Tangy Brinjal Curry | Eggplant Curry | Brinjal Masala | Achari Baingan
Tangy Eggplant Curry (Achari Baingan)

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:⁣
Eggplant / Brinjal - 1 big⁣
Onion - 1⁣
Tomato - 1 big⁣
Garlic - 2 to 3 cloves⁣
Mustard seeds - 1/4 tsp⁣
Fenugreek seeds - 1/4 tsp⁣
Fennel seeds - 1/4 tsp⁣
Cumin seeds - 1/4 tsp⁣
Rice flour - 1 tbsp⁣
Red chilli powder - 2 tsp⁣
Turmeric powder - 1/4 tsp⁣
Coriander powder - 1 tsp⁣
Cumin/jeera powder - 1/2 tsp⁣
Tamarind - one lemon size (soaked in 1/2 cup water)⁣
Sugar - 1 tsp⁣
Salt - as required⁣
Coriander leaves - few chopped⁣

“𝑶𝒉 𝑾𝒐𝒘” 𝑹𝒆𝒄𝒊𝒑𝒆:⁣⁣

1. Cut the eggplant into horizontal slices of about 1 cm and cut lines on the surface. Make a thin paste of rice flour with 1 tsp chilli powder, 1/4 tsp turmeric powder and some salt. Dip the eggplant slices in the paste and shallow fry them in about 4 tbsp of oil for 5 mins on each side. Keep the slices aside.⁣

2. In the same pan, sputter mustard, fenugreek, cumin and fennel seeds. Add finely chopped onions and sauté until translucent. Add minced garlic and sauté for 2 mins. Then add finely chopped tomatoes and sauté until mushy.⁣

3. Add 1 tsp chill powder, 1 tsp coriander powder, 1/2 tsp cumin powder and the required salt. Add little water and cook for 10 mins. Then squeeze the tamarind juice and mix with 1 tsp sugar and add it to the pan. Mix well and cook for 5 mins.⁣

4. Now add the fried eggplant slices and mix gently. Cook for another 10 mins and garnish with some chopped coriander leaves.⁣

      If your microwave has a convection mode, you can use it to bake the fish. 10 mins at 180 degrees and grill each side for 5 mins for the browning.

Clean the fish and pat it dry. Make 4 to 5 slits on both sides of the fish. 2. In a plate, add ginger garlic paste and all the spice powders. Add lemon juice and water and mix well to a thick paste. 3. Spread the spice mixture on the fish on both sides and on the slits. Finally, add little oil above it and spread well. Marinate for 30 mins to 1 hour. 4. Brush the grill pan with oil and place the marinated fish on it. Bake in a preheated oven at 180 deg celsius for 10 mins and then cook in grill mode for 5 mins on each side. Brush with little oil while flipping the sides. Enjoy the grilled fish with some salad on the side!

    I just bought an identical baking tray from IKEA. I am concerned that all that drips from the fish will burn on the tray and make a lot of smoke and heavy to clean tray. How was it in your case?

      In case of baking, the drips from fish will not burn on the tray. When you use grill mode or broil mode, it will burn. So I suggest that you use just baking mode when you use this tray 😊

      Hi, please check the consistency of the batter before baking it. It has to be slightly flowing consistency and not thick like usual muffin batter. If it is thick for you, may be you should use little bit more milk and oil. Thank you for trying! 😊

Wash and soak the Basmati rice for 20 minutes. 2. In a bowl, take the chicken and add all the spice powders, salt, ginger garlic paste, curd, green chillies, mint and coriander leaves, half of the fried onions, lemon juice and 3 tbsp oil. Mix well and marinate for 1 hour. 3. Boil 8 cups of water in a pot and add the spices, salt and 1 tbsp oil. Add the basmati rice and cook until it is 70% done. 4. In a biriyani pot, add the marinated chicken and cook on medium flame for 5 to 10 mins. 5. Add half of the cooked rice on top of the chicken. Add handful of fried onions, mint and coriander leaves and half of the saffron milk. Add the remaining rice on top of this, the fried onions, coriander and mint leaves. Add the saffron milk and ghee on top. 6. Line the sides of the pot with wheat dough and close it with a lid to cook the biryani on dum. 7. Place the pot on a stovetop, and cook on medium heat for 5 minutes and on low heat for 20 mins. Enjoy the delicious #chickendumbiryani with onion raita!

    Recipe: Semolina chocolate chip muffins Made by a 5 year old! Baking with kids improves their fine motor skills, hand-eye coordination and strengthens their hands. You have fun together and they also get to learn some maths and science! Ingredients:⁣ Semolina (rava) - 1 cup⁣ (very fine or powdered) Milk - 1 cup⁣ All purpose flour / maida - 1/4 cup⁣ Baking powder - 1 tsp⁣ Baking soda - 1/2 tsp⁣ Oil - 4 tbsp⁣ Sugar - 1/2⁣ cup Lemon juice/vinegar - 1/2 tsp⁣ Vanilla essence - 1/2 tsp⁣ Chocochips - 1/4 cup (optional)⁣ ⁣ “𝑶𝒉 𝑾𝒐𝒘” 𝑹𝒆𝒄𝒊𝒑𝒆:⁣ ⁣ 1. Take semolina in a bowl and add the milk. Allow it to rest for 30 mins.⁣ ⁣ 2. Now add sugar and oil and mix gently using a spatula. ⁣ 3. Add in the flour (sifted), baking powder and baking soda and mix.⁣ ⁣ 4. Finally add the lemon juice, vanilla essence and chocochips and mix gently⁣. ⁣ 5.
