-plus , thanks for the tip
Nice 👍 ❤🎉
Thank you!
Kind of off topic, the 20 microns per click, is that change in burr distance or burr movement?
Microns refers to the size of the coffee grinds. Espresso 180-380 microns, V60 400-700 microns, etc. the wider apart the burrs the higher micron / coarser grind and the closer the burrs the lower micron / finer grind. So in this case each click will increase or decrease by 20 microns in size depending on way you turn the wheel. ☕️
It is the movement of the burr up and down the shaft, this does not translate to an equivalent change in grind size.
