Whilst honey isn't technically vegan, I still eat it, even as a vegan, so long as I can get it from a good local source, because beekeepers actually work really hard towards helping bee populations, which have been dropping drastically, and truly care about them. I personally consider agave to be a worse prospect because the industry destroys the native wildlife's habitat.

+JoyClarke017 you don't get to decide what she is. If she says she is vegan and she truly eats vegan then she is. And I don't think that it is bad if you find honey from a good source. It's not like you have to kill bees or even really touch them to get the honey.
I have nothing to say on the vegan front, but I find it so horribly condescending when people do the passive aggressive "Sweetie :)" thing. 🙈

I don't buy honey but if it's the only animal by-product ingredient in a food, I'm not going to make a big deal about it.

I'm not a vegan so I probably don't understand. But isn't it okay to eat sense the bees are producing something they make naturally anyway?... It's not like cows that are given hormones to keep producing, honey is totally natural and produced naturally...

Yes, there are other cooking papers! I use parchment paper or aluminum foil when I'm out of parchment paper!
#tip - If you leave these snacks in the fridge overnight, the oats absorb the liquids and become less "exfoliatey" in flavor and texture in your mouth and become more soft and yummy :) Also, you can do a similar recipe to this but spread the mixture out thinly on a cookie sheet and put in the freezer, to get a different texture. If you crumble a weetabix or other breakfast cereal in the mixture, it adds a bit of crunch too :)

Yeah the pushing instead of rolling technique is used on snowball/wedding cookies as well. A great holiday treat

You can use any other glucose syrup instead of honey (except for maple syrup) because it's just being used as a binding agent. And then it will be vegan. Also don't use coffee grounds if you don't want it to be gritty, use instant coffee mix instead.
I recommend grinding the snot out of your coffee beans, espresso style.

To make this recipe *actually* vegan: use agave nectar instead of honey. agave is a great replacement, and is a plant byproduct so- vegan!

Technically parchment paper is the ONLY baking paper. Parchment paper is silicone infused and is made to withstand temperatures over 400 degrees F. Wax paper should only be used during low temperature food processes like decorating something or wrapping a sandwich because wax melts under heat and can even ignite.
