Great layout and design! This is one of the best tiny box trailer designs I've seen. The lighting scheme is really awesome-looking, especially with the toe-kick lighting, and having the kitchenette and bathroom at the head, rather than the rear of the trailer makes a lot of practical sense.
1. To address your natural lighting concerns, I might suggest you use a Max Air fan at the front and back of the trailer, so they can also be used for ventilation when off-grid. Additionally, a window in the side door would be a nice feature, so you can see who's knocking, if anyone knocks, while camped, but to stay stealth, use a window tint that obscures people from looking in that window.
2. To address the countertop space concern, adding a Lagun mount to the cabinet beneath the TV to add an additional table top would be good. You could add an additional mount to the cabinet beneath the bench to have that double as a dining table/desktop when using the bench.
3. To reduce the weight, you could frame your upright cabinet panels using poplar, filling the void with EPS foam and laminate over it all. That would also work well for interior doors. Also, if you use mirrors that are acrylic, rather than glass, you can reduce that weight. It all adds up, so saving a pound here and there makes a huge difference, even in a build that small.
4. Another way to cut weight, if the person is willing to make their bed, everyday would be to eliminate the elevator bed in exchange for making the sofa a jack-knife or futon-style bed.
5. I love the wood finishes you use, but anywhere you're not using wood to bear a load, you can use laminate over EPS foam, improving the overall insulation quality and reducing sound transfer, such as walls and ceilings. So long as there is sufficient framing to attach your fixtures and furniture, You could probably reduce the grand towing weight another 200-300 pounds by looking into the weight reducing suggestions I've given.
I still think this is a phenomenal build, and as I'm getting ready to help my grandson build out a van for his first time, I can definitely say some of your concepts have inspired me for his build. I hope that my input is useful for future builds. I was a nomad 20 years ago, and I support the cause, even though my health and responsibilities prevent me from traveling full-time, these days. You're doing something truly good for many people who need cheaper housing or want to travel in style, when doing so recreationally. Jarrod chose well to feature your work.

One more benefit over van is not having to pay the insurance, registration, smog, ect on another vehicle. If you already have a truck, that's all you need.

18:17 a quick fix for lighting, put a full length mirror on the side door. Potentially, could reflect the day light from kitchen and skylight windows.
I would add a window in the door to bring in more light as well as helping to make the space feel more open and provide an opportunity to be able to see the view outside.
As for more counter space, you could add a flip up countertop on the inside of the door, which could also double as a desk/workspace or a place to sit at to eat and just have a little foldable stool that tucks away somewhere.
Also, in the kitchen I would take advantage of the wall space for more storage opportunities. You could frame out little nooks in the side walls with hooks and/or shelves to hang cooking utensils, store spices, dish soap, ect..
And to better use the storage space under the sink, I would add shelving or racks on the inside of the doors for things like cleaning supplies, trash bags, cooking wraps and whatnot. And maybe also do that on the inside of the closet door for toiletry items, makeup, or jewelry.
You could also add more light in the space by adding a window in the back door/ramp that's strong enough to withstand the weight to walk on and be able to handle bikes or whatever you're loading in the trailer.

16:46 you could make a double decker slide out counter drawer. It would be 2x the length without taking up too much drawer space under stove.
I could invision living in that place. The color scheme isn't for me, but that is just personal preference. One thing that would be nice is if it could somehow be made with a rigid screen for someone with pets they don't want to get out. The way it is, the pest could just walk out. Other than that, it is beautiful. It is like a little apartment. It looks so very comfortable.

Perhaps the entry door could include a window or glass & because your awesome at ideas..incorporating an interior shelf attached which lifts for additional counters pace & even lowers for use as an an outdoor table when open (like an adjustable shelf).

I would consider putting a hatch where one of the skylights are so you can get more fresh air into bathroom area to take out more moisture and smells. I don't know if you've watched that DualEx guy. He has a lot of really cool ideas. One of them was building a chair and desk into the front of a kitchen cabinet.
For more kitchen counter space, how about a small shelf above the counter? Maybe even something that folds down.

How a ridge drawer instead? Needs 360 camera for outside of trailer.
I have 2- 300 Watt solar panels. This could help roof space for another skylight.

Digging the improvements, I’d add a shade to the skylight though. 1. For blackout when sleeping 2. Improve thermals for hot/cold 3. Reduce UV damage long term.
