Today’s episode features Slimming World cajun style dirty rice and beans
Syns per serving: FREE
Serves 4
1 large onion, chopped
4 peppers (any colour) deseeded and chopped
2 garlic cloves, finely chopped
2 x 400g cans black-eyed beans in water, drained and rinsed
600ml hot vegetable stock
250g dried long-grain rice
1½ tbsp red wine vinegar
2 tsp hot pepper sauce
Handful of fresh parsley, finely chopped, to garnish
Place a large saucepan sprayed with low-calorie spray over a medium heat. Cook the onion for 5 minutes, stirring often, until softened.
Add the peppers and garlic and cook for a further 4-5 minutes, stirring occasionally, until just tender.
Stir in the black-eyed beans and rice, then add the stock. Bring to the boil and season to taste, then turn the heat to low, cover and simmer for 15 minutes, or until the water is absorbed and the rice is tender.
Add the vinegar and hot pepper sauce and stir in. Divide between 4 plates or bowls, garnish with parsley and serve.

I rince rice first then add water to about an inch above the rice. Boil for a minute then reduce to lowest heat with the lid on for 20 minutes. Perfect rice 👍
always wash my rice until water clear.... add cold water an inch above the rice add salt boil up then turn right down to a light simmer must have a lid..... perfect every time ... basmati is the best ..

Rinse rice thoroughly several times before cooking. You will be horrified at the colour of the water. The rinsing makes the rice cook beautifully.
Love dirty rice 🍚
Rinse rice first until water runs clear that gets starch out and allows it to be fluffy.
Do you not rinse your rice in cold water first? x
