Ingredients: 2 lumps of beef shank, scallions, whole garlic, chives, onions, laurel leaves
Sauce: soy sauce, vinegar, sugar, mustard, red pepper, etc.
01-Soak the beef shank in cold water to draw out the red liquid from the meat.
02-Put a cup of water in the instant pot and add garlic, green onion and laurel leaves. I forgot, but you can put some pepper in it
03-Close the lid, lock the pressure valve, and set the Meat Cook (Manual) mode to 20 minutes.
04-Prepare vegetables to eat together. Cut chives into bite-sized pieces and shred onions. Chop the chili pepper into small pieces.
05-Add chopped chili peppers and make a sauce that will stimulate your appetite. Soy sauce 3, vinegar 1, garlic 1, sugar 1, cooking wine 1, and mix well to suit your taste.
06-Set the seasoning, chives and onion well on the plate beforehand.
07-Meanwhile, the dish is finished, turn the Serving to Venting to force the pressure out. The hot steam will come out quickly, so be careful! I am afraid of touching it directly, so I use spatula and cloth. Sometimes the contents come out as the pressure is relieved, so some people cover it with a cloth, but that's really dangerous. Don't cover anything!
08-Take out the hot meat and let it cool down. If you cut it while it's too hot, the meat will break.
I cut it without cooling it down enough, and it didn't cut well. I liked the thick one, but if you want to slice it thin, make sure to cool it completely before you cut it.
You can see the chewy tendon, right?
09-Put it neatly on a plate.
10-Dip it in sweet and spicy soy sauce and enjoy it with chives.
