Hi Shalonda! I thought about what I would do with a $20 budget for 3 days as a single person. This assumes that I have a few basics like salt, some kind of cooking oil, and maybe some cumin and chili powder in my pantry. This is also based on shopping at Walmart, and using the Great Value brand wherever possible. You can't get too much variety for $20, so I decided to focus on things I really love. I came up with instant oatmeal, banana, peanut butter and toast for breakfast. I could also use some of my eggs to make toad in the hole for breakfast. Snacks, boiled eggs, cheese and saltiness crackers or peanut butter and crackers. Supper, pinto beans made with pork neck bones, made Tex Mex style if I already have cumin and chili powder at home, along with cucumber, onion and roma tomato salad. I could also have cheese or peanut butter and crackers with it. My total came to $20.14. That included 2 roma tomatoes, 2 onions, 1 cucumber, 3 bananas, 1lb pinto beans, 1 pack of neck bones, 8oz block cheese, 1 dozen eggs, 1 box of instant oatmeal variety pack, 1 jar of peanut butter, 1 box of great value saltine crackers. The good news is that some of the groceries purchased will last longer than 3 days. The pinto beans would make 6 servings easy, so I could freeze some. I'd only need one or 2 pork neck bones, meaning I should freeze the rest for another meal. I'd have at least a 1/2 jar peanut butter left, and depending on how much I aye, some cheese, eggs, oatmeal and crackers left over. I just wish $20 went farther. Lots of folks don't have $20 for 3 days worth of food.
