You don't need 5 surrounding tiles to block of a piece. 3 pieces placed arround will also work, as long as you physically can't move through a space you're blocked (exceptions are of course Grasshopper, Ladybug and beetle)
The pillbug can't move the insect moved by the other player in the previous turn (that's why it can't move the ant). It can't move beetles if they are on other pieces creating a column of tiles (in the video, the beetle is on top of an ant). I hope this helps. That's it. If a beetle is on top of another tile, it cannot be moved by the pillbug. As for your other doubt, if two beetles create two columns and you want to move a tile that is on the other side using the pillbug , it cannot be done because there is no physical space between the two columns for that tile to pass without moving the beetles.

They can move the other tile anywhere near them.
