The changing lighting is the camera adjusting to the light levels. If you look in the direction a shadow is being cast it will appear flat or 2 dimensional even on a curved surface. Since we are ON the Earth we are looking down the barrel of the earths shadow from inside the shadow so it will always look 2 dimensional.
