Authentic Chicken Pad Thai | HomeStyle Gluten Free

  • Comfort food is all about flavor, and Pad Thai hits all the right notes for me: Sour, Salty, Sweet, and Spicy! There's a lot of components to this dish, but it's so fast once you've got them all ready, and it's a dish you'll be looking forward to cooking again soon. ** Open description box below for recipe! **
    INGREDIENTS
    (Sauce)
    1/2c White sugar
    1/2c White/rice vinegar
    1/4c Fish sauce
    2Tbsp Tamarind paste
    (Chicken)
    1Tbsp Veg. oil
    1tsp Sesame oil
    1Tbsp Garlic, minced
    3-4 Chicken breast, diced
    1tsp White sugar
    1/2tsp Salt
    (Tofu)
    1Tbsp Veg. oil
    1tsp Sesame oil
    1Tbsp Garlic, minced
    Diced firm tofu
    Carrot match-sticks
    4-6 green onion stalks (the light green and white parts)
    2Tbsp Chili sauce
    2Tbsp Soy sauce (GF)
    4 Eggs, beaten
    Rice Noodles, 1/8" to 1/4" width
    (Toppings, optional)
    Diced green onion
    Bean sprouts
    Chopped dry roasted (unsalted) peanuts or cashews
    Lime wedges
    Sriracha/sweet chili sauce/GF Soy sauce
    DIRECTIONS
    Soak rice noodles in water for 30-60min until pliable, but not expanded or bloomed. Drain and reserve.
    Split tofu flat, and press between towels in the fridge for 30-60min. Dice once dried.
    In a small pot, heat sauce components over medium-high heat until sugar is dissolved and the tamarind paste is broken down. Strain sauce and press tamarind through a sieve to remove hard pulp. Reserve.
    ** Prep all ingredients before you begin. This dish cooks very fast, and you need to have everything ready to go before you start. There's no need to clean the pot between stages, but don't leave your pot unattended once you start, or it WILL burn **
    Heat dutch oven until oil starts to smoke. Add sesame oil, add garlic until just turning brown, then chicken. Add sugar, salt, and pepper. Cook until liquid is cooked off and chicken starts to brown. Remove from pot and reserve.
    Add oils, garlic, and tofu, carrots, and green onion stalks. Once carrots are 1/2 cooked, push to the side of the pot and cook eggs on other 1/2 of the pot. Stir to scramble.
    Once eggs are 1/2 cooked, add noodles and sauce. Once liquid is absorbed by noodles, add chicken and turn off heat.
    Serve family-style with toppings!

      +mrmiralem It really is. This recipe is as close as I've found to what you get at a good Thai restaurant. Let me know if you give it a try!

    What could i use instead of sesame oil? My husband is allergic to sesame seeds (and peanuts in case u suggest peanut oil lol)

      +fzzypurpleturtle I would just omit it. The sesame oil is only used for flavor, since we're already using vegetable oil for cooking. Unfortunately, there's no easy replacement for the flavor of sesame without using another dark nut oil. I doubt it will be missed though, as there's a tremendous amount of flavor in this dish already :)
