  • You could say the tomato plants are doing well... and by well, I mean - I am being overrun completely. What better way to use up so many tomatoes at once? Make Pasta Sauce, or Tomato Gravy, or... you get what I mean.
    I was gifted this recipe from one awesome viewer and decided to give it a go, and let me tell you. It did not disappoint!

    Recipe from Anna:
    ___________________________
    1 1/2 peck fresh tomatoes
    cook till soft & strain
    boiled 1 1/2 hours add:
    7 cups chopped onion
    salt

    5 bay leaves
    3 TBS salt + 1 tsp. more to taste
    1 tsp. pepper
    Cook about 4 hours.

    Stephanie, I have to tell you something. I am not old by any means 66. My Mom passed away last July, at the age of 99.
    What you are doing with Alora is anything but amazing, my Mom did the same things with my sister and I.
    Alora will remember all you are doing and will bring her love and peace at special times. It is so nice to see you carrying on the traditions of families from the past. It's so important and not that you need to hear it from me. I applaud you and I truly enjoy watching your videos. Thank you ❤❤❤

    I love that Elora wants to help some in both the kitchen and garden, and I love that you let her do so. I also love how you and Buddy ask your kids to try things they either think they don't like, or actually don't like and that the kids will try it. You two are amazing parents, with equally amazing kids.

    My grandma was full Italian, who came to America when she was little. She taught me Italian spaghetti sauce from her mother. No where near how your recipe makes it. Absolutely fresh, ripe tomatoes…. It takes two full days to all fully cook. But I know spaghetti is made differently from different regions of Italy.

      @@misstlc7136 , you don’t need to be snarky.. however I said it’s made differently from different regions of Italy… tomatoes are peeled, and cooked first, then mashed and cooked down. Using the meat of the tomato.. I also add a good amount of nice red wine. It’s all very different. And the whole process is 2 days. I’m 70 years old… and the recipe came from my grandma via my great grandmother. Have a wonderful day

    Bunny's right. Moms took 12 hrs at least! All fresh ingredients too and no spice bag. It all goes in. Along with 10 braised short ribs && the wine of course. I used Carlo Ross's Paisano. It's good to drink with no headache ❤❤Not sweet, & not to dry. Good job Stephanie

    Stephanie, thank you so much for showcasing my Aunt’s sauce recipe. I know that my uncle was full Sicilian and so I ‘assume’ the recipe hails from that region. I also add vegetables like peppers 🫑 and carrots 🥕 and you could even add zucchini to it when heating it up to serve if you like a chunky sauce.

    Stephanie, I'm with you. I think I would have added peppers, and few other seasonings. You could if you make it again or take some left over you have add a few seasonings you mentioned and bell peppers or even mushrooms to it and see if it makes it your own. Nice she shared. Thought you were doing spaghetti and you used another pasta which looked good too. So glad your son tried it and really liked it after all the work you put into it. So proud of you for all that work to use up your garden produce you grew. Your home garden is amazing and I've enjoyed watching it grow. We've had so much rain that I can't even set my poor plants out and here your picking already ha ha. Proud of you Girl.

    I will for sure try this recipe out if I get enough tomatoes this year! The reason most recipes include sugar or carrots is to cut the acidity quickly and reduce the cooking time! I’ve found that long cooking times make for a much better sauce. Plus, I know if I were to add sugars I would hear my Nonni (Italian grandmother) in my ear telling me NO! That’s not how I taught you! 😂

    Ah! Tomato gravy! When I moved to the South I was surprised to be eating RICE with tomato gravy with breakfast! I liked it.

    I never cry when peeling or chopping onions... Leave the root attached until the very end.

    Chewing on pieces of bread while peeling onions has worked for me to help stop the tears.

    My husband‘s family was from Italy and that’s basically how we made gravy! I still make three or 4 quarts every year just for myself the kids make it now they’re on their own!

    My momma would put her peeled onions in the freezer for a few minutes and she said that you wouldn't cry from cutting them.. I've been doing it for years and it works..

    My granddaughter and a few friends went to a Italy this summer. While there, they took a cooking class to make pasta and sauce. What a wonderful experience.

    I grate my cloves of garlic,i ran across an old time wooden pepper grinder. I add all my whole pre measured into my pepper grinder. I also fo this when I make fresh garlic & lemon drinking water. My doctor told me drinking garlic water os a natural antibiotic 😊

    Bay leaves in the sauce really add flavor. You know, over in south Louisiana they call spaghetti sauce “ red gravy”

    clean the onions with cold water, after peeling, before you slice them. And important are sharp knifes. You really like garlic.. wow.

    My grandmother, mom and I always make homemade spaghetti sauce, the longer it cooks down the better flavors. I use to can it into jars. I also would make tomatoes for chili, salsa, some stew tomatoes. Not since moving to Arizona. I taught my son to can tomatoes, pickles. We even pickled green beans, asparagus.

    Watching you and reading all the comments makes me nostalgic for my mom’s spaghetti sauce recipe and how it took all day. I used to love making it but have not done so for years. Wish we had smell-vision and taste-vision!
    We lived in France while I was little, and to this day it’s really difficult for me to eat spaghetti without having wine to drink with it!

