  • This time I am presenting you how to make incredible cake. Tastes amazing. Creamy and nutty with a scent of vanilla and a bit of tartness from the jam to break the sweetness. You have to give it a go.
    I hope you enjoy!

    Ingredients:
    For the cake:
3 and 1/4 cups of all purpose flour
    1 cup of butter
    6 eggs
    1 tsp of baking powder
    1/2 cup of sugar
1 and 1/2 cup of icing sugar
    50 grams of silvered almonds
    cup of currant jam
    For the cream:
    3/4 cup of butter
    3 tbs of sugar
    2 tbs of corn starch
    2 tbs of flour
    2 cups of milk
2 tsp of pure vanilla extract
    Instructions:
Separate your egg yolks from whites. Keep two egg yolks for the cream separately.
In the mixing bowl combine your flour, sugar and baking powder.
Add butter and 4 egg yolks. Using pastry cutter or knife cut into small pieces.
Using your hands mix everything together until you have a ball of dough. Cut it in half.
Spray your baking pans (9by13) with non stick spray and lay with parchment paper.
Flower your working surface lightly and roll both parts of the dough to fill out your baking pans. I prefer to spread it with my hands.
Spread the jam over your dough and bake for 20 minutes in preheated oven to 180 degrees C.
Add all 6 egg whites in to your mixer bowl and beat until soft peaks then add icing sugar, spoon by spoon. Beat until all the sugar is very well incorporated.
Spread over cooled cakes evenly and sprinkle with almonds. Bake again at 180 degrees C for 20 minutes.
Pour half of the milk into medium saucepan and heat until almost boiling.
Combine the remaining milk with two egg yolks, sugar, corn starch, flour and vanilla extract.
Bring the heat to low, add your egg yolks mixture to the hot milk. Mixing constantly, heat on low until it thickens. Cover with plastic wrap to prevent creating a skin. Let it cool completely.
In your mixer bowl beat the butter until light and fluffy then add the cream spoon by spoon.
Remove the parchment paper from your cake. Spread the whole cream over one cake and cover with the other. Cover and refrigerate overnight before serving.
    Enjoy!

Hah, my mum makes a cake similar to this! It has a sponge base under the meringue and no jam. But she makes the 'cream' part with joghurt and gelatine and puts red currant berries in it.

I tried making this cake yesterday and the cake part came out a bit hard and a bit hard to cut. Is the crumb cake suppose to be soft? I don't know what I did wrong. Also on your blog website in the directions part it doesn't say to put cornstarch in the egg whites but it does on your video. So I messed up there as well. Otherwise this cake was awesome. Would love your input on how to make the cake less hard. Thanks! - Yvonne

the corn starch does not make huge of a difference (it is there to get the meringue a bit dryer) but I will fix it, thank you for letting me know but the hardness of the cake maybe from few things I think... did you make the same size as me or smaller? if it was smaller it gets thicker and harder. Over baking will get it harder as well and the most important: not waiting 24 hours before cutting will make a huge difference as well because the cake needs to get humidity from the cream to get softer. On the other hand the cake in general is not a sponge cake but more like a crust so it is more crispy than soft. I hope that helps, let me know if any of the reasons make sense to your case :) Thanks,
      Ania

i enjoyed watching you make this recipe and something I will try at home. Great video - very easy to follow instructions.
My only negative comment is, although the muscial / piano underscore is great (masterpiece), at times it is very loud and the viewer cannot hear your voice and instructions. You need to speak up! :)
