You mentioned that carbohydrate absorption is blocked by lipids, so more insulin is needed for the absorption. I bet the keto diet has a lot to do with insulin intolerance. Since a cell probably can be trained by the same means it lost its sensitivity to insulin, type 2 diabetes is probably inhereted on an individual level, yet I guess it's accelerated or decelerated depending on carbohydrate availability in blood.
I've been on keto for 6 months.. I dropped from 120 kg to about 80 kg. Complete transformation, and overall my hunger is no longer. Currently doing intermittent/water fasting daily (not on keto anymore). I sense that the control I gained over my eating habits changed how my body reacts to insulin, and I think many diabetics could benefit from the keto diet.
