Genrally u need to temper pure chocolate...but if u can’t temper in that case don’t melt ur chocolate for too long in microwave or double boiler and don’t over heat ... Generally for pure chocolate we need to melt at 30 to 35 n then reduce it by 26 to 32 depending on the chocolate type using seed method or table method..but without temper u can use it always remember don’t overheat any chocolate

Yes.. first of all decide truffle then note down all the ingredients required for it then note down price of each ingredient per kg and price according to requirement.. Also check if using pure chocolate it will be very expensive and if using compound it Can be pocket friendly So decide what chocolate u want to use according to costumers requirement and budget Now calculate price which is ur raw material cost now add ur labour cost and other expensive also add packaging cost .. One more thing price depands on quantity also if someone want 10-12 truffles only price will be high But in short each truffle using compound price will be 25 to 45 rs (note- as I’m not in india and don’t know about ingredients cost )

Weather is too hot now a days that’s why May be it melts...also reduce the quantity of cream

Don't we need to melt and temper because this is an actual chocolate? Do we need to melt it to a certain temperature as thy do for actual chocolate?
