Bacon Brownies

- Who doesn't love fudgy sticky Chocolate Brownies with Bacon inside? These are dense and full of chocolate.
Ingredients:
8 ounces of bacon cut into half inch pieces
8 ounces of butter
2 cups sugar
4 eggs at room temperature
3/4 cup cocoa powder
1/2 teaspoon coarse salt
1 teaspoons baking powder
2 teaspoons vanilla extract or bourbon
1 and 1/4 cups plain flour
1 and 1/2 cups chocolate chips
Cook your bacon to your desired crispness in a pan.
Remove bacon leaving all the grease and add your two sticks of butter to melt.
Then add your two cups of sugar and cook for 90 seconds or so and allow to cool.
Use a large bowl and mix your eggs, salt, baking powder, alcohol and cocoa powder.
Beat in your cooled butter sugar mixture for four minutes or five minutes with electric mixer.
Stir in your flour by hand, and mix until three fourths the way mixed, then add half of your cooked bacon and your chocolate chips.
Now continue to stir until the flour is mixed.
Put mixture into your 13 X 9 pan and top with bacon, pressing slightly the bacon into the batter.
Bake for 25 to 30 minutes in your preheated 350F oven.

NOTE**** Use regular thin sliced bacon. I use milk chocolate chips, but semi-sweet would be fine as well.

That look's great. My daughter is visiting for Christmas. Maybe we can make this together when she's here. PS Typhoon Odette passed near here 2 days ago. There's no water, no electricity for another 5 days except for my little generator, and no internet except for my hotspot on my cell phone. At least it didn't flood here.

I watch the TV Show "Out in the Country" A show about people finding a new home out in the country. I love love seeing the old cottages with the thick walls and dream of living in a little bungalow like that. We get some UK TV here in the states.

Is this a fudgey or more crumbly type of brownie
Fudgey not cake like at all. If you want a more cake like brownie, you would have to bake this in an 8 X 8 pan for a longer time.

I do not refrigerate, cooked bacon in a package is not refrigerated at stores.

I gave this a like even though I may never make it. I went keto and sugar and flour are on my naughty list. Maybe after I have been at goal weight for a year. Or I could just make it for my grandchildren, I'm sure they would love it!
