  • Star of the char Miguel of Cooking With Fire knows a thing or two about the soak & smoke. Miguel soaked a cedar plank for 30 minutes then laid the porterhouse down on top of it for a little indirect heat and some serious smokiness. Miguel used NOMAD Fire-100% All-Natural Fruitwood Charcoal along with his wireless meat probe from our pals at @meatermade to track his temps and pull the steak at 125º degrees internal. He let the steak rest for 5 minutes, while the charcoal got nice and hot again, then finished it off with a sear for about 2 minutes per side. Brussel sprouts were seasoned with @spanglish_asadero surf 'n' turf and the steak was topped with @cienchiles mustard sauce.
