Ofcourse they wash their hands, its mostly clean food since its burning hot, only thing he use his hand is when he is adding a crispy chips in the bowl, otherwise its fairly clean and afterall its a street food with few cents for a bowl, u want clean then go to a proper restaurant and pay 10x more..

People who eat here are ultra modern. They eat anywhere, Anything where there is a crowd. They can wait for long time to get a bowl of this which they call Chole. You come and see for some time.
People who don't wait for a few minutes for fresh and tasty food prepared by their mother come here and wait in queue.
