Hello everyone, my name is Christophe Rull , Professional Chef for over 20 years .
I started baking at the age of 15 years old in France and learn from some of the best pastry chefs.
One day I got the opportunity to come in America to pursue my career and landed in Las Vegas in 2009. After completing several competitions and wining food network shows , I got the opportunity to be part of the Netflix show Bake Squad.

Lovely recipe just needed your advice. If we have to make a caramel commercially in for a large kitchen and I wanted to very very thick caramel what do you think should be the proportions of the salted caramel? Meaning ratio of sugar, butter cream et cetera Do I need to use a wet method or a dry caramel method? Thank you

Oh la la! Could you please do a tutorial on pate de fruits? Maybe a raspberry or blood orange one that uses homemade puree? You could tell us how to make the puree also, because so many pastry recipes call for sugar or corn syrup/glucose added to the puree - they don't seem to understand that we're making something in which sugar is added (pate de fruit) later on in the recipe. Bonjour, Christophe! I wanted to ask you how long do these little madeleines need to stay in the oven? Also, my mould is bigger, 7 cm, so how long should I bake my madeleines in this case, and how long should they stay in the oven? Thank you very much! Have a wonderful day!
It’s really all depend on your oven honestly. For your mold , I will recommend to start with 6 minutes. Then you can check with a skewer , pock it in the center , if your skewer comes out dry , your madeleine is baked . Hope this helps
