Armenian sweet GATAH BREAD traditional recipe!!!!
Hello friends,
In my opinion, this gata recipe is one of the best and lowest calorie recipes.
Of course, I changed it a little myself and used the least amount of butter possible.
Ingredients for the dough
1 kilo of flour
Warm milk 250 grams
100 grams of lukewarm water
Liquid oil 100 grams
Yeast 10 grams
Salt 10 grams
Vinegar 1 tablespoon
Greek yogurt 3 tablespoons
2 egg whites
Mix all the liquid ingredients in a bowl.
Add the flour slowly and mix.
We knead until it does not stick to the hands.
We leave it in a warm place and cover the method until it doubles in size.
Ingredients for inside the bread:
100 grams of butter
200 grams of flour
Walnuts 80 grams (coarsely mixed)
Powdered sugar 80 grams
A little salt
Pour the butter into the pan until it melts completely
Add flour and powdered sugar and fry until it is completely cooked and looks like sand.
We add walnuts, fry a little, then turn off the heat.
When the dough is completely puffed, we knead it and divide it into 5 parts.
We open each part with a rolling pin, grease it a little and pour the ingredients and smooth it.
We do the same thing again and then we roll
We open it again with a rolling pin and roll it with a napkin and shape it with a fork.
We give the dough a little rest and cook it at 180 degrees until it turns golden.

این رسپی گاتا به نظر من یکی از بهترین و کم کالری ترین رسپی هاست.
البته من خودم یک کم عوضش کردم و کمترین کره ای که می‌شد رو استفاده کردم.
مواد لازم برای خمیر
۱ کیلو آرد
شیر ولرم ۲۵۰ گرم
آب ولرم ۱۰۰ گرم
روغن مایع ۱۰۰ گرم
خمیرمایه ۱۰ گرم
نمک ۱۰ گرم
سرکه ۱ قاشق غذاخوری
ماست یونانی ۳ قاشق غذاخوری
سفیده تخم مرغ ۲ عدد
همه ی مواد مایع را در کاسه بهم میزنیم.
آرد را آرام آرام اضافه میکنیم و بهم میزنیم.
ورز میدیم تا جایی که به دست نچسبه.
میذاریم جای گرم و روش را میپوشونیم تا چندبرابر بشه.
مواد میانی گاتا :
کره ۱۰۰ گرم
آرد ۲۰۰ گرم
گردو ۸۰ گرم (میکس شده درشت)
پودر قند ۸۰ گرم
نمک کمی
کره داخل تابه میریزیم تا کاملا ذوب‌ بشه
آرد و پودر قند را اضافه میکنیم و تفت میدیم تا کاملا بپزه و ظاهرش شبیه ماسه بشه.
گردو را بهش اضافه می‌کنیم کمی تفت میدیم سپس زیرش را خاموش میکنیم.
وقتی خمیرمون کاملا پف کرد ورز میدیم و به ۵ قسمت تقسیم میکنیم.
هر قسمت را با وردنه باز میکنیم کمی چرب میکنیم و از مواد میریزیم صاف میکنیم.
دوباره همینکار را انجام میدیم و سپس رول میکنیم
مجدد با وردنه باز میکنیم و رومال می زنیم و با چنگال شکل میدیم.
یک کم استراحت میدیم به خمیرو در دمای ۱۸۰ درجه تا زمانی که روشون طلایی بشه میپزیم.