    Some years ago I discovered quite by accident, a way to chop garlic & onions . . . without your hands smelling.
    I saw an article about the medicinal properties of garlic.
    So when you mince your garlic cloves, you are supposed to chop & set aside for a period of time. I proceeded on with the chopping my onions.
    When I was mincing the garlic, I kept a glass of very cold water that I dipped the knife & my fingers in to get the garlic sticky off. When done with the garlic, I chopped my onions & continued to dip the knife & my fingers in the cold water.
    When I went to bed & my hand was up by my face . . . there was zero smell of garlic or onions🫢 I was very surprised that I couldn't smell a trace of either stinky vegetable 🤗🥰♥️

    We also strain the pulp of the tomatoes to mash them using Rotary Food Mill for Tomato Sauce, Applesauce, Puree, Mashed Potatoes, Jams, Baby Food

    When we make sauce from fresh tomatoes, we boil a large pot of water, put in the whole tomatoes that have a X cut into the bottom and leave in the boiling water for about a minute or two, to loosen the skin. Remove the tomatoes from the boiling water and peel the skins off. The skins come off super easy. Then we squeeze the tomatoes to remove the excess water and the seeds. Place the tomatoes in a pot and cook them down for a few hours. I sauté' garlic in olive oil, add the tomatoes that you just cooked down, add minced fresh or dried basil, salt and pepper. That makes a basic sauce that can be used for many other items that call for tomato sauce.

    I roast my tomatoes in the oven with a little olive oil and salt and pepper. I halve them and pull out the seeds, roast them and the skin comes right off after roasting. Then mash them in a pot add the herbs and simmer for a day.

    Pur your onions in the freezer for 25 min. No more tears. Also add 3-4 cups of red wine. Moms Sicilian recipe! Sounds similar tho 😊

      you can also run the onion under some water and it will help prevent your eyes from tearing up

    Your spaghetti sauce looked great! I’m sure it smelled wonderful too. 😊 I would try a food mill next time because they’re not so expensive on Amazon anyway and all those chunky parts of the tomato and the skin can be ground up in a food mill and become part of the sauce and you can still take the seeds out depending what size grinding disk you use. It becomes a thicker sauce so less cooking time to get it thicker.

    Hi Stephanie all the seasonings go straight in the sauce no spice bag because the only seasoning you will remove is the bay leaves when sauce is cooked. Your doing a great job lol us Italians love garlic too. Use olive oil too.

    I grew up in an area with loads of Italian families, they often take whole day or a couple of days as a family to make huge batches of sauce and jar them. It's a long process but it's the best! Very simple sauce but then you add your own extras to the basic sauce. Yours looked sooo good!

    Hi Stephanie that was a nice recipe. That was quick I think as I’ve seen them do it for a couple of days before they bottle/can in Italy. You know it’s a hit when everyone eats it.     Great Job Steph. If you ever want to do meatballs get. 90/20 ground beef and make your meat balls and put the in the sauce raw for a couple of hours. Best meatballs ever!

    I keep my onions in the refrigerator and it doesn’t make me cry. As long as they’re not cut they do not make the refrigerator smell and they last a long time.
    Another tip if don’t already know is to pour boiling water over your tomatoes and the skins will come off real easy.

    Looks delicious but I believe oregano and marjoram are two distinct herbs even though they’re in the same family they have distinct flavors of their own.

    My Uncle used to cook his tomato sauce(after straining whole tomato)over night with large bone with some meat still on bone). Believe was lamb. Delicious. Always had a huge pot on stove cooking.
    As kids would have on eggs, hamburgers- pretty much everything we ate. So so good. Wish I had gotten recipe.
    Thoroughly enjoyed this and guessing will be making more spaghetti sauces as your table was covered. .
    So, what was Connor’s final on Fred sauce? Yay/Nay?

    Hi Stephanie. When lived in New York, I learned to make Sicilian gravy a/k/a sauce. I was taught to put the dry herbs in my palm and rub it to release the essential oils. I sauteed fresh garlic and chili pepper flakes in olive oil for a few minutes. I then add onion and cook it until it softens. Then, I add a good squeeze of anchovy paste and cook for a couple of minutes. Then, I add in several good squeezes of tomato paste. This is then cooked for a few minutes. After this is combined, I add in at least a cup of red wine and scrape up all the bits of onion, garlic, etcetera that have adhered to the pot. At this point, I add in two cans of crushed tomatoes. A teaspoon of sugar, and dried basil, parsley and oregano. I let it cook for a couple of hours on low with a lid on the pot. If I want the sauce to be hearty, I roast some pork neck bones in the oven and then add them to the pot of sauce.

    I can tell u to refrigerate the onions, and cut the water faucet on low so they won't burn so bad.
    As a caterer I've done this before.

    Wash a penny and put it in your mouth while chopping onions. I know it sounds really weird but it does work. Also storing your onions in the fridge will help calm the sulfur that's released when peeling or chopping them 😊
