As a former barista of the same shop that my husband and I purchased, I thought I had mastered the ins and outs of the cafe, but becoming small business owners introduced us to a whole new level. Experimenting with recipes went from a creative outlet to a daily necessity, aiming to find that perfect blend that not only satisfies but defines my cafe.
Small business life is the heartbeat of owning a cafe. From crunching numbers to building a brand, every decision feels like a piece of a puzzle in my entrepreneurial journey. for the croffles, you might wanna try using pre-baked croissants from the day before that didn't sell. sometimes it just works better (like how breadcrumbs are better with stale bread) and also helps reduce food waste! :)

to make the croissant not be raw, try rolling it out with a rolling pin. it just flattens it out and makes it easier to cook!❤

I always make this croffles. Use the tube one and shape it. Then cook in the waffle make. It will come out perfect

Oh I'm so glad I found your channel I love this! Always been curious about what it's really like to own a small cafe. I'm living in Korea now and I was just thinking how common croffles are here haha been here so long didn't know it was popularized in Korea ;) To be honest though, plain Korean waffles that they sell in subway stations and markets are my favorite! Sometimes they put cream or apple jam on them and they're SOOO GOOD! Ask your barista if she tried them heh heh :)

Is it more expensive to buy stuff from a retail grocery than a wholesale distributor?
It definitely depends on the product so we have to shop around, but milk products and things that need to be frozen or refrigerated are cheaper to buy in store than due to shipping!
1:23 wait, you manipulate food with long nails, jewelery, watch, long hair, etc? how is that sanitary? I'm not from the US and I know every place has its rules but this looks so off to me. Overall I love these vlogs, but I had to ask
This is normal in the US. The health department requires us to have our hair up in a ponytail when baking and we wash our hands multiple times throughout the day.

Transition to a plant based cafe. Save the cows pain of having calves stripped from the mothers and then pumped with anti biotocs . Horrible existence for them for a bit of milk that isn't even meant for our bodies.
